MOROCCAN STYLE CORNISH HENS



Moroccan Style Cornish Hens image

Yield 4

Number Of Ingredients 14

⅔ cup freshly squeezed lemon or lime juice
⅔ cup extra virgin olive oil
4 cloves of garlic, peeled and minced
2 tablespoons fresh oregano leaves, roughly chopped
2 tablespoons fresh flat leaf parsley, roughly chopped
2 teaspoons Ras El Hanout Spice, divided
1 teaspoon Kosher salt
4 Cornish game hens (about 1 pound each), rinsed and dried thoroughly with paper towels
1 cup water or broth
½ small sweet onion, sliced thinly
½ teaspoon black pepper, freshly ground
½ teaspoon sweet paprika
12 baby red or gold potatoes
2 - 3 shallots, sliced in half

Steps:

  • Make your marinade:
  • Whisk together the lemon or limejuice, olive oil, garlic, oregano leaves, parsley, 1 teaspoon ras el hanout and salt in a bowl.
  • Divide the marinade in between two large zipper bags. Take two hens and place in each bag. Press out air before sealing. Place them in the fridge and let it marinade at least 4 hours or better yet, overnight.
  • When ready to roast the Cornish hens: Pre-heat the oven to 425F.
  • Place the hens and their marinade in a 9 x 13 oven proof dish. Add water or broth and arrange the slices of the onion and shallots around the hens. Sprinkle the hens with freshly ground black pepper, paprika and the remaining teaspoon of ras el hanout.
  • Roast for 20 minutes. Reduce the heat to 375F. Place in small potatoes and roast for another hour or 1 hour 15 minutes basting frequently, Always test the hens before serving to make sure the juices run clear and they are full cooked. Internal temperature should be 165F. Remove from oven and let rest for 10 minutes.
  • Let them rest for 20 minutes, garnish with fresh additional fresh oregano and serve.

4 limes, 3 juiced and 1 halved
8 garlic cloves, minced
1 tablespoon dried Mexican oregano, crushed
2 tablespoons olive oil
2 Rock Cornish hens, washed and patted dry
1 bunch oregano
1 lime
1 onion, peeled and cut into chunks
Salt and freshly ground black pepper

Steps:

  • In a small bowl, mix the juice of the 3 limes, garlic, dried oregano and olive oil. Rub all over the hens and set in the refrigerator 1 to 2 hours.
  • Preheat the oven to 375 degrees.
  • Remove the hens from the refrigerator. Stuff the cavity of each with half of the fresh oregano, a lime half and half of the onion chunks. Tie the legs together with string and sprinkle all over with salt and pepper. Place on a rack in a roasting pan and roast breast side up, 20 minutes. Turn breast side down and roast another 20 minutes. Then turn over again and roast 20 minutes longer (1 hour total). Serve hot.

1/4 cup olive oil
4 teaspoons fresh thyme, chopped
fresh thyme, for garnish
3 garlic cloves, finely chopped
2 teaspoons lemons, zest of
2 teaspoons lime zest
1 teaspoon honey
1/2 teaspoon salt
1/2 teaspoon pepper
2 rock cornish game hens, halved lengthwise

Steps:

  • Prepare BBQ (Medium heat).
  • Combine olive oil, chopped thyme, garlic,lemon peel, lime peel, honey, salt, and pepper in a baking dish and stir marinade to blend well.
  • Place hens on work surface and cover with plastic wrap and pound gently with mallet to flatten slightly.
  • Place hen halves in marinade in dish, using fingers, rub both sides of hens with marinade.
  • Let marinate 20 minutes at room temperature.
  • Grill hen halves until just cooked through and skin is lightly charred, brushing with remaining marinade, about 12 minutes per side.
  • Arrange hen on plates and garnish lemon wedges, lime wedges, and fresh thyme sprigs.

4 Cornish hens, without giblets thawed
1 tablespoon cumin, crushed
2 teaspoons oregano leaves
1 teaspoon vegetable oil
4 garlic cloves, minced
2 teaspoons salt, kosher
4 teaspoons lime peel, grated
1/2 cup lime juice
1/4 cup olive oil
2 large chipotle chiles in adobo, finely chopped, with
1 teaspoon adobo sauce

Steps:

  • Heat a small skillet over medium.
  • Add cumin seeds; heat 1 minute.
  • Add oregano; cook and stir 30 seconds or until cumin is lightly toasted.
  • Add 1 teaspoon oil and garlic; cook 30 seconds.
  • Remove from heat.
  • Blend cumin mixture and remaining ingredients, except hens, in a small bowl.
  • Wash hands.
  • Rinse hens and pat dry.
  • Lightly salt and pepper inside of hens.
  • Secure wings to hens and tie legs together with string, if desired.
  • Place marinade in a large resealable plastic bag; add hens and seal bag.
  • Wash hands.
  • Turn bag to coat hens evenly with marinade.
  • Refrigerate at least 8 hours or overnight, turning occasionally.
  • Set up grill for indirect cooking: For gas grill, preheat all burners on high.
  • Turn one burner off; place food over "off" burner.
  • Reset remaining burner(s) to medium.
  • Close lid.
  • For charcoal grill, arrange hot coals around outer edge of grill; place disposable pan in open space; place food over open area.
  • Close lid. Heat to medium.
  • Wash hands.
  • Remove hens from marinade; discard leftover marinade.
  • Place hens (not touching) over indirect heat on grill.
  • Wash hands.
  • Grill hens, covered, 50 to 60 minutes or until done (internal temp 180ºF).
  • Let stand 5 minutes before serving.
  • Serving Suggestion: Serve with black bean salad and corn on the cob. Refrigerate leftovers.
