FRENCH ONION MARMALADE - CONFIT D'OIGNON RECIPE:



French Onion Marmalade - Confit D'Oignon Recipe: image

3 large red or white onions, (peeled, cut in half, and thinly sliced*)
1/2 cup olive oil
1 teaspoon coarse salt (or sea salt)
1/2 teaspoon black pepper, (freshly ground)
2 bay leaves
2 rosemary (sprigs)
2 tablespoons soft brown sugar ((you can add more or less according to your taste))
1/3 cup dry red wine
1/3 cup red wine vinegar
1/8 cup Balsamic Vinegar ((good quality))

Steps:

  • Cut off the stem and root ends of the onions, then halve then lengthwise, and peel away the dried skin. Cut the onions into 1/4-inch slices. It is important to have all the onion slices roughly the same size so they cook evenly. At this point, your pot will be full of sliced onions, but the onions will wilt and shrink dramatically during the cooking process.
  • In a large heavy frying pan over medium heat, heat up the olive oil. Add the sliced onions, tossing around to make sure they all have a coating of olive oil. Reduce heat to mediums and cook, covered, until the onions start to color. Add the salt, pepper, bay leaves, and rosemary. Cook, stirring occasionally, an additional 20 to 30 minutes or until the herbs have wilted.
  • Add the brown sugar, wine, wine vinegar, and Balsamic Vinegar. Bring to a boil, stirring constantly; then lower the heat to low and let simmer for approximately 20 to 30 minutes until the liquid is dissolved and the onions are soft and sticky. NOTE: Stir constantly during this process so that the onions do not stick to the bottom of the pan and become burnt.
  • Remove the rosemary and bay leaves; discard.
  • The Onion Marmalade is now ready to serve and eat, but it only gets better if left to mellow at least 2 weeks, even better after 1 to 2 months. The onion marmalade will keep for up to 6 months if immediately poured into sterilized glass preserving jars and then sealed or for up to three (3) days in an airtight container in the refrigerator.
  • Sterilize the jars, lids, and rings. Never plunge room temperature jars into rapid boiling water or they may crack. Place the jars in a large pot. Add 1-inch of water to the bottom, cover securely, and bring to a boil for 10 minutes. Keep the jars, lids, and rings in the hot water until they are ready to be used.
  • One jar at a time, ladle the hot prepared jam into the hot, sterilized jars. Fill to within 1/8 inch of top of jar. Wipe rim of jar or glass with a clean damp cloth. Immediately place a hot lid and ring on top of the jar; tightly screw the ring on the jar.

I always have at least several jars of Confit d'Oignon in my pantry; it is excellent with so many different types of dishes & recipes. Serve it with charcuterie, terrines & cheeses; it is wonderful added to vegetables, soups, stews, daubes or as a sauce for steaks. I also use it for tarts, quiches & grilled cheese sandwiches. It is well worth making a few jars - it is expensive to buy, even in France; make up several jars when onions are cheap or you have a glut in your garden. You can make it with red or yellow onions, red onions gives the finished confit a fantastic colour! This what I use when I make my Recipe #205353.

1 kg onion, red ot yellow, peeled & cut in half & sliced thinly
100 ml olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
2 bay leaves
2 rosemary sprigs
150 g soft brown sugar
75 ml dry white wine
75 ml red wine vinegar
25 ml balsamic vinegar

Steps:

  • In a heavy frying pan, heat up the olive oil and add the finely sliced onions - toss around to make sure they all have a coating of oil.
  • Cover & cook over a gentle heat until they start to colour.
  • Add the salt, pepper, bay leaves & rosemary sprigs & cook for a further 20 to 30 minutes, until the herbs have wilted.
  • Take off the lid and add the sugar, wine & vinegars.
  • Bring them to the boil and keep stirring al the time; then lower the heat & simmer for about 20 to 30 minutes until the liquid is all dissolved and the onions are soft & sticky.
  • You will need to be very vigilant towards the end of the cooking - stirring all the time so the onions do not stick and become burnt and scorched.
  • Pick out the rosemary & bay leaves and spoon the confit into a clean, dry & sterilised jar & seal straight away.
  • Ready to eat after 2 weeks, but better if kept for at least 1-2 months.
  • Makes one x 300ml jar - the recipe can easily be increased - use a large preserving pan if necessary.

2 pounds red onions, peeled, halved, and sliced thinly
A scant 1/2 cup olive oil
1 teaspoon sea salt
1⁄2 teaspoon ground black pepper
2 bay leaves
2 rosemary sprigs
1 cup brown sugar
A scant 1/3 cup dry white wine
A scant 1/3 cup red wine vinegar
5 teaspoons balsamic vinegar

Steps:

  • In a heavy frying pan add olive oil over medium heat. Add onions and toss to coat. Cover pan and cook gently until onions start to color.
  • Add salt, pepper, bay leaves, and rosemary and cook for 20 minutes, till herbs are wilted. Add sugar, wine, and vinegars and simmer until all the liquids have evaporated and the onions are soft, about 30 minutes. Make sure to stir frequently so onions do not burn.
  • Remove herbs and pour into a clean canning jar. Let cool, then seal and store in the refrigerator. Use within two weeks unless you go through the canning process.

