Steps:
- Preheat the oven to 400 degrees F.
- Combine the cream cheese, mayonnaise, oregano, rosemary, red pepper flakes and garlic in a large bowl and mix until smooth. Stir in the mozzarella, provolone and 1/4 cup Parmesan until well combined. Gently fold in the roasted red bell peppers just to combine.
- Spread the mixture in a 9-inch deep-dish pie plate. Sprinkle with the remaining 1/4 cup grated Parmesan. Bake until browned and bubbly throughout, 20 to 22 minutes. Serve hot with tortilla chips and crudites.
LOADED PIZZA DIP

- Preheat the oven to 375 degrees F.
- In a food processor, combine 1/2 cup of the mozzarella, 1/2 cup of the Parmesan, and the ricotta, sour cream and cream cheese. Blend until smooth, with no lumps of cream cheese. Spread the mixture into an even layer in the bottom of a 9-by-9-inch baking dish.
- Mix together the fire-roasted tomatoes, tomato paste, garlic powder, Italian seasoning and red pepper flakes in a small bowl. Season with salt and pepper. Carefully spread the mixture over the cheese layer so that it evenly coats the cheese and you don't see any white. Top with the onions, bell peppers and sliced olives. Sprinkle the veggies with the remaining mozzarella and Parmesan.
- Bake for 25 minutes; then turn the oven to 450 degrees F and bake until brown and crusty around the edges, another 5 minutes. Cool slightly. Serve with crusty bread.

Great dip for parties or for snacks for the family. Easy to prepare. Serve with pita bread chips, crackers, or even a thin sliced baguette.

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9-inch pie pan with non-stick cooking spray.
- Spread cream cheese on the bottom of the pie pan. Pour pizza sauce over the cream cheese, and spread it so that there is an even layer of sauce. Sprinkle with pepperoni, onion, and olives. Top with mozzarella cheese.
- Bake at 400 degrees F (200 degrees C) for 20 to 25 minutes.

FOREVERMAMA'S SPICY CHICKEN QUESADILLAS OR BURRITOS
Though this is a recipe for Quesadillas, I've turned them more often into burritos, following all the same ingredients, except rolling the tortilla's burrito-style. When made into quesadilla's, not only are they great for weeknight, weekend meals, appetizer, but they are also great for bringing them to a potluck. Just slice them like a pizza and place them on pretty serving platter and I'll guarantee that they'll be gone lickety split.

- Combine chicken and taco seasoning mix in a heavy duty zip-top bag; toss to coat. Refrigerate for 1 - 2 hours or overnight.
- Place chicken in a broiler pan or in a 15 x 10 x 11 inch jellyroll pan.
- Broil coated chicken 6 inches from heat (with electric oven door partially open) for 5 - 6 minutes. Remove from oven and cool.
- Cut chicken into bite-size pieces.
- In a bowl, combine chicken, cheese, picante sauce, and red peppers; stirring well. Set aside.
- Brush 1 side of each tortilla with melted butter; place 2 tortillas, buttered side down, on a cookie sheet. Top each tortilla with about 1 cup of chicken mixture, spreading to edges of tortilla. Top each with a tortilla, buttered side up.
- Bake at 375 degrees Fahrenheit for 10 minutes or until golden brown. Cut into wedges. Repeat with remaining tortillas and chicken mixture. Serve immediately.
- NOTE: If making these into burritos, mound chicken mixture 1/4 of the was down on tortilla's. Turn over short side of tortilla over chicken. Turn both right and left sides of tortilla about 1 inch inches Roll up cigar style, enveloping the chicken mixture tightly. Place on greased cookie sheet, seam-side down. Brush each burrito with melted butter. Bake until golden brown.
- Note # 2:If you can find Chi-Chi's taco seasoning mix, these will be To Die For. But unfortunately I can't find this seasoning anymore. They used to advertise right on the package that it didn't contain the "red stuff". I use other taco seasoning mixes, but none compare to the goodness that Chi-Chi's had. If you can find Chi-Chi's somewhere, use 2 pkg's because each pkg. was about 1 /2 - 3/4 ounces. If you do find it, let me know, because I'd love to know because I've been searching for a long time.
FOREVERMAMA'S STUFFING FOR FISH, SHRIMP OR MUSHROOMS
I developed this stuffing initially for some haddock I had on hand. It has great flavor elements. Through time, I've also used it as a stuffing for other mild fish such as cod, etc., baked mushrooms, and shrimp. I can't tell you how many compliments and requests I've received for this recipe. Note that serving size captures 3-10. Amount served depends on type of dish prepared.

