EASY MIX-AND-MATCH FRUIT CRUMBLE



Easy Mix-and-Match Fruit Crumble image

Grab whatever fruit is in season (or in your fridge!) for this versatile recipe for Easy Mix-and-Match Fruit Crumble.

6 cups fresh fruit (See Kelly's Notes)
2 Tablespoons all-purpose flour
2 Tablespoons sugar
1 Tablespoon fresh lemon juice
1 cup all-purpose flour
1/2 cup packed light brown sugar
1 teaspoon baking powder
1 Tablespoon fresh thyme leaves
1 teaspoon fresh lemon zest
1/4 teaspoon salt
8 Tablespoons (1 stick) unsalted butter, cubed and room temp

Steps:

  • Preheat the oven to 375°F. Grease an 8-inch square baking dish or a 10-inch cast-iron skillet with cooking spray or butter.
  • In a large bowl, toss together the fruit with the flour, sugar and lemon juice. (See Kelly's Notes for adjusting quantities.)
  • Pour the fruit filling into the prepared baking dish and set it aside.
  • In a medium bowl, whisk together the flour, sugar, baking powder, thyme, lemon zest and salt. Add the cubed butter, and using your fingers, work it into the flour mixture until moist clumps form.
  • Sprinkle the crumble mixture evenly atop the fruit then place the baking dish atop a baking sheet.
  • Bake the crumble for 35 to 40 minutes until the crumble topping is golden brown and the fruit is bubbling. Let it cool 5 minutes then serve topped with ice cream or whipped cream.
  • Any variety or combination of fruit will work great in this recipe, such as strawberries, raspberries, blueberries, peaches, plums, etc.
  • Adjust the amount of flour and lemon juice in the fruit filling depending on the juiciness and sweetness of the fruit. Fruits with more liquids (such as peaches) may require more flour, while tarter fruits (such as blackberries) may require less (or no) lemon juice.

100g plain flour
50g rolled oats
100g butter , cubed
50g light brown soft sugar , plus a little extra if needed
60g flaked almonds (optional)
3 tbsp ground almonds
500g frozen berries or summer fruit, defrosted
ice cream , custard or cream, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the flour, oats, butter and sugar in a bowl and squash together with your fingers into a crumble texture. Sprinkle over a baking tray and bake for 10 mins, stirring and roughly breaking up halfway through cooking. Stir through the flaked almonds, if using. Can be done up to two days ahead and stored in an airtight container.
  • Sprinkle the ground almonds over the base of an ovenproof dish, then spoon in the fruit. If the berries are sour, sprinkle over a little extra brown sugar. Sprinkle the crumble mix over the fruit and bake for 15 mins. Rest for 5 mins before serving with ice cream, custard or cream.

1 tablespoon granulated sugar

3 tablespoons brown sugar
¼ teaspoon ground cinnamon
2 tablespoons canola oil

Steps:

  • Preheat oven to 400 degrees F.
  • Combine fruit with granulated sugar, 1 tablespoon flour and orange juice. Divide among four 6-ounce ovenproof ramekins. Combine oats, nuts, brown sugar, the remaining 2 tablespoons flour and cinnamon. Drizzle with oil and stir to combine. Sprinkle over the fruit mixture. Place the ramekins on a baking sheet.
  • Bake until the fruit is bubbling and the topping is golden, 20 to 25 minutes. Let stand for at least 10 minutes before serving.

3 fresh peaches - peeled, pitted, and sliced
3 ripe plums, peeled, pitted and sliced
4 large strawberries, sliced
1 tablespoon white sugar
½ teaspoon ground cinnamon
½ cup water
½ cup melted butter
1 cup white sugar
½ cup apricot nectar
1 cup all-purpose flour
½ cup quick-cooking rolled oats
½ cup graham cracker crumbs
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Scatter the apples, peaches, plums, and strawberries into the bottom of the prepared baking dish, mixing the fruit well. Sprinkle with 1 tablespoon of sugar and 1/2 teaspoon of cinnamon if desired. Pour the water over the fruit.
  • Mix together the butter, 1 cup of sugar, the apricot nectar, flour, rolled oats, graham cracker crumbs, and 1 tablespoon of cinnamon in a bowl until the mixture is crumbly and well combined. Sprinkle the crumbly mixture over the pan of fruit.

1/4 tsp. ground cinnamon
1/3 cup cold butter or margarine
(Optional) low-fat vanilla ice cream or frozen yogurt

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Place the peaches and pineapple in an 8-inch by 8-inch baking dish.
  • 3. Stir together the flour, sugar and cinnamon in a medium bowl. Cut in butter until mixture is crumbly and butter pieces are about the size of a pea. Sprinkle evenly over fruit.

6 ounces plain flour

Steps:

  • Preheat oven to 375°F.
  • Prepare fruit according to type.
  • Place the fruit in a 1-quart oven-proof dish in layers with granulated sugar.
  • Sift flour into a bowl.
  • Rub butter into flour until mixture resembles fine breadcrumbs.
  • Stir in the caster sugar.
  • Sprinkle the crumble mixture thickly and evenly over the fruit.
  • Press down lightly with palm of hand then smooth the top with a knife.
  • Bake for 15 minutes.
  • Reduce the temperature to 350°F.
  • Cook for a further 45 minutes or until top is lightly brown.

1 cup coarsely chopped rhubarb
1 cup peeled, cored, and coarsely chopped apples
1/4 cup Irish whiskey
1 1/2 cups light-brown sugar
1 1/2 cups McCann's Quick-Cooking Irish Oatmeal
1 cup all-purpose flour
1 teaspoon baking powder
2 teaspoons ground cinnamon
2 cups mixed berries, preferably strawberries and blueberries
1 cup heavy cream
2 tablespoons confectioners' sugar
1 tablespoon Bailey's Irish Cream

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish; set aside.
  • Stir together rhubarb, apples, whiskey and 1/2 cup brown sugar in a medium saucepan over low heat. Cook, stirring, until fruit is just softened, about 10 minutes.
  • Meanwhile, in a large bowl, mix together oatmeal, flour, baking powder, 1 teaspoon cinnamon, melted butter, and remaining 1 cup brown sugar.
  • Stir berries and remaining teaspoon cinnamon into rhubarb mixture. Pour half of the fruit mixture evenly into prepared baking dish. Sprinkle half of the oatmeal mixture over top. Top with remaining fruit mixture and then oatmeal mixture.
  • Transfer baking dish to oven and bake until golden brown, about 35 to 40 minutes.
  • Meanwhile, place heavy cream and confectioners' sugar in the bowl of an electric mixer fitted with the whisk attachment. Beat until soft peaks form; stir in Irish cream. Serve crumble warm, topped with whipped cream.
