2 ounces freshly brewed espresso or 2 ounces strong coffee
2 ounces chocolate syrup (Ghirardelli Sweet Ground Chocolate & Cocoa Sauce)
5 ounces fresh water (more or less to adjust consistency)
1 scoop vanilla ice cream
2 ounces orange juice
1 dash cinnamon
1 dash cayenne
16 ounces ice
whipped cream and cocoa powder (to garnish)

Steps:

  • Combine the coffee, cocoa sauce, water, and ice cream, blending until smooth.
  • Add the orange juice, cinnamon, cayenne, and ice.
  • Garnish with whipped cream and a dash of cocoa powder.

Dutch process cocoa is the secret to rich chocolate flavor in this recipe, which may be frozen and scooped like ice cream or enjoyed as a frosty spoon drink. Although it takes just minutes to make, start the recipe one or two days in advance to allow for freezing time.

1/2 cup (unsifted) unsweetened Dutch Process Cocoa
3/4 cup sugar
3/4 cup plus 1/4 cup water
4 teaspoons instant espresso powder or freeze dried instant coffee
2 cups low fat (2 percent) milk

Steps:

  • Combine cocoa and sugar in a medium saucepan. Whisk in 3/4 cup of the water, a little at a time. Bring the mixture to a simmer. Simmer for 2 minutes, stirring constantly. Remove from heat and stir espresso powder and milk. Strain into a shallow pan. Freeze several hours until hard.
  • Break the frozen mixture up with a fork and place the chunks in the bowl of a food processor. Add the remaining 1/4 cup of water and process until no lumps remain and the mixture is thick and slushy and lightened in color. Serve at once in goblets to be eaten with a spoon, or refreeze overnight and scoop like sherbet to serve.

1 1/2 cups chilled very strong brewed coffee or espresso, or coffee concentrate, recipe follows
1 cup whole milk, or more to taste
1/2 cup semisweet chocolate chips, plus more for topping if desired!
1/4 cup sweetened condensed milk
1/4 cup chocolate syrup, plus more for drizzling
1 teaspoon vanilla extract
1/4 cup half-and-half, optional
Whipped cream, for serving
1 pound ground coffee (a good, rich roast)

Steps:

  • Add the coffee, milk, chocolate chips, sweetened condensed milk, chocolate syrup and vanilla to a blender. Top off the blender with ice and blend until smooth and icy, with tiny chocolate bits throughout. (Add some half-and-half if you'd like it to be a little richer and creamier.)
  • Serve in glasses with whipped cream on top, and drizzle the whipped cream with chocolate syrup or dot with more chocolate chips.
  • In a large container, mix the ground coffee with 32 cups (8 quarts) cold water. Cover and allow to sit at room temperature 8 hours or overnight.
  • Line a fine-mesh strainer with cheesecloth and set over a pitcher or other container. Pour the coffee/water mixture through the strainer, allowing all the liquid to run through. Discard the grounds. Place the coffee liquid in the fridge to chill. Use as needed.

All of my friends rave about these frosty drinks. I pour my leftover coffee in ice cube trays and keep them on hand all the time. You can make fun squiggly designs on insides of glasses with chocolate syrup, before pouring mochas. Top with whipped cream.

1 package (8 ounces) cream cheese, softened

1 tablespoon hot water
1 cup heavy whipping cream, whipped
Chocolate-covered coffee beans, optional

Steps:

  • In a small bowl, combine the wafer crumbs, sugar and butter. Press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan; set aside., In a large bowl, beat the cream cheese, milk and chocolate syrup until smooth. Dissolve coffee granules in hot water; add to cream cheese mixture. Fold in whipped cream. Pour over crust. Cover and freeze for 8 hours or overnight. , Remove from the freezer 10-15 minutes before serving. Carefully run a knife around edge of pan to loosen. Remove sides of pan. Years ago I worked in a little coffee shop. We had a powdered cocoa mix with spices that was called Mexican Spiced Cocoa. On the can were directions for mixing it with espresso to get Mayan Mocha. I fell IN LOVE with that drink and have been searching for a replacement ever since. The coffee shop inside Hastings has a similar drink, but won't sell the mix to me for home use. So I researched a little, tested a little, and came up with this. To serve, stir 1/4 cup mix with 1 cup hot water and stir.

2 (8 ounce) packages cream cheese, softened
