No need to decide between a chocolate brownie recipe and a pastry-crusted pie. This caramel and peanut butter brownie pie combines both (plus honey-roasted peanuts!) in one decadent dessert.

1 recipe Pastry for a Single-Crust Pie
1 cup caramel baking bits
3 ounce bittersweet chocolate, chopped
3 tablespoon butter
3 tablespoon creamy peanut butter
4 eggs
1 cup packed brown sugar
0.25 cup all-purpose flour
2 tablespoon whipping cream
1 tablespoon coffee-flavor or chocolate-flavor liqueur or whipping cream
1 tablespoon vanilla
0.5 teaspoon salt
1 cup honey-roasted peanuts
Vanilla ice cream (optional)
1.25 cup all-purpose flour
0.25 teaspoon salt
0.333 cup shortening
4 tablespoon cold water

Steps:

  • Preheat oven to 450°F. Prepare dough for Pastry for a Single-Crust Pie. On a lightly floured surface, use your hands to slightly flatten dough. Roll dough from center to edge into a 12-inch circle. Wrap pastry circle around rolling pin; unroll into a 9-inch pie plate. Ease pastry into pie plate without stretching it. Trim pastry to 1/2 inch beyond edge of pie plate. Fold under extra pastry even with edge of plate. Crimp edge as desired.
  • Line pastry with a double thickness of foil. Bake in the preheated oven for 8 minutes. Remove foil. Bake for 6 to 8 minutes more or until golden. Cool on a wire rack. Reduce oven temperature to 325°F.
  • Sprinkle caramel bits into bottom of the baked pastry shell. In a small saucepan combine chocolate, butter, and peanut butter; cook and stir over medium-low heat until melted and smooth. Remove from heat.
  • In a large bowl whisk together eggs, brown sugar, flour, whipping cream, liqueur, vanilla, and salt. Add chocolate mixture; whisk just until combined. Stir in peanuts. Pour over caramel bits in crust.
  • To prevent overbrowning, cover edge of pie loosely with foil. Bake in the preheated oven for 30 minutes; remove foil. Bake for 20 to 25 minutes more or until filling appears set in center. Cool completely on a wire rack. If desired, serve with ice cream. Pastry for Single-Crust Pie
  • Stir together all-purpose flour and salt. Using a pastry blender cut in shortening until pieces are pea size. Sprinkle 1 tablespoon of the water over part of the mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat moistening dough,using 1 tablespoon of the water at a time, until all the dough is moistened. Form dough into a ball. On a lightly floured surface, use your hands to slightly flatten dough. Roll dough from center to edges into a circle about 12 inches in diameter. To transfer pastry, wrap it around the rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim pastry to 1/2-inch beyond edge of pie plate. Fold under extra pastry. Crimp edge as desired. Do not prick pastry. Bake as directed in individual recipes.

Number Of Ingredients 17

1/2 cup heavy cream
1/4 cup sugar
1/4 cup water
1/2 cup smooth peanut butter
1 tablespoon corn syrup
Pinch sea salt
1/8 teaspoon vanilla extract
1 cup (2 sticks) unsalted butter, cut into chunks
6 ounces high-quality unsweetened chocolate, coarsely chopped
2 ounces bittersweet chocolate, coarsely chopped, plus 4 ounces
1 teaspoon espresso powder
4 large eggs
1 1/2 cups granulated sugar
1/2 cup packed light brown muscavado sugar
2 teaspoons pure vanilla extract
1/4 teaspoon fine salt
1 cup unbleached all-purpose flour

Steps:

