FRESH MUESLI WITH APPLE AND ALMONDS
Toasting the oats and almonds before soaking them gives this muesli a nuttier flavor.

Steps:
- Preheat oven to 350 degrees. Place oats and almonds on a rimmed baking sheet. Bake until almonds are golden brown, 7 to 8 minutes; let cool to room temperature. In a small bowl, stir together 3/4 cup of toasted oat mixture, yogurt, and milk. Cover and refrigerate until oats are soft, 1 hour or up to overnight.
- Spoon muesli into two bowls. Top with apple and remaining toasted oat mixture; drizzle with honey.

- Put the porridge oats in a saucepan and heat gently, stirring frequently until they're just starting to toast. Turn off the heat, then add all of the nuts, pumpkin seeds, and cinnamon, then stir everything together well.
- Tip into a large bowl, stir to help it cool, then add the raisins and puffed wheat and toss together until well mixed. Tip half into a jar or airtight container and save for another day - it will keep at room temperature. Serve the rest in two bowls, grate over 2 apples and pour over some cold cold milk (you can also use regular or preferred non-dairy milk) at the table. Save the other apples for the remaining muesli.

- Mix first 4 ingredients in large bowl. Let stand 5 minutes to soften oats. Whisk orange juice and honey in medium bowl. Stir in grated apples and almonds, then 3 cups chopped fruit. Stir fruit mixture into oat mixture. DO AHEAD: Can be made 8 hours ahead. Cover; chill. Spoon into bowls.
FRUIT AND ALMOND MUESLI
After I returned from Europe, I couldn't find a muesli recipe that was exactly what I had experienced there. After a little trial and error, I came up with this recipe which is close enough. I can make the basic mixture on Saturday. It's a good, healthy mixture that is quick to fix in the morning. I work full time and am not a morning person.

Steps:
- Preheat oven to 350 degrees.
- Mix the oats and almonds and spread them on a cookie sheet.
- Spray with butter spray and toss gently.
- Place in oven and bake for 10 minutes. Then turn off oven and let the oats and almonds remain in oven for 30 minutes.
- When completely cool, mix in the diced fruit.
- Store in an airtight container.
- To serve, place desired amount of muesli in a cereal bowl and mix with yogurt and honey. If a thinner mixture is desired, mix with a little milk.