Onion marmalade is kind of a game changer for burgers, grilled cheese, or even a charcuterie board. It's called a marmalade because the knife cut we use is long and stringy, kind of like a citrus.

6 medium yellow onions, about 8 cups, thinly sliced
2 tablespoons vegetable oil
1/2 cup sugar
salt
1/2 cup apple cider vinegar

Steps:

  • Thinly slice the onions by first cutting in half, then removing the core at an angle. Thinly slice the onions like a fan. Over medium heat, add the oil followed by the onions. The onions will start to sweat and cook down, releasing their liquid. Continue to cook over low heat, stirring every 2-3 minutes until the moisture is gone, 20 minutes or more as needed, depending on moisture level of the onions.
  • When all of the moisture's been cooked out of the onions, turn the heat back to medium, add the sugar, a pinch of salt, and the vinegar and bring to a boil to dissolve the sugar and combine. Turn the heat to low and reduce until the mixture is a thick jam, about 45 minutes.

ONION MARMALADE

7 tablespoons olive oil
4 1/2 pounds onions, peeled and finely sliced
1 cup Demerara sugar
7 tablespoons red currant jelly
1 1/4 cups cider vinegar
1/4 cup balsamic vinegar
1 heaping teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Heat the oil in a large pan over medium heat and add the onions. Lower the heat, cover the pan, and cook over low heat, stirring occasionally, for 30 to 40 minutes, until the onions are collapsed and beginning to color.
  • Add the sugar and jelly. Increase the heat and continue to cook, stirring more frequently, for about 30 minutes, until the mixture turns a dark, nutty brown and most of the moisture has been driven off.
  • Take off the heat and allow to cool for a couple of minutes before adding the vinegars (if you add vinegar to a red-hot pan, it will evaporate in a fury of scorching steam). Return to the heat and cook rapidly for another 10 minutes or so, until the mixture on the bottom for a couple of seconds.
  • Remove from the heat and season with the salt and pepper. Spoon into warm, sterilized jars and seal with vinegar-proof lids (see pp. 21-22). Use within 1 year.
  • P.S.
  • Marmalade is customarily made from citrus fruit; this marmalade is the exception to the rule. It takes its origins from the French, where historically the name marmalade was used to describe fruit that was cooked for a very long time until it was reduced to a thick purée.

CARAMELIZED ONION MARMALADE

1 tablespoon butter
4 tablespoons brown sugar
10 cups onions, thinly sliced (see note)
4 garlic cloves, minced
2 tablespoons vinegar (red wine vinegar)
3/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • NOTE: About those onions -- 10 cups is somewhere between 3 and 4 very large onions. The recipe I took this from called for sweet onions. First time I made it, I used Vidalia -- and thought they made it a little bland. Next time I tried spicier brown onions, and thought it had a lot more flavor.
  • In a LARGE skillet, melt butter. Add brown sugar and stir until it dissolves.
  • Add onion and garlic to skillet. Stir to coat with butter/sugar mixture. Cover and cook over medium heat for at least 30 minutes; you can cook them much longer and it will only make it sweeter.
  • Uncover and add vinegar to onion mixture. Cook, uncovered for at least 10 minutes. (I found I cooked it nearly 45 minutes, to try to reduce some of the liquid.).
  • Add salt and pepper.
  • Serve at room temperature or even chilled.

RED ONION MARMALADE

  • Heat olive oil and butter in a large skillet over medium heat; cook and stir onions and sugar in hot oil until onions start to caramelize, about 15 minutes. Stir red wine and balsamic vinegar into onion mixture and bring to a boil. Reduce heat to medium-low and simmer until liquid is evaporated, 15 to 20 minutes more. Season with salt.

1 1/2 lbs red onions
3 tablespoons unsalted butter or 3 tablespoons Earth Balance margarine
1/4 cup sugar
1 cup dry red wine
1/4 cup balsamic vinegar, plus
2 -3 teaspoons balsamic vinegar, if needed
1/4 teaspoon salt (to taste)

Steps:

  • Halve onions lengthwise and cut into thin slices.
  • Heat butter in large heavy skillet set over medium heat.
  • When melted and hot, add onions and sugar and stir occasionally until onions are soft and start to caramelize, 10 to 15 minute.
  • Add wine and 1/4 cup vinegar and stir until mixture almost comes to a boil.
  • Reduce heat and simmer until liquids have evaporated and onion is shiny, 15 to 20 minutes.
  • Remove from heat and sprinkle in salt, adding more if needed.
  • For tarter taste, stir in another 2 to 3 teaspoons vinegar.
  • The marmalade can be prepared 5 days ahead; cover and refrigerate.
  • Reheat, stirring, just to warm before using. Makes about 1 1/2 cups.
