SALMON WITH HERB & GARLIC CREAM SAUCE



Salmon with Herb & Garlic Cream Sauce image

Recipe video above. This quick, creamy Salmon Sauce gets a fine dining touch with the addition of fresh tarragon and chervil. It's simply an excellent, easy salmon recipe for all those times when you want a touch of luxury with minimal effort!

4 salmon fillets (, skinless (~180g/6oz each) (Note 1))
1/2 tsp black pepper
1/2 tsp salt
1 tbsp olive oil
15g / 1 tbsp butter (, unsalted)
2 garlic cloves (, finely minced)
1/2 cup dry white wine ((or more chicken stock) (Note 2))
1/2 cup chicken or vegetable stock/broth (, low sodium)
1 cup cream (, heavy/thickened )
1/2 cup parmesan (, finely grated (grate your own, Note 3))
2 tsp tarragon leaves* (, finely chopped)
2 tsp chervil* (, finely chopped)
2 tsp parsley* (, finely chopped, plus more for garnish)

Steps:

  • Season: Pat salmon dry, then sprinkle with salt and pepper.
  • Pan-sear: Heat oil in a large non stick skillet over medium high heat. Add salmon, presentation side down, and cook for 3 minutes until golden brown.
  • Flip: Turn salmon and cook the other side for another 2 minutes, until the internal temperature registers 49°C / 120°F (for medium-rare, recommended) or until cooked to your taste (Note 5).
  • Butter baste: When it's almost cooked, add the butter. Melt, then spoon over the salmon a few times.
  • Rest: Remove salmon onto plate, and cover loosely with foil to keep warm.
  • Sauté garlic: Add garlic and stir for 20 seconds or until light golden.
  • Reduce wine: Add white wine, turn up heat to high. Bring to simmer while stirring base of the pan to dissolve all the golden bits into the sauce. Cook 1 minute or until it most evaporates and the wine-y smell is gone.
  • Thicken cream & stock: Add cream and chicken stock, then simmer on medium heat for 2 - 3 minutes until reduced and slightly thickened.
  • Add parmesan & herbs: Stir through parmesan (this will thicken sauce more), then the herbs. Taste sauce and see if more salt and pepper is needed.
  • Serve: Serve salmon with Creamy Sauce, ensuring there's something on the plate to soak up all that amazing sauce! Mashed Potato rates highly. See above video for list of suggestions (including side salads).

1/3 cup panko bread crumbs
4 teaspoons finely chopped shallot
2 teaspoons snipped fresh dill
1 tablespoon prepared horseradish
1 large egg, beaten
1/4 teaspoon salt
1/8 teaspoon pepper
1 pound salmon fillet, skin removed, cut into 1-inch cubes
8 whole wheat dinner rolls, split and toasted
1/4 cup reduced-fat garlic-herb spreadable cheese
8 small lettuce leaves

Steps:

  • In a large bowl, combine the first 7 ingredients. Place salmon in a food processor; pulse until coarsely chopped, and add to bread crumb mixture. Mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., On a lightly greased grill rack, grill burgers, covered, over medium heat or broil 4 in. from heat until a thermometer reads 160°, 3-4 minutes on each side. Serve on rolls with spreadable cheese and lettuce.

We're just going to say it: garlic-lime butter is our new favourite spread. We encourage you to put it on everything, but it really shines when paired with a beautiful cut of fish. This grilled salmon recipe will soon become a household favourite.

0.25 cup Butter / beurre
1 Garlic clove / ail
1 tsp Lime zest / zeste de lime
1 tbsp Fresh lime juice / jus de lime fraîchement pressé
4 Salmon fillets
1 tbsp Canola oil / huile de canola
0.5 tsp Salt / sel
1 pinch Black pepper / poivre

Steps:

  • Mash butter and garlic together with a fork in a medium bowl. Stir in lime zest and juice until combined. ##Preheat barbecue to high. ##Brush salmon all over with oil. Place, skin-side down, on one side of grill. Sprinkle with salt and black pepper. Turn burner under salmon down to low, leaving other side on at high. Barbecue, lid closed, until an instant-read thermometer inserted into thickest part of fish reads 158°F, about 15 minutes. ##Using a metal spatula, scrape between salmon skin and grill to release fillets. Transfer to a platter. Top each fillet with a dollop of lime butter. ##Make-ahead tip: Lime butter can be made up to 2 days in advance. Keep refrigerated, and bring up to room temperature before serving.

This is covered with a delicious lemon, garlic and herb crust that helps seal in the juices. This fish is light and flaky and it only takes 10 minutes to bake.

3 oz Ghee * for Whole30 and Paleo or butter for other diets
1 tsp Real Salt *
1 Lemon, juiced and zested
1 Tbsp Fresh Parsley (chopped)
1 tsp Fresh Dill (chopped)
1 Clove Garlic (minced)
Dash of White Pepper
4 4.5 oz Wild Salmon Fillets

Steps:

  • Preheat oven to 400F.
  • Place all ingredients except for salmon in a small bowl and melt in the microwave for 30-45 seconds.
  • Stir until combined.
  • Place the salmon fillets on a baking sheet lined with parchment paper or a Silpat.
  • Using a pastry brush, coat the salmon with the lemon herb butter, evenly spreading it over the tops of each fillet.
  • Bake, uncovered, on the top or second to top rack for 10-12 minutes, or until salmon is cooked through and flakes easily with a fork. (145 degrees F)
  • Alternately the fish can be broiled on medium/high on the second to top rack for 8-10 minutes, or until cooked through. This method will give you a bit more crunchy, caramelized crust. (Place it directly on the pan or use tin foil. Do not use parchment paper or a Silpat for this method.)