Steps:
- Melt olive oil and/or butter in skillet. Once hot enough add chopped onion over medium heat until soft and translucent.
- Stir garlic into onion mixture. Add hot pepper sauce (preferably pimenta moida, refer to note below), dry mustard, paprika, salt and pepper. Stir until all ingredients are blended and flavors are released. Be careful not to burn garlic.
- Cook for about 2 minutes. Add wine, letting it come to a boil and reduced by 1/2 to 1/4. Stir in parsley and distribute evenly.
- Add crushed Ritz crackers to combine.
- Add sugar and parmesan. Stir to combine.
- Cook for another minute or two, enough to toast crackers over medium heat and reach desired consistency (it cooks quick). Taste for seasoning and adjust with salt and pepper if necessary.
- Remove from heat. Add lemon juice to taste. This mixture should not be to wet or too dry. When pressed together with fingertips mixture should hold together but slightly loose.
- Use as a stuffing for fish, shrimp, or mushrooms. If using for mushrooms, dice the mushroom stems and saute with the onions.
- NOTE: Portuguese Pimenta moida is the best hot sauce to use in this dish. It is used in this dish not as a "hot" ingredient but as to provide a unique flavor in the background. It can be found in Portuguese markets or in a well stocked supermarkets. You can find a recipe on this site "Recipe #482885" or it can be ordered online. if ordered online Goncalves brand is preferred and can be purchased inexpensively within this link: https://www.amaralsmarket.com/products-page/marinades-imported-from-portugal/gonslaves-hot-chopped-peppers-16-oz/.
- Note that this sauce isn't hot with a sharp bite like a tabasco and shouldn't be used as a substitute. A Franks Hot sauce or Louisiana Wing Sauce can be used as a substitute, but note that it isn't an exact equivalent.
PIZZA DIP RECIPE
Steps:
- Preheat oven to 350 degrees F.
- In a medium sized mixing bowl combine the cream cheese, sour cream, and parmesan cheese. Spread this mixture evenly in an 8x8-inch baking dish.
- Mix tomato sauce and garlic salt together. Heat in a microwave safe dish for 45 seconds. Stir well and spread over cream cheese layer.
- Sprinkle shredded cheese on top.
- Saute mushrooms in butter until cooked through. Then spread mushrooms, pepperoni and cooked sausage over the shredded cheese layer.
- Bake uncovered for 20 minutes. Be sure it is heated through.
- Serve with tortilla chips or bread sticks.

FOREVERMAMA'S ARMENIAN LAHMAJOUN PIZZA'S
My husband who is a full blooded Armenian, swears that these have exact same flavor as the Armenian lahmajoun pizza bought at the Armenian shops in the area. This is a great compliment because I was trying to capture the same flavor. I haven't perfected their thin, soft dough yet, but instead I've given directions using store bought pizza dough. I am determined to perfect the "lahmajoun" dough at some point.

Steps:
- Heat skillet over medium-high heat, add lamb or combination of lamb and beef to hot skillet. Cook to almost through, breaking up pieces.
- Place meat mixture into a sieve to drain fat.
- To same skillet that beef was cooked in, add oil. To hot skillet add the onions and bell peppers. Stir and cook until onion is translucent and bell peppers are almost browned. Add garlic and cook through until just gold and flavor has been imparted, being careful not to burn garlic. Add drained meat mixture and mix through.
- Stir in can of diced tomatoes and tomato paste. Add cilantro, basil, mint and all remaining spices. Simmer until it is thickened but not too dry.
- Remove from heat, cool. To meld flavors, it is best to store in refrigerator overnight. I have also used it on the pizza's without the overnight refrigeration.
- Divide each 1 lb dough into 4 equal parts. Roll dough to a 6 - 8 " diameter pizza round. Place dough rounds on greased cookie sheets or stones. Dust with cornmeal or flour.
- Preheat the oven to 425-degrees-Farhrenheit.
- Distribute meat mixture evenly over dough, spreading to the edges.
- Bake for 15 -20 minutes or until cooked through.
- Serve hot or at room temperature.
- These are great with a sprinkling of lemon juice after they've been baked. In Armenia it is typical to top with salad (I like it with arugula) and folding the dough over to form a pocket. My husband's family also tops with sliced American or muenster cheese (after it is baked), folding the dough over taco-style.

