1 cup white sugar
4 cups pitted cherries
1/4 teaspoon almond extract

1 1/2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F.
  • Place rolled out crust in bottom of pie place.
  • Roll out top crust and set aside.
  • In a large bowl combine tapioca, salt, sugar, cherries, and extracts.
  • Let stand 15 minutes.
  • Turn out into bottom crust and dot with butter.
  • Cover with top crust, flute edges and cut vents in top.
  • Place pie on foil lined cookie sheet, in case of drips.
  • Bake for 50 minutes, until golden brown.

2 cups all-purpose flour
1 cup shortening
¼ cup cold water, or as needed
1 pinch salt
2 pounds fresh Bing cherries, pitted
1 cup white sugar
2 tablespoons tapioca flour
1 teaspoon vanilla extract
1 teaspoon butter

Steps:

  • Whisk flour and salt together in a bowl. Cut in shortening with 2 knives or pastry blender until the mixture resembles coarse crumbs. Add cold water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened. Do not add more water than you need: when you squeeze a handful of the moistened pastry mixture, it should form a ball.
  • Divide the dough in half and shape into balls. Wrap in plastic wrap and refrigerate, at least 1 hour or up to 3 days.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix cherries, sugar, and tapioca flour together in a saucepan; let sit until the sugar draws out the cherries' juices, about 10 minutes. Heat the cherry mixture over medium heat until the juices begin to thicken and run clear, about 5 minutes. Remove from heat; mix in butter and vanilla extract. Let sit until filling has cooled to lukewarm, 5 to 10 minutes.
  • Roll out half the pastry to fit a 9-inch pie plate. Place bottom crust in pie plate. Spoon filling into crust using a slotted spoon to drain excess syrup; dot with butter. Cut left over dough into strips with a sharp paring knife or pastry wheel. Lay strips on top of the pie, pressing to seal the edges.

2 cans (16 ounces each) tart cherries
1 cup sugar

Red food coloring, optional

4 cups pitted fresh sour cherries
1-1/2 cups sugar
3 Tbsp. MINUTE Tapioca
1/4 tsp. almond extract
1 pkg. (15 oz.) ready-to-use refrigerated pie crusts (2 crusts)
1 Tbsp. butter or margarine, cut up

Steps:

  • Preheat oven to 400°F. Toss cherries with sugar, tapioca and extract. Let stand 15 min.
  • Prepare pie crust as directed on package for 2-crust pie, using 9-inch pie plate. Fill with cherry mixture. Dot with butter. Cover with second pie crust. Seal and flute edge. Cut several slits in top crust to permit steam to escape.
  • Bake 45 to 50 min. or until juices form bubbles that burst slowly. Cool.

1 1/2 tablespoons quick-cooking tapioca
2 tablespoons unsalted butter, cut into pieces
2 nine inch pie crusts (top and bottom)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a medium bowl, mix together the sugars, cinnamon, cloves, salt, and tapioca.
  • Toss in the pitted cherries and the rhubarb pieces. Let sit for a few minutes, then drain off any juice before pouring the filling into the crust.
  • Top the filling with the butter pieces.
  • Adjust top crust, remember to fold over and seal together the edges of the top and bottom crusts to prevent leakage.
  • Cut slits in the top crust, brush the edges of the crust with water, and sprinkle a little white sugar over the top.

All-purpose flour, for surface
1 recipe Pate Brisee for Red Currant and Raspberry Pie
2 1/4 pounds fresh yellow and red sweet cherries, pitted and halved
1/4 cup sugar
2 tablespoons instant tapioca powder
Vanilla ice cream, for serving (optional)

Steps:

  • Preheat oven to 400 degrees. On a lightly floured work surface, roll out one disk of pate brisee to a 1/8-inch-thick round, about 13 inches in diameter. Fit dough in a 9-inch pie plate.
  • In a large bowl, combine the cherries, sugar, and tapioca, and toss to coat evenly. Pour the filling into the prepared pie plate, and set aside.
  • Roll out remaining disk of dough as in step 1. Using a pastry wheel or a sharp pairing knife, cut dough into 1-inch-wide strips. Lightly brush rim of dough in pie plate with water, and weave the strips of dough on top of filling to form lattice. Using kitchen scissors, trim strips to create 1-inch overhang. Tuck strips under rim of shell, and crimp to seal. Chill pie in refrigerator at least 30 minutes.
  • Bake pie 20 minutes. Reduce oven heat to 350 degrees; bake until crust is deep golden brown and the juices begin to bubble, 40 to 50 minutes more. Transfer pie to a wire rack, and let stand until just warm or room temperature. Serve with ice cream, if desired.

3 tablespoons quick-cooking tapioca or cornstarch
Assembly
2 tablespoons unsalted butter, cut into pieces
2 tablespoons whole milk
1 tablespoon plus 1 1/2 teaspoons sugar

Steps:

  • Make dough:
  • Combine flour and salt in processor and blend. Add butter and shortening and process, using on/off turns, until mixture resembles coarse meal. Add 5 tablespoons ice water and toss or pulse just until combined. If necessary, gently mix in additional ice water, a little at a time, until mixture forms moist clumps. Gather dough into ball. Divide in half and flatten each piece into disk. Wrap in plastic and chill until cold, at least 30 minutes or up to 1 day.
  • Make filling:
  • Preheat oven to 400°F. Line heavy baking sheet with foil and set on middle rack of oven. In large bowl, combine cherries, sugar, and tapioca or cornstarch; mix well and let stand while rolling out crust.
  • On lightly floured surface with floured rolling pin, roll out 1 piece dough into 11-inch round (about 1/8 inch thick). Fit dough into 9-inch (1-quart) pie pan, leaving 3/4-inch overhang. Cover loosely with plastic wrap and refrigerate.
  • On lightly floured surface with floured rolling pin, roll out second piece dough into 11-inch round (about 1/8 inch thick).With sharp knife or fluted pastry wheel, cut into 1-inch-wide strips.
  • Remove pie pan with bottom crust from refrigerator and pour in filling. Top with pieces of butter. Brush rim of bottom crust lightly with water.
  • Make lattice top:
  • Lay 5 pastry strips vertically across pie, spaced evenly. Fold strips 2 and 4 back halfway, and insert new strip across center of pie, perpendicular to other strips. Drop folded strips back over inserted strip.
  • Fold back strips 1, 3, and 5 and add another cross strip, leaving room between strips for filling to show through. Lay folded strips flat again. Continue from center out to edge of pie, weaving lattice top. Repeat process on other half, again working from center out. Gently press ends of strips to edge of bottom crust to adhere. Trim lattice edges flush with rim of pie plate.
  • Roll overhanging dough from bottom crust up over edge of lattice top. Press to adhere and crimp decoratively. Brush lattice with milk and sprinkle with remaining 1 tablespoon plus 1 1/2 teaspoons sugar.
  • Place pie on baking sheet in oven. Bake 20 minutes. Cover crust edges with foil collar to prevent overbrowning. Continue to bake until filling bubbles and crust is golden brown, about 25-30 minutes longer. Transfer pie to rack and cool at least 1 hour. Serve warm or at room temperature.
