HOME FRIES WITH ONIONS
The recipe has been handed down at least three generations and it always gets oohs and aahs from my family when I decide to make it. I either serve it with steak or ham chops. Be careful when cooking the potatoes as they sometimes pop right out of the skillet. One of those screen covers would work really well.

Steps:
- Open cans and remove water.
- Dump potatoes out on a paper towel and blot excessive moisture off.
- Slice the onion and then chop it the other direction.
- In a skillet on medium-high heat melt 1-tablespoon of margarine.
- Saute the onion until tender.
- Remove onion from skillet and set aside.
- Add another tablespoon of margarine and melt it.
- Spread melted margarine so it coats bottom of the skillet.
- Place potato slices on to the skillet so each piece is touching the surface.
- As potatoes brown (golden), turn them over.
- (Since I double the recipe, I remove the browned potatoes and add more.
- uncooked ones to the skillet as they all don't fit in the pan at once.).
- Add the rest of the margarine to the skillet.
- After all of the potatoes have reached a golden brown on both sides, add.
- sauteed onions and fold into potatoes.
- Sprinkle garlic powder over cooking potatoes.
- Heat the onions & potatoes for another 20 minutes, flipping them every 5-minutes.
- Serve. Yum!

- In a shallow bowl, stir together the flour, cornstarch, onion powder, garlic powder, salt, black pepper, and cayenne pepper until thoroughly mixed. Remove 1/3 cup of the flour mixture, and set aside. Gently press the cube steaks into the remaining flour mixture in the bowl until well coated on both sides.
- Heat butter and olive oil in a large skillet over medium heat until the foam subsides on the butter. Gently pan-fry the steaks until the coating is browned, about 4 minutes per side. Turn only once. Remove the steaks to a platter.
- Spread the onions out into the skillet with the remaining oil and butter, and cook over medium heat until the onions are translucent, 5 to 7 minutes, stirring often. Sprinkle the reserved flour mixture over the onions; cook and stir for 1 more minute, then pour in the beef stock and milk. Bring the mixture to a boil, stirring constantly until the gravy is thickened. Scrape the pan well to dissolve any flavor bits left in the bottom. Return the browned steaks to the gravy mixture, then push them down into the gravy. Cover the skillet, reduce heat to low, and simmer until the steaks are very tender, about 45 minutes, stirring occasionally.

- Heat oil in a 12-inch frying pan over medium heat and add the onions.
- Cook slowly over med-low heat, stirring occasionally, until onions are deep golden brown, being careful not to burn the onions toward the end of the cooking time.

- Cook, stirring, over med-low heat for 3 minutes.

- Cover potatoes with salted cold water by 1 inch in a large pot, then boil until just tender when pierced with a knife, about 20 minutes. Drain potatoes and cool completely, then chill, wrapped in plastic wrap, at least 8 hours.

FRIED FROG LEGS WITH CREAMY ONION-MUSHROOM GRAVY

- Rinse frog legs and pat dry. Separate the legs at the joint if desired. Set aside. In a medium bowl, mix together 1 cup milk, half of the beaten egg (about 1 tablespoon), garlic powder, and onion powder. Place the frog legs into the mixture, cover and refrigerate for about one hour, stirring occasionally.
- In a large bowl, stir together 1 cup flour, bread crumbs, cornmeal, baking powder, 2 teaspoons salt, 1 teaspoon pepper, cayenne, paprika, oregano, thyme, cumin and parsley. Mix well and set aside.
- Heat the olive oil and butter in a large skillet or electric skillet set to medium heat. For an electric skillet, set to 325 degrees F (165 degrees C). Dip each frog leg portion into the flour and spice mixture, packing on as much of the dry mixture as you can. Place the coated frog legs into the pan so they are close but not touching. Cook for about 15 minutes, until browned and crispy, turning often to prevent burning. Take care, they will become more fragile as they cook. Remove from pan, and place on paper towels to drain.
- Add the chopped onion and mushrooms to the skillet, and sprinkle them with chicken bouillon. Cook, stirring frequently until onions and vegetables are soft. Sprinkle the last 2 tablespoons of flour into the skillet, and stir to blend in. Cook, stirring constantly until the flour is browned. Mix together the remaining 1 cup milk, evaporated milk, and the other half of the beaten egg. Gradually mix into the skillet. Whisk or stir constantly until the gravy is thick and bubbly. Season to taste with salt and pepper. Add the frog legs, and serve them smothered with gravy.