FOREVERMAMA'S GARLIC CHEESY BREAD (JUST LIKE TAKEOUT)
These are addictive! This is a from scratch recipe for cheesy bread that is DELICIOUS and fun to eat and not hard at all to make. Why spend money on cheesy bread takeout when you can make it yourself for a lot less and it's just as delicious if not better. My 3 year old niece who happened to be over couldn't stop eating it and kept on asking for more. I kept on munching away myself. Yummy!

- Measure warm water into a measuring cup, stir yeast and honey into warm water to dissolve. Cover with plastic wrap and let sit for about 10 - 15 minutes until bubbles form and mixture starts to foam.
- Add the yeast mixture into a large mixing bowl, preferably a stand mixer.
- Pour in oil and add salt. Add half the amount of flour and mix.
- If using a stand mixer, use the kneading hook until flour is fully incorporated. If kneading by hand, knead hard for about 10 minutes or more. Flour should be fully incorporated. Add additional flour incrementally, bit by bit until the dough is pliable and slightly tacky. When you touch it, it shouldn't stick to your hands like goo, but just slightly tacky.
- Once this stage is reached, turn the mixer on high and knead for about 6 minutes. If kneading by hand, knead hard for a good 20-25 minutes or until the dough is smooth and easy to work with. Note that once dough is in the kneading process, you may need to add a bit of additional flour, (this depends on the weather and humidity level in your home). The dough should be smooth and easy to work with and not stick to the bowl, but rather separate from the bowl, leaving it clean.
- In a separate clean bowl, oil it lightly. Add the ball of dough to the bowl and lightly grease the top of the dough so it won't dry out.
- Cover with plastic wrap and wrap a couple of towels around it to help it double. Let rise for about 1 - 2 hours or until double in size.
- Preheat oven to 450 degrees fahrenheit.
- Prepare 2 pizza stones by lightly greasing and flour. An up-side down cookie sheet maybe substituted for the pizza stone.
- Mix butter and garlic in a small bowl and set aside.
- Roll pizza dough to shape it into a 12" circle. Place pizza dough on prepared pizza stone.
- Dot garlic/butter mixture evenly over both dough's and spread evenly with the back of a spoon or with the balls of your fingers, being careful not to tear the dough. Top with cheeses.
- At this point you may want your dough to rest and rise a bit more. If yes, cover loosely with plastic wrap and let sit for about 30minutes to 1 (or more) hour, or you may place it directly into the oven.
- Bake about 10 to 15 minutes or until bubbly and golden. Remember to slightly lift the edge of pizza dough to make sure that it is cooked on the bottom as well. If pizza topping is browning too quickly before pizza is fully cooked, cover top loosely with aluminum foil with shiny-side down.
- Remove from oven and cool for 2 minutes before cutting into pizza sticks. Serve hot alongside some marinara sauce for dipping.
- NOTE: Though all purpose flour can be used, bread flour is preferable for it's chewy stretchy quality. All purpose flour reaps a good product as well, but it will be more crunchy than chewy as a pizza dough should be.
- Any cheese of your choice can be substituted for the mozzarella, I've used muenster, monterey jack and/or a combination. The best result in flavor was when I used a bit of smoked gouda; I don't believe you'd want to use too much of it because it will overpower this bread.

A friend of mine gave me this recipe some years ago and I've been making it ever since. It's great for a party or a fun movie night with the kids. We all love it and it's addictive. It's great served with tortilla chips, toasted pieces of baguette or pita toasts.

Steps:
- Mix cream cheese, onion, bell pepper/s, and sour cream. Add seasonings and mix until all ingredients are incorporated evenly.
- Sprinkle pepperoni over the top. Cover with pizza sauce. Cover with shredded mozzarella.
- Bake in a 350 degree fahrenheit oven for 25 - 30 minutes or when bubbly around edges and cheese is all melted.
- Serve with tortilla chips (nachos), toasted pieces of baguette or toasted pieces of pita chips.
