With its red tomatoes and green parsley, this dish always looks beautiful on a holiday buffet. My daughter-in-law shared the recipe from her family, and it's now a favorite with our family, too.-Mary Farney, Normal, Illinois

1 package (16 ounces) bow tie pasta
2 cans (14-1/2 ounces each) diced tomatoes
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
1-1/2 cups shredded part-skim mozzarella cheese
1-1/3 cups grated Romano cheese
1/2 cup shredded Parmesan cheese
1/4 cup crumbled blue cheese
1/2 cup minced fresh parsley

Steps:

  • Cook pasta according to package directions. Meanwhile, drain tomatoes, reserving 1-1/4 cups juice; set aside., In a large saucepan, melt butter over medium heat. Stir in the flour, salt and pepper until smooth; gradually add milk and reserved tomato juice. Bring to a boil. Cook and stir for 2 minutes or until thickened. Remove from the heat., Drain pasta; add the sauce and reserved tomatoes. Stir in cheeses and parsley. Transfer to a greased 3-qt. baking dish (dish will be full). Bake, uncovered, at 375° for 30-35 minutes or until bubbly.

8 ounces uncooked bow tie pasta
2 cups garden-style spaghetti sauce
1 envelope Italian salad dressing mix
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 400°. Cook pasta according to package directions; drain. In a large bowl, combine spaghetti sauce and salad dressing mix. Add pasta; toss to coat. , Transfer to a greased shallow 2-qt. baking dish. Sprinkle with cheese. Bake, uncovered, 15-20 minutes or until heated through.

2 (14 1/2 ounce) cans diced tomatoes
1 (16 ounce) package bow tie pasta (uncooked)
1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups milk
1 1/2 cups shredded mozzarella cheese
1 1/3 cups grated romano cheese
1/2 cup shredded parmesan cheese
1/4 cup crumbled blue cheese (or Gorgonzola)
1/2 cup minced fresh parsley

Steps:

  • In a small bowl, drain tomatoes; RESERVING THE JUICE; set aside.
  • Cook pasta according to package directions; drain.
  • In a saucepan, melt butter over medium heat.
  • Stir in the flour, salt and pepper until smooth.
  • Gradually add in milk and reserved juice.
  • Bring to a boil; cook and stir for two minutes or until thickened and remove from heat.
  • In a large bowl, combine the pasta, sauce and diced tomatoes.
  • Stir in the cheeses and parsley; toss gently to coat.
  • Transfer to a greased 13 x 9 baking dish.
  • Bake, uncovered, at 375 degrees for 30-35 minutes or until golden and bubbly.

1 1/2 c. Lowfat milk A, (28- to 32-oz) can whole Italian tomatoes, liquid removed, reserving 1 1/4 c. juice, and minced fine
1 lb Bow-tie pasta
1 1/2 c. Coarsely grated mozzarella cheese, (about 6 ounces)
1/2 c. Crumbled Gorgonzola cheese, (about 2 ounces)
1/2 c. Diced Italian Fontina cheese, (about 2 ounces)
1 1/3 c. Freshly grated Romano cheese, (about 4 ounces)
1/2 c. Finely minced fresh parsley leaves, (preferably flat-leafed)

Steps:

  • Preheat oven to 375F. and butter a 3-to 4-qt gratin dish or possibly other shallow baking dish. In a heavy saucepan heat butter over moderately low heat. Add in flour and cook roux, whisking, 3 min. Add in lowfat milk and reserved tomato juice in a stream, whisking, and bring to a boil, whisking. Stir in tomatoes and salt and pepper to taste and simmer till thickened, about 3 min. In a kettle of salted boiling water cook pasta till just al dente, about 8 min, and drain well. In a bowl stir together pasta, sauce, mozzarella, Gorgonzola, Fontina, 1 c. Romano, and parsley and transfer to prepared dish. Sprinkle pasta with remaining 1/3 c. Romano. Bake bow ties in middle of oven 30 to 35 min, or possibly till golden brown and bubbling, and let stand 10 min before servings. Serves 6 as an entree.

1/2 pound bow-tie pasta
1 teaspoon olive oil
1 clove garlic, minced
1 can (28 ounces) whole peeled tomatoes, in puree
1/4 teaspoon dried oregano
1/8 teaspoon sugar
Coarse salt
2 precooked chicken sausages, about 3 ounces each, cut crosswise into 1/4-inch-thick rounds
8 ounces mozzarella cheese, cut into small cubes (1 3/4 cups)
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Cook pasta according to package instructions. Drain; set aside.
  • Meanwhile, in a large saucepan, heat oil over medium. Add garlic; cook until fragrant, about 1 minute. Add tomatoes, oregano, and sugar. Bring to a boil, reduce to a simmer; cook, stirring and breaking up tomatoes until slightly thickened, 5 to 8 minutes. Season with salt.
  • Add pasta, sausage, and half the mozzarella; toss to combine. Transfer to a 2-quart baking dish. Top with remaining mozzarella and Parmesan. Bake until bubbly and top is lightly browned, 10 to 15 minutes.