- Cut potatoes into 3/4-inch cubes. Cut onion into 2 or 3 slices, then cut rings in half and separate the layers.
- Heat oil in a 10-inch nonstick skillet over medium-high heat. Add cubed potatoes to the hot skillet and season with garlic salt and seasoned salt. - Heat oil in a skillet over medium heat; stir in onions and salt. Cook and stir until onions have softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onions are very tender and dark brown, about 40 minutes more.
- Add quick-mixing flour; mix well and allow it to brown slightly in the pan for 1 to 2 minutes. Pour chicken stock into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. - Peel potatoes, then cut lengthwise into 1/4-inch-thick sticks and submerge in a bowl of ice and cold water. Rinse potatoes in several changes of cold water until water is clear. Drain in a colander, then spread potatoes in 1 layer on several layers of paper towels and pat very dry.
- Heat about 8 cups vegetable oil in a 5- to 6-quart heavy pot over moderate heat until a deep-fat thermometer registers 375°F.
- Put oven rack in middle position and preheat oven to 200°F.
- Cook shallot with thyme in butter in a 1- to 1 1/2-quart heavy saucepan over moderate heat, stirring frequently, until shallot is softened and golden, about 2 minutes. Stir 1 cup beef or veal demi-glace into wine and bring to a boil. Whisk in cornstarch mixture and return to a boil, then boil until sauce is slightly thickened, 2 to 3 minutes. - Preheat the oven to 425°.
- Halve the potatoes lengthwise, then cut each half into 5 thin wedges.
- Place the potatoes and 4 crushed garlic cloves on a rimmed baking sheet and coat with about 3 tablespoons extra virgin olive oil.
- Season liberally with salt and pepper and roast for 45 minutes, turning once, until deeply golden in color and crispy.
- Once the fries have had a 15-minute head start, heat a skillet over medium heat with 1 tablespoon of the oil and 2 tablespoons of the butter.
- Add the onions, chopped garlic, bay leaf, thyme, salt, and pepper.
- Cook until the onions caramelize, 20 minutes or so.
- Add the sherry and deglaze the pan, scraping up any bits from the bottom, and cook for a couple of minutes longer.
- While the onions are cooking, preheat a grill pan or large skillet over med-high heat.
- In a bowl, combine the sirloin with the Worcestershire sauce, parsley, salt, and pepper.
- Divide the mixture into 4 portions, then form each portion into a large patty.
- Coat the patties in a little oil and cook for 5 minutes on each side for pink centers, a minute or so less for rare and 2 minutes longer for well done.
- Melt 2 tablespoons of the butter in a small saucepan over medium heat.
- Add the shallots and cook for 2-3 minutes, then whisk in the flour and cook for another minute.
- Whisk in the stock and cook, stirring, for a couple of minutes to thicken.
- Season the gravy with pepper and stir in the Dijon mustard; set aside.
- When the fries have cooked about 40 minutes, turn the oven to broil.
- Place the bread on a baking sheet and toast on both sides 6 inches from broiler until lightly golden.
- Set 4 pieces of bread aside, then mound the gruyere onto the remaining bread rounds, just like the large croutons that top French onion soup; return to the oven to melt the cheese, 1-2 minutes.
- Dress the greens with the lemon juice, the remaining 3 tablespoons of oil, and salt and pepper.
- Place the burgers on the plain toasts and top with mounds of the French onions.
- Take the cheesy bread and set in place on top of the onions, cheesy side down.
- Serve greens on the side; serve the fries piled high on a platter and pour the gravy over them, or pour the gravy in a bowl and dip as you go.

- In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
- Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
- Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. MIDWESTERN GERMAN FRIES WITH SAUSAGE GRAVY
This is a popular breakfast item served in a lot of restaurants in Ohio. It's a mixture of homefries, onion, green peppers and eggs topped off with sausage gravy. I like using either Italian sausage or sage sausage for the gravy. A great way to use leftover baked potatoes. If you don't have any leftover baked potates, you can put the potatoes in the microwave and use the baked potato setting. Let the potatoes cool to the touch then peel (or leave the skin on if you pefer) and slice.

- Slice the potatoes into thin slices. Fry potatoes, onion and green pepper in butter in a large skillet.
- Once the potatoes are fried to your liking, add the beaten eggs. Stir mixture and cook until the eggs are done.
- While the potato mixture is cooking, brown the pound of sausage in another skillet breaking up the sausage into small chunks.
- Once the sausage is completely cooked, mix the milk and flour together until smooth and add to the sausage. Cook over medium-high heat until the sausage gravy thickens.
