Number Of Ingredients 10

2 acorn squashes
cut in half and seeded
Olive oil
3 tablespoons unsalted butter
1/4 cup dark or light brown sugar
1/2 teaspoon salt
1/4 teaspoon each
freshly grated nutmeg and cinnamon
Splash of dark rum
optional

Steps:

  • Preheat oven to 400°F
  • Rub the inside of the squashes with olive oil and sprinkle with salt
  • Place on a parchment-lined sheet pan cut-side down
  • Bake for 30-40 minutes or until soft
  • While the squash bake, prepare the brown sugar mixture
  • In a small pot, combine the butter, brown sugar, salt and spices over low heat
  • Heat until butter melts and sugar dissolves
  • Add the rum, if using
  • When the squash halves are ready, flip them over and drizzle the brown sugar mixture on the inside cavity
  • Place the pan in the oven for an additional 5-10 minutes or until brown and bubbling

Steps:

  • Preheat oven to 350°. Cut squash in half lengthwise; remove and discard seeds. Cut each half crosswise into 1/2-in. slices; discard ends. Arrange squash in a shallow baking pan; cover with foil. Bake until just tender, 25-30 minutes. , Combine sugar and butter; spread over squash. Bake, uncovered, 15-20 minutes longer, basting occasionally.

1/3 cup maple syrup
1/2 teaspoon cinnamon, ground

Steps:

  • Cut squash in half lengthwise. Scoop out and discard seeds. Cut squash crosswise into 1-inch slices.
  • Arrange slices slightly overlapping, in a buttered 13 x 9 x 2-inch baking dish. Bake, covered, in a 375 degrees oven for 35 minutes or until almost tender.
  • Combine melted butter, brown sugar, syrup and cinnamon.
  • Spoon over squash.
  • Continue baking, uncovered, 15 minutes or until squash is tender, basting occasionally with syrup mixture from bottom of pan.

1 acorn squash, halved and seeded
¼ cup butter, divided
¼ cup packed brown sugar, divided

Steps:

  • Place both halves of the squash cut side up on a microwave-safe plate or dish. Put 2 tablespoons of butter, and 2 tablespoons of brown sugar into the cavity of each half.
  • Cook for 8 to 10 minutes in the microwave on full power. Rotate the squash a couple of times to ensure even cooking. When the flesh is soft, scoop out soft flesh with the sugar and butter, and place it in a bowl. Mash it a little to blend the ingredients. Serve in a bowl, or your could even serve it in the shells.

2 Tbsp. butter or margarine
4 tsp. brown sugar
1 cup JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 375°F.
  • Place squash halves in microwaveable dish; cover with waxed paper. Microwave on HIGH 12 to 14 min. or until tender, turning after 7 min. Let stand, covered, 5 min.
  • Scoop squash from shells into medium bowl, leaving 1/4-inch-thick shells. Add butter; mash until squash is smooth and butter is completely melted. Spoon into squash shells; place on baking sheet. Sprinkle with sugar; top with marshmallows.
  • Bake 12 to 15 min. or until squash are heated through and marshmallows are lightly browned.
