FROZEN YOGURT BITES



Frozen Yogurt Bites image

2 cups strawberry yogurt
1/2 cup milk
24 blueberries
4 strawberries, cut into wedges
3 kiwis, peeled, quartered and sliced

Steps:

  • Line a mini muffin tin with mini cupcake liners and set aside.
  • Mix together the yogurt and milk in a bowl until well combined.
  • Fill the liners halfway with the yogurt mixture. Place a blueberry in each one. Top the bites with the remaining yogurt mixture. Top half of the bites with a strawberry slice and half with a kiwi slice. Freeze, uncovered, until firm, 2 to 3 hours. Serve or transfer to a freezer-proof container. The bites can be stored for up to one week.
  • Let sit out of the freezer 5 minutes before peeling off the paper and eating.

¾ cup white sugar
2 teaspoons cornstarch
1 (12 fluid ounce) can fat-free evaporated milk
½ cup semisweet chocolate chips
1 cup plain lowfat yogurt
1 teaspoon vanilla extract

Steps:

  • Stir together the cornstarch and sugar, and place in a saucepan. Stir in the evaporated milk, and chocolate chips. Cook over medium heat until chocolate is melted and the mixture is thickened. Stir constantly to prevent burning.
  • Remove the mixture from the heat, and stir in the plain yogurt and vanilla. Refrigerate until chilled.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions.

¼ cup unsweetened cocoa powder
3 ounces bittersweet chocolate
2 tablespoons coffee-flavored liqueur (such as Kahlua®)
2 teaspoons espresso powder
1 ½ bananas, mashed
1 cup nonfat plain yogurt

Steps:

  • Mix milk, half-and-half, sugar, cocoa powder, bittersweet chocolate, coffee-flavored liqueur, and espresso powder together in a heavy saucepan; bring to a simmer, stirring often, until heated through, about 5 minutes. Remove saucepan from heat and stir in bananas. Refrigerate until completely cooled, at least 30 minutes.
  • Whisk yogurt into banana mixture; transfer to the bowl of an ice cream maker. Follow manufacturer's instructions for making frozen yogurt.

  • In a small saucepan, bring the chocolate, agave nectar, milk, and salt to a simmer over medium heat. Remove the pan from the heat and whisk until smooth. Whisk 1/2 cup of the yogurt into the warm chocolate mixture. Then add the remaining yogurt and whisk until the mixture is smooth.
  • Freeze the yogurt mixture in an ice cream maker according to the manufacturer's directions. Serve immediately, or transfer to a tightly sealed container and freeze up to 2 days.
