FRENCH APPLE GALETTES
Steps:
- Preheat the oven to 400 degrees F. Line 2 sheet pans with parchment paper.
- Unfold the sheets of puff pastry and cut each sheet into quarters. Place the pastry pieces on the prepared sheet pans and refrigerate while you prepare the apples.
- Peel the apples and cut them in half through the stems. Remove the stems and cores with a sharp knife and a melon baler. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across each piece of pastry and place a slice of apple on each side. Sprinkle the full 3/4 cup of sugar over all the pastry pieces and dot with the butter.
- Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don't worry! The apple juices will burn in the pan but the galettes will be fine! When the galettes are done, heat the apricot jelly together with the Calvados and brush the apples and pastry completely with the jelly mixture. Loosen the galettes with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.
APPLE CRUMBLE PIE
Tart apples, sweet raisins, and a crumb topping make for a blue-ribbon dessert. Pack the apples in tightly to minimize gaps between filling and crust once the pie is baked.

- Preheat oven to 375 degrees. Make crumb topping: In a medium bowl, combine 1 cup flour, butter, brown sugar, and 1/4 teaspoon salt. Work with fingers until large clumps form; freeze.
- On a lightly floured piece of wax paper or parchment paper, roll dough into a 14-inch circle. Carefully fit into a 9-inch deep-dish pie plate, gently lowering dough into bottom and sides of pie plate without stretching (you will have a 2-inch overhang all around). Refrigerate.
- Place lemon juice in a large bowl. Peel, core, and slice apples 1/8 inch thick, transferring them to the bowl as you work. Add granulated sugar, raisins, cinnamon, remaining 1/4 cup flour, and remaining 1/2 teaspoon salt; toss to combine. Transfer apple mixture to pie crust, pressing in firmly. Fold dough overhang over filling, pleating it as you work your way around pie; press dough firmly against filling.
- Bake 45 minutes, then sprinkle apple filling with crumb topping. Continue to bake until golden and bubbling, 30 to 45 minutes more. Cool at least 6 hours before serving.

- Heat oven to 350°F. Grease 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In small bowl, mix 1 cup Bisquick mix, the nuts and brown sugar. Cut in 3 tablespoons firm butter with fork or pastry blender until mixture is crumbly; set aside.

FRENCH APPLE CRUMBLE
I found this recipe while browsing through a favorite french blog of mine called Chocolate & Zucchini. It originally calls for 5 apples and two mangoes, and one day I'd love to try it with them. But for now I've only made it with the apples, and it's still sensational and easy. You'll notice there's no cinnamon in the recipe--I don't think the french relate apples with cinnamon the way we Americans seem to. You may add it if you wish, but I think they're on to something. It's amazing without any cinnamon.

- Preheat oven to 350.
- Cream butter and sugar till light and fluffy. (I just used a spoon.) Add in oatmeal, flour, and chopped almonds, and mix again until mixture resembles course crumbs. It's easiest to accomplish this by getting your (clean) fingers in there and really going at it.
- Grease a square 8 by 8 or 9 by 9 baking dish with cooking spray. Peel, core, and dice apples, tossing with the nutmeg before arranging in baking dish. I used a few dashes of lemon juice to stop the apples from browning while I chopped them. Sprinkle with crumble mixture and bake for about 40 minutes. You may want to cover with foil for the last 10 minutes or so to ensure that it doesn't get too brown.

FRENCH APPLE GALETTE
Steps:
- Thaw the puff pastry in the refrigerator overnight. The next day, roll it out slightly to make it more flat, even and square. Using a 10-inch pan lid as your guide, cut out the largest disk possible with a pizza wheel and place it on a parchment-lined sheet pan. Chill it while you make the filling.
- Place the applesauce in a saucepan with the lemon juice, cinnamon, brandy, and lemon rind. Stir and bring to a simmer, then cook down to 3/4 cup. Spread it on a sheet pan to cool it to room temperature.
- Preheat oven to 375 degrees F.
- Take out the puff pastry and spread the reduced applesauce on it to cover the surface of the pastry, leaving a 1/2-inch edge. Fan the apple slices in concentric circles over the applesauce decoratively. Sprinkle all over evenly and lightly with sugar then dot it with butter. Bake for 25 to 35 minutes until the apples are tender and the edges are golden brown.

- Preheat the oven to 400 degrees F. Combine the apples, apple juice, 2 tablespoons brown sugar, 1/8 teaspoon cinnamon, and 1/8 tablespoon nutmeg in a large mixing bowl.
- In a separate bowl, combine the oats with the remaining 2 tablespoons brown sugar, 1/8 teaspoon cinnamon, and 1/8 teaspoon nutmeg, plus the salt. Add the butter and work the mixture with your fingertips until it comes together in moist clumps. Add the almonds and work them in as well.
