POLLO GUISADO (PUERTO RICAN CHICKEN STEW)



Pollo Guisado (Puerto Rican Chicken Stew) image

Number Of Ingredients 14

2 pounds bone-in chicken thighs or legs (if using breasts, cut in half)
1 teaspoon Adobo all purpose seasoning (Recommended brand: Goya)
2 tablespoons olive oil
4 tablespoons sofrito (homemade or storebought)
2 packets Sazon seasoning with annatto (Recommended brand: Goya)
1 tablespoon powdered chicken bouillon (or more according to your taste)
2 tbsp tomato paste
1 teaspoon dried oregano
3 cups water
3/4 cup diced potatoes
3/4 cup baby carrots
2 bay leaves
10-12 pimento-stuffed olives
2 tbsp fresh cilantro, for garnish (optional)

Steps:

  • Heat a Dutch oven on medium heat.
  • Season the chicken with the Adobo seasoning, then add the olive oil and chicken to the pot. Let the pieces brown for 4-5 minutes on each side.
  • Remove the chicken from the pot and set it aside.
  • Add the sofrito, Sazon, tomato paste, powdered chicken bouillon, oregano, water, potatoes, carrots, bay leaves and olives into the pot. Bring the mixture to a boil, then add the chicken back into the pot.
  • Lower the heat to a simmer and cook the pollo guisado for 40-50 minutes with the lid on* or until the chicken is cooked through.If your stew is too watery. cook with the lid off to reduce the liquid to your desired level.
  • Check for seasoning and add a bit more chicken bouillon if the pollo guisado needs a bit more salt.
  • Sprinkle the finished stew with the chopped cilantro, if using, and stir.
  • Serve with white rice, mashed potatoes or some crusty bread for dipping!

These garbanzos guisados are stewed chickpeas simmered with sofrito, tomato sauce, spices, and chorizo. A delicious side dish or main course that pairs perfectly with other hearty Latin meals.

2 cans chickpeas (garbanzo beans )
1/2 lbs chorizo (sliced into bite-sized pieces)
1/4 cup sofrito
8 ounces tomato sauce
1 tsp tomato paste
1/2 tsp sazon
1/2 tsp adobo
1/4 tsp cumin
1 tsp oregano
1 bay leaf
1 tsp vino seco (or vinegar)
1/4 cup olives (optional)
4 cups water (or chicken stock )
salt and pepper to taste

Steps:

  • Drain the canned chickpeas and discard the liquid.
  • Add the chorizo to the pot and cook until crisp. This should take a couple of minutes.
  • Stir in the sofrito, tomato sauce, bay leaf, oregano, sazon, adobo, cumin, and dry white wine. Cook for 2-3 minutes.
  • Add the chickpeas, water, and bring to a boil. Once it comes to a boil, cover and reduce the heat to low. Cook for 25-30 minutes. Check for seasoning, add salt and pepper if needed and cook uncovered for 5-10 minutes. To thicken, cook uncovered for 10 minutes extra or mash some of the chickpeas with the back of a spoon. Enjoy!

A quick and easy weeknight recipe from a dear Puerto Rican friend. This recipe makes a delicious chunky sauce/stew for white rice. Cube the remaining squash and chop the ham; divide into recipe portions and freeze for later!

1 1/2 cups peeled cubed butternut squash
2/3 cup chopped ham steak
1 tablespoon sofrito sauce
1 (5 g) packet sazon goya con culantro y achiote
1 (14 ounce) can garbanzo beans
1 chicken bouillon cube
1/2 cup sliced stuffed green olive (optional)

Steps:

  • In a medium saucepan, gently brown ham steak.
  • Add sofrito, Sazon, and boullion cube, stir.
  • Add undrained garbanzo beans plus one can water. Bring mixture to a gentle boil.
  • Add butternut squash and simmer, uncovered, until squash is tender. As the squash cooks the sauce will thicken some.
  • Serve over hot white rice with slices of avocado.

6 Fresh cilantro leaves
1/2 oz Cured ham diced
3 Sweet chile peppers Seeded and chopped
1 lb Chickpeas
2 tb Salt
1 Onion chopped
1 1/4 lb Pumpkin or squash cut up
1 ts Vegetable oil
1 Green pepper seeded and
2 1/2 qt Water
Chopped

2 Cloves galic peeled and
6 oz Chorizo bite-size pieces
1/4 ts Oregano crushed

Steps:

  • I love Puerto Rican Food!... Its usually simple, yet rich with lots of cilantro and garlic!!. Enclosed are examples of 4 dishes that can be simplified to taste. I always add mucho mas cilantro, peppers and garlic with fresh ingredients (I never used canned foods). I prefer to also add a pinch of red chili powder just to make it interesting (not a traditional ingredient in Puerto Rican food). Pick over chick-peas, wash well, soak overnight in water and salt. Drain chick-peas, rinse and place in large pot, together with pumpkin, chorizo, and 2 1/2 quarts water. Bring rapidly to a boil, cover, and boil over moderate heat 1 1/2 hours or until chick-peas are almost tender. Uncover, mash pumpkin and add sofrito, tomato sauce, and salt. Mix and boil over moderate heat, uncovered, about 1 hour or until sauce thickens to taste.