  • Bring the cream to a simmer over low heat in a small saucepan. Combine the sugar and water in a small saucepan over high heat and cook, without stirring until amber brown. Slowly whisk in the warm cream until smooth and let cook for 1 minute. Remove from the heat and whisk in the peanut butter, corn syrup, sea salt and 1/8 teaspoon of vanilla extract until smooth. Transfer to a bowl and let cool until thickened at room temperature, about 30 minutes.
  • Put a rack in the middle of the oven and preheat the oven to 325 degrees F. Line a 9 by 13-inch baking pan with foil, leaving an overhang on the narrow ends. Spray the foil and pan with nonstick spray.
  • Combine the butter, unsweetened chocolate, 2 ounces bittersweet chocolate and espresso powder in a medium bowl set over a pot of simmering water. Let the chocolate melt over low heat, stirring frequently until smooth. Remove from the heat and let cool slightly, about 5 minutes.
  • In a large bowl, whisk the eggs, both sugars, vanilla and salt until smooth. Whisk in the melted chocolate mixture until combined. Scrape down the sides of the bowl. Beat in the flour in 2 additions (the batter will be thick). Stir in the remaining 4 ounces of chopped bittersweet chocolate.
  • Scrape half of the batter into the prepared pan and smooth the top. Using a tablespoon, drop dollops of half of the peanut butter caramel every 2 inches over the top of the batter. Carefully add the remaining batter and smooth over the caramel. Smooth the top and dollop the remaining caramel over the top. Use a butter knife to swirl through the batter to get a marbleized effect.
  • Bake until the top is set but still soft and the edges are puffed and just beginning to pull away from the sides of the pan, about 23 to 25 minutes. A toothpick inserted in the center will come out still gooey (be brave!--underbaking the brownies is one of the secrets to their fudgy texture). Transfer the pan to a wire rack to cool completely.
  • For the neatest cuts, refrigerate the pan for about 20 minutes before cutting the brownies. Using the foil, lift the brownie slab out of the pan. Carefully peel off the foil and put the brownie on a large cutting board. With a large sharp knife, cut the brownies into 48 squares. (The brownies can be stored in an airtight container, at room temperature, for up to 3 days; they can also be frozen, well wrapped, for up to 2 weeks.)

1 box fudge brownie mix, 18 oz.
1 pkg deep dish frozen pie crust (thawed)
1 c creamy peanut butter
1 pkg cream cheese, 8 oz.
1/2 c powdered sugar
1 small tub of whipped topping, 8 oz.

Steps:

  • 1. Mix brownie mix according to directions on the box. Spread 1/2 cup of the mix into one thawed pie crust (you can always make brownies with the rest).
  • 2. Bake at 375 degrees for 15 minutes or until crust is golden brown and brownie is set.
  • 3. While cooling, mix the cream cheese (mixes best if cheese softened to room temp) with the powdered sugar. Mix until creamy.
  • 4. Then mix in the peanut butter until well blended. Mix in 1/2 of the tub of whipped topping until well blended.
  • 5. Spread the mixture into the crust when it is completely cooled. Spread the remaining whipped topping over the filling and if you wish you can top it with miniature peanut butter cups.
  • 6. Refrigerate for at least an hour and enjoy.

1 10-ounce package peanut butter chips
1/2 cup chopped salted peanuts

Steps:

  • Preheat oven to 350°F. Butter and flour 9-inch square metal baking pan. Combine butter, semisweet chocolate chips and unsweetened chocolate in heavy medium saucepan. Stir over low heat until chocolate mixture is melted and smooth. Remove from heat. Whisk 1 cup plus 2 tablespoons sugar, 3 eggs, instant coffee granules and vanilla extract in large bowl just until combined. Add warm chocolate mixture; whisk to combine. Cool just to room temperature.
  • Whisk 2/3 cup all purpose flour, 1 1/2 teaspoons baking powder and 1/2 teaspoon salt in medium bowl. Whisk into chocolate mixture. Mix in peanut butter chips and peanuts. Pour batter into prepared pan. Bake until tester inserted into center comes out with some moist crumbs still attached, about 35 minutes (do not overbake). Cool completely. Cut into 9 squares. (Brownies can be prepared 1 day ahead. Store in airtight container at room temperature.)
