It's very good if made the day before you need it, then split down the middle, buttered, and reheated at mealtime. I use a bread machine, but it can be made without. I like to use the dough cycle, then bake it in a French loaf pan.

1/2 cup loosely packed flat-leaf parsley leaves, coarsely chopped
1/2 teaspoon dried thyme
1 teaspoon fresh lemon juice
2 medium garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 cup olive oil
1 loaf (12 inches long) Italian-style white bread

Steps:

  • Heat oven to 350 degrees. Whisk together parsley, thyme, lemon juice, garlic, salt, pepper, and olive oil in a small bowl.
  • Using a bread knife, slice loaf into 12 half-inch pieces, cutting only 3/4 of the way through the loaf so it stays intact. Brush herb mixture liberally between each slice. Wrap loaf loosely in foil. Heat until warm, about 10 minutes. Serve immediately.

2 tablespoons warm water
1 1/4 teaspoons instant yeast
1/2 cup plus 1 teaspoon sugar
1 large egg, lightly beaten
2 tablespoons olive oil, plus more for greasing
1 teaspoon kosher salt
1/4 cup cold water
1/4 cup boiling water
2 cups all-purpose flour, plus 1/2 cup or more as needed
4 cloves garlic, grated
1/4 cup chopped parsley
2 tablespoons chopped chives
1 stick (8 tablespoons) unsalted butter, melted
2 tablespoons grated Parmesan
1 1/2 cups jarred marinara sauce
1/2 cup half-and-half

Steps:

  • In a small bowl, mix the warm water, yeast and 1 teaspoon of the sugar. Set aside for about 5 minutes until the mixture starts to thicken and bubble slightly. (If the mixture does not start to thicken and bubble slightly, the yeast is not working. Check the expiration date on the yeast and start over.)
  • In the bowl of a stand mixer fitted with the paddle attachment, stir together the egg, oil, salt and remaining 1/2 cup sugar until well combined. Mix in the cold water followed by the boiling water. Add the yeast mixture to the mixing bowl and stir until well blended. Add the flour and stir until it comes together into a shaggy dough, about 1 minute. Replace the paddle attachment with the dough hook and continue to knead until mostly smooth, about 3 minutes.
  • Add the garlic, 2 tablespoons of the parsley and 1 tablespoon of the chives to the dough. Continue to knead until the dough is smooth and elastic, another 3 minutes, adding in the extra 1/2 cup flour or more as needed so the dough isn't too sticky. Transfer the dough to a large, oiled bowl. Cover with plastic wrap and let it rise in a warm spot until doubled in size, about 3 hours.
  • Line an 8-inch round cake pan or baking dish with a sheet of parchment, allowing the excess paper to hang over the edges of the pan. Place a 2-to-3-inch biscuit cutter, sharp side down, in the center of the pan or dish and set aside.
  • Mix the melted butter with the remaining 2 tablespoons parsley and 1 tablespoon chives in a large bowl. Cut the dough into strips and then cut each strip into 1-inch pieces. Roll a piece into a ball and transfer it to the bowl with the butter, turning to coat completely. Transfer it to the cake pan. Repeat with the remaining dough and butter mixture, surrounding the biscuit cutter completely with the balls. Drizzle any remaining butter from the bowl over the top. Cover and let rise for 1 1/2 hours at room temperature.
  • Preheat the oven to 350 degrees F. Sprinkle the balls with the Parmesan. Place the pan of dough onto a baking sheet and bake until the top is golden brown and crisp, 35 to 40 minutes. Remove from the oven and let rest for 5 minutes.
  • While the bread is resting, in a small saucepan, heat the marinara and half-and-half until it is warm. Transfer to a bowl for dipping. Transfer the bread to a serving platter with the side sprinkled with Parmesan facing up. Remove the biscuit cutter. Serve immediately with the creamy tomato dipping sauce.

1 lb frozen pizza dough, defrosted (or make your own pizza dough)
1/4 cup olive oil, divided (extra virgin is best)
1 cup mixed fresh herbs (I used basil, thyme, parsley and oregano)
6 garlic cloves, finely chopped (more if you prefer)
1/4 teaspoon pepper, freshly ground (Or 1/2 teaspoon red pepper flakes)

Steps:

  • If using the oven, preheat to 375f.
  • Spread the pizza dough on a veggie sprayed cookie sheet, as thin or as thick as you prefer.
  • If using the oven, bake the dough for 4 or 5 minutes, until golden and raised, remove from oven.
  • Brush pizza dough with half of the olive oil.
  • Sprinkle the herbs and garlic over to cover the surface.
  • Grind the pepper over all and drizzle the other half of the olive oil over.
  • Return the bread to the oven and bake for a further 6 to 8 minutes or until golden and cooked through, slice and enjoy!.
  • Alternately:.
  • Do not precook the dough, spread it out and cover it as above and place on a medium hot BBQ rack, close the lid and cook until cooked through with grill marks and golden.

  • 1. Combine the butter, garlic, and parsley in a small bowl.
  • 2. Shortly before serving, preheat the oven to 350°F. Cut the bread into 1-inch slices without cutting all the way through. Spread the butter into each slice. Wrap the bread in aluminum foil, gathering it loosely over the top.

I understand their angst! ;D) you could pile everything into the Automatic Bread Machine and relax

1 1/4 cups water (room temp to warm, not ice cold)
2 teaspoons yeast (or one packet)
1 tablespoon sugar
1 tablespoon extra virgin olive oil
1 tablespoon garlic, minced
3 1/4 cups bread flour (my favorite is still King Arthur)
1 tablespoon sugar
1 tablespoon Italian herb seasoning, blend (or 1 t each of basil, thyme and rosemary)
1 teaspoon sea salt
1 teaspoon black pepper, cracked
1/4 cup parmesan cheese
1 tablespoon oil
1 egg
1 tablespoon water
1 tablespoon sesame seeds (optional)

Steps:

  • In a bowl or large measuring cup combine the water, sugar and yeast. Stir to mix. Set aside for about 10 minutes.
  • In a large mixing bowl, combine the flour, sugar, herbs, salt, pepper and Parmesan. Stir to mix.
  • Add the oil and the garlic to the yeast-water mix. Stir to mix.
  • Add the liquids to the dry ingredients. Stir to mix thoroughly. A dough ball will form.
  • Knead dough in bowl or lightly floured surface for about 8 minutes.
  • When finished kneading, coat all sides of the ball of dough with the 1T extra olive oil. Let rest in a draft free place (inside the oven will work) for about 1 1/2 to 2 hours -- until the dough has doubled in volume.
  • After that, 'punch down' the dough and knead briefly.
  • Form into loaf, place in baking pan (I line the pan with parchment paper so it doesn't stick to the pan) and let rest again for about 40 - 50 minutes.
  • Pre-heat oven to 350 degrees Fahrenheit.
  • Combine egg and water by whisking with fork. This is your 'egg wash'.
  • Using a soft basting brush or pastry brush, paint loaf with egg wash. If you are using the sesame seeds, sprinkle them on top now. Make 1 long superficial slice down the middle of the loaf or 4 diagonal slices.
  • Bake for about 33 - 35 minutes. Bread is done when it sounds hollow when tapped.
  • Enjoy with Italian foods, as toast or later on, dry and use as croutons.
