Number Of Ingredients 8

2 cups all-purpose flour
1/2 teaspoon salt
2 1/4 cups Kellogg's® corn flakes (crushed to 2/3 cups)
1 cup margarine or butter, softened
1/2 cup firmly packed brown sugar
1 egg
1 teaspoon vanilla extract
Raspberry, strawberry or currant jelly

Steps:

  • 1. Stir together flour and salt. Set aside. 2. In large mixing bowl, beat margarine and sugar until light and fluffy. Add egg and vanilla. Beat well. Stir in flour mixture, mixing until combined. Shape dough into balls about 1 inch in diameter. Roll in KELLOGG'S CORN FLAKES cereal. Place about 2 inches apart on ungreased baking sheets. Make dent in center of each cookie.3. Bake at 300°F about 8 minutes. Remove from oven. Press down dent in top of each cookie. Return to oven and bake about 10 minutes longer or until lightly browned. Fill centers of cookies with jelly when cooled.

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
2-1/2 cups all-purpose flour
1/2 cup apricot spreadable fruit or seedless raspberry preserves

Steps:

  • In a large bowl, cream butter and cream cheese until light and fluffy. Gradually add flour to the creamed mixture and mix well. Divide dough into four portions; cover and refrigerate until easy to handle. , On a lightly floured surface, roll one portion of dough at a time into a 10x7-1/2-in. rectangle. Trim edges if necessary. Cut into 2-1/2-in. squares., Place 1/4 teaspoon spreadable fruit or preserves near each end of two diagonal corners. Moisten the remaining two corners with water; fold over and press lightly. , Place on ungreased baking sheets. Bake at 350° for 12-15 minutes or until corners are lightly browned. Cool 2-3 minutes before removing to wire racks to cool.

Dutch Dainties image

I clipped this recipe from the Toronto Star and used to make it quite a bit. I don't know where the name "dutch dainties" comes from. I think of it as a glorified coconut tart. I have substituted chocolate chips for the maraschino cherries with good results. I also have made these in mini-muffin tins (24 servings) for more of a "ccokie sized" serving. Just reduce baking time (I believe 10-14 minutes).

1/2 cup butter
1/2 cup brown sugar
1 egg yolk
1 cup all-purpose flour
1/8 teaspoon baking soda
2 egg whites
1/2 cup brown sugar
1/2 cup shredded coconut
1/4 cup nuts, chopped (I prefer pecans)
1/4 cup maraschino cherry, chopped
1 pinch baking powder

Steps:

  • Preheat oven to 325*.
  • BASE: Combine ingredients and press into greased muffin tins to form a shell for filling.
  • FILLING: Beat egg whites until stiff. Fold in brown sugar, coconut, nuts, cherries and baking powder. Spoon into muffin cups over base.
  • Bake @ 325* until filling is golden brown (and toothpick comes out clean) about 20 minutes.

Portion dough using level measuring-tablespoon. Shape into balls and roll in KELLOGG'S® CORN FLAKES CRUMBS®. Place about 2 inches apart on ungreased baking sheets.
