Green Bean Bundles- Tender green beans with a hint of butter and garlic are wrapped in prosciutto and oven baked. Only a few minutes of hands on time needed. These delicious and savory bundles are Keto, Low Carb, Paleo, and Clean Eating.

Number Of Ingredients 8

1 ½ lbs. fresh green beans (preferably French Green Beans*)
3 Tbsp butter (melted (or olive oil))
½ tsp garlic powder
½ tsp salt
½ tsp black pepper
¼ tsp cayenne powder (optional)
6 slices prosciutto (cut in half lengthwise)
Toasted almonds (crushed or sliced(optional garnish))

Steps:

  • Preheat oven to 450F.
  • Wash and trim green beans. Skip this step if using packaged French Cut Green Beans (haricots verts)
  • Blanch the beans- bring a large pot of water to a boil over medium-high heat. Add green beans, and cook until crisp tender, about 4-5 minutes (this may take a 1-2 min. longer if using thicker beans vs. French Cut Green Beans)
  • While beans are cooking fill a large bowl with ice water. Drain beans, and plunge into ice water to stop the cooking process. Drain beans, and blot dry with paper towels. Set aside.
  • Whisk together melted butter, garlic powder, salt, pepper, and cayenne powder in a large bowl. Add beans and toss to coat.
  • Gather beans into 12 bundles of approx. 12-15 beans each. Lay out 1 piece of prosciutto (which has been cut in half lengthwise) on a cutting board or other flat surface. Place one bundle of beans at end of prosciutto piece and roll up lengthwise. Place bundle, seam side down, on a baking sheet. Repeat with remaining prosciutto slices.
  • Bake at 450F until beans are warmed and prosciutto slices begin to brown, approx. 5-7 minutes. Serve immediately. Garnish with toasted almonds, if desired.

1 pound green beans, ends trimmed
4 ounces prosciutto, cut into small pieces
3 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
1/4 cup minced red onion
1/4 cup grated Pecorino Romano cheese (omit for dairy free)
Celtic sea salt
Freshly ground black pepper

Steps:

  • Bring a medium pot of water to boil. Fill a large bowl with water and ice cubes. Place green beans in boiling water and cook for 1 minute, until bright green. Drain and quickly pour beans into ice water (this will stop the cooking process). In the now empty pot, add prosciutto and cook over medium heat, until golden brown on the edges and crispy. Drain beans. Add olive oil, lemon juice, onion, cheese and prosciutto to green beans. Toss well. Season to taste with sea salt and black pepper. Serve.
  • *I prefer these fats because they have a high smoking point and won't oxidize under high heat like butter or olive oil will. 400g French green beans, trimmed, rinsed, and dried (90 green beans)
125g prosciutto (9 slices)
3 tsp extra virgin olive oil
Freshly cracked black pepper, to taste

Steps:

  • Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper.
  • Wrap a slice of prosciutto around 10 green beans *(see first note) before placing them spaced apart on the baking sheet in a single layer.
  • Drizzle a small amount of olive oil over each prosciutto wrapped green bean bundle. Then sprinkle black pepper on top of each bundle.
  • Place in the oven for 12-15 minutes until the prosciutto is crisp and the green beans are tender-crisp.
  • Best served immediately *(see second note).

1/4 cup pine nuts, toasted
1 1/2 pounds green beans, trim ends
6 medium cocktail tomatoes, cut in half
3 ounces prosciutto, cubed
3 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground pepper

Steps:

  • Toast pine nuts in a skillet over medium heat until golden brown (watch carefully). Set aside.
  • In a large sauce pan of boiling and salted water, cook the beans until just tender (about 5 minutes). Drain and rinse with cold water to stop the cooking process. Arrange on a platter and place tomatoes along the sides.
  • In a small skilled saute the prosciutto. Add the olive oil, vinegar, sugar, salt and pepper. Turn the heat to medium-high and bring to a boil and cook until the sugar has disolved. Add the pine nuts and pour dressing over the beans and tomatoes. Serve immediately.

2 lbs green beans, trimmed
2 1/2 teaspoons extra virgin olive oil, divided
2 ounces thinly sliced prosciutto, cut into ribbons
4 garlic cloves, minced
2 teaspoons minced fresh sage
1/4 teaspoon salt, divided
fresh ground pepper
1/4 cup toasted pine nuts (see Tip)
1 1/2 teaspoons freshly grated lemon zest
1 teaspoon lemon juice

Steps:

  • Bring a large pot of water to a boil. Add beans, return to a boil, and simmer until crisp-tender, 3 to 4 minutes. Drain.
  • Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add prosciutto; cook, stirring, until crispy, 4 to 5 minutes. Drain on a paper towel.
  • Wipe out the pan; heat the remaining 2 teaspoons oil over medium heat. Add the beans, garlic, sage, 1/8 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until the beans are browned in places, 3 to 4 minutes. Stir in pine nuts, lemon zest and the prosciutto. Season with lemon juice, the remaining 1/8 teaspoon salt and pepper.
  • Tip: To toast chopped nuts & seeds: Cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.

1 1/2 tsp freshly grated lemon zest
1/4 c blanced almonds
freshly ground pepper
1/4 tsp of salt divided
2 tsp minced thyme leaves

1 sprig fresh rosemary (to garnish) (optional)

Steps:

  • Saute the prosciutto in wok or fry pan until just beginning to get crisp, remove& set aside.
  • Add garlic rosemary and 2 tbsp water to the pan and stir fry for 30 seconds.
  • Add beans and 1/3 cup water, season with salt& Pepper, cover and cook apprx 4 minutes or until the beans are heated through but still crisp.
  • Arrange beans on a heated platter and sprinkle the proscuitto on top garnish with a sprig of fresh rosemary- Serve.
