RASPBERRY-RICOTTA MOUSSE



Raspberry-Ricotta Mousse image

1 (15-ounce) container whole milk ricotta cheese
1/2 cup raspberry jam
1 cup whipping cream
3 tablespoons powdered sugar
1 cup fresh raspberries

Steps:

  • In a food processor, blend the ricotta cheese until light and fluffy, about 20 seconds. Add the jam and pulse until combined. Transfer to a large bowl.
  • In a separate bowl, using an electric hand mixer, beat the cream until thick. Add the powdered sugar and continue to beat until the cream holds stiff peaks. Working in batches, carefully fold the cream mixture into the ricotta mixture. Spoon the mousse into serving bowls and refrigerate for 1 hour. Garnish with fresh raspberries and serve.

2/3 cup maple syrup
1/4 cup chopped pecans
1/2 cup heavy whipping cream
1-1/4 cups whole-milk ricotta cheese
1/2 cup mascarpone cheese

Steps:

  • Place syrup in a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Transfer to a bowl; cool completely., In a small heavy skillet, cook and stir pecans over medium heat, about 3 minutes. Drizzle with 1 tablespoon cooked syrup; cook and stir 1 minute longer. Spread on foil to cool., In a small bowl, beat cream until soft peaks form. In a large bowl, beat ricotta and mascarpone cheeses until light and fluffy. Gradually beat in 1/3 cup cooled syrup; gently fold in whipped cream., To serve, spoon mousse into dessert dishes. Drizzle with remaining cooled syrup; top with candied pecans.

3 ounces unsweetened chocolate, cut into small pieces
1 pound ricotta cheese
⅓ cup honey
1 teaspoon vanilla extract

Steps:

  • Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Allow to cool slightly.
  • Combine melted chocolate, ricotta cheese, honey, and vanilla extract in a blender; blend until smooth. Pour into dessert cups or glasses and let chill completely.

Originally came from Moosewood. We love it for breakfast or dessert. If you use strawberries, don't use frozen. The jam should be the same flavor as the fruit. Cherry is fantastic. Cooking time is the time the flavors rest to 'marry'.

1 lb low-fat ricotta cheese
1 pint fruit
1/2 cup jam
8 ounces Cool Whip Lite

Steps:

  • For a smoother, mousse like texture, blend the ricotta cheese a couple minutes in the blender.
  • Fold in the fruit and jam.
  • If you plan to serve it all right away, fold in the whipped cream.
  • Let it set 20 minutes in the fridge.
  • If you only plan to use a portion now and the rest hours later, save out the whipped cream. Let the ricotta fruit mixture rest to let the flavors "marry".
  • Spoon out whatever portions you pneed and add the whipped cream.
  • Obviously you could use full fat or non fat for the cheese and whipped cream.
