1 package (9 ounces) refrigerated cheese tortellini
1 can (11 ounces) mandarin oranges, drained
1 medium grapefruit, peeled and sectioned
1 medium lemon, peeled and sectioned
2 kiwifruit, peeled and sliced
1 cup halved seedless red grapes
2 cups cubed cooked chicken, optional
1/2 cup maple syrup
1/2 cup orange juice
1/2 cup cashews

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, fruit and chicken if desired. , In a small bowl, whisk the syrup and orange juice; pour over salad and toss to coat. Cover and refrigerate for at least 1 hour. Sprinkle with cashews just before serving.

1 bag of frozen tortellini
1/2 cantaloupe
1/2 honeydew melon
1 can mandarin orange section, drained
1 (16 ounce) can chunk pineapple, drained
8 ounces poppy seed dressing

Steps:

  • Cook tortellini in boiling water until done.
  • Make melon balls from cantaloupe and honeydew.
  • Cool tortellini and then mix all ingredients together.
  • Refrigerate then serve.

1/2 cup pure maple syrup

Steps:

  • Cook tortellni according to package directions, then drain & rinse in cold water.
  • In a large bowl, combine tortellini, fruit & chicken.
  • In a small bowl, whisk togeher the syrup & orange juice, then pour this syrup mixture over the salad & toss to coat.
  • Cover & refrigerate at least 1 hour, then sprinkle with cashews & serve.

Sometimes simple things are the best. There are just 5 ingredients in this pasta salad and hardly any work! Tortellini, olives, sun-dried tomatoes, pesto sauce, and some mayonnaise for creaminess. This can be served hot or cold.

1 (8 ounce) package spinach tortellini
½ cup pesto sauce
3 tablespoons mayonnaise
1 (2 ounce) can sliced black olives
6 piece (blank)s julienned sun-dried tomatoes

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Drain and rinse under cold water.
  • Combine tortellini with pesto, mayonnaise, olives, and sun-dried tomatoes. Refrigerate for 1 hour before serving.

Simple Yet Yummy Tortellini Salad image

I was making pasta salad for a picnic and noticed that I ran out of dressing. All I had was extra-virgin olive oil. So, that's all I used, with some salt. It was so much better this way. Everyone wanted the recipe and then couldn't believe that oil was the only thing on this salad. Please try it this way and if you don't agree, you can always add vinegar or something. But, I don't think you will.

1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
1 (12 ounce) package spinach and ricotta tortellini
1 pint grape tomatoes, halved
½ pound pitted Kalamata olives, halved
2 tablespoons finely shredded fresh basil, or to taste
¼ cup olive oil, or to taste
salt to taste

Steps:

  • Bring a large pot of salted water to a boil. Add asparagus and cook uncovered until bright green, 1 to 2 minutes. Drain in a colander and immediately immerse in ice water to cool; drain.
  • Bring a large pot of heavily salted water to a boil. Stir the tortellini into the water and return to a boil; cook until the tortellini float to the top, 5 to 6 minutes; Drain water and run tortellini under cold water to cool.
  • Combine tortellini, asparagus, tomatoes, olives, and and basil in a bowl. Drizzle olive oil over tortellini mixture and stir to coat; season with salt.
