If you love cheese and love potatoes you'll adore this delicious recipe! You can use any three cheeses you like, but I find using a sharp cheddar, freshly grated Parmesan or Romano cheese, and thin sliced provolone (because it melts very well) are the best! Takes time to cook, but the result is so yummy and the smell is intoxicating!

1 ½ pounds Yukon Gold potatoes, thinly sliced
2 tablespoons butter, divided
1 pint heavy cream
2 cloves garlic, thinly sliced
salt and pepper to taste
2 cups shredded Cheddar cheese
4 slices provolone cheese
½ cup grated Parmesan or Romano cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
  • Layer half of the potato slices in the bottom of the casserole dish. Dot with half of the butter cut or pinched into small pieces. Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over. Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese. Season again with salt and pepper.
  • Bake for 1/2 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top. This will create a semi-hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork.

1 (19 ounce) can creamy potato with roasted garlic soup
½ cup heavy cream
1 teaspoon dried thyme
1 teaspoon freshly ground black pepper
6 large potatoes, peeled and sliced
2 ½ cups shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a blender combine soup, cream, thyme and pepper; process until smooth. Spread a thin layer of the mixture on the bottom of a 9x13 inch casserole dish. Layer potatoes with cheese, ending with potatoes and reserving 1/2 cup cheese. Pour soup mixture over potatoes and sprinkle with remaining cheese.
  • Bake in preheated oven for 70 minutes.

1 teaspoon butter, softened
1 cup heavy whipping cream
1/3 cup whole milk
1 teaspoon salt
1/2 teaspoon pepper
2 garlic cloves, crushed
6 medium potatoes
1 cup shredded Swiss cheese
1/4 cup shredded Parmesan cheese

Steps:

  • Grease a shallow 13x9-in. baking dish with the butter; set aside. In a small saucepan, combine the cream, milk, salt, pepper and garlic. Cook just until bubbles begin to form around sides of pan. Remove from the heat; cool for 10 minutes. , Peel and thinly slice the potatoes; pat dry with paper towels. Layer half the potatoes in prepared baking dish; top with half the cream mixture and half the cheeses. Repeat layers. , Bake, covered, at 350° for 40 minutes.   • Preheat the oven to 350°F (175˚C).

  • Preheat the oven to 400˚F (200˚C).

3 lb. baking potato es (about 6), peeled, very thinly sliced
1 tub (8 oz.) PHILADELPHIA Chive & Onion Cream Cheese Spread
1 cup milk
1/2 tsp. garlic powder
1/8 tsp. ground black pepper
2/3 cup KRAFT Shredded Parmesan Cheese

Steps:

  • Heat oven to 350ºF.
  • Cook potatoes in boiling water in saucepan 25 min. or just until tender; drain. Cool. Peel and slice potatoes.
  • Whisk cream cheese spread, milk, garlic powder and pepper until blended. Layer half each of the potatoes, cream cheese mixture and Parmesan in shallow 2-qt. casserole sprayed with cooking spray; repeat layers.

They are rich, but oh so good! You can vary the cheeses according to taste and add onions, too. I originally got the recipe from AllRecipes, but I have altered a couple of things that helped the recipe we believe. It is a family favorite!

1 1/2 lbs potatoes, thinly sliced (I use my KitchenAid slicer attachment to make thin. SaladShooter or mandolin works well, too, as lon)
2 tablespoons butter, divided
1 pint heavy cream (or to make it lighter I have made with 2 cups milk and 2 T. cornstarch heated until thicker)
2 garlic cloves, minced
salt and pepper
2 cups cheddar cheese, shredded
4 slices provolone cheese
1/2 cup parmesan cheese or 1/2 cup romano cheese, grated

Steps:

  • Preheat the oven to 350 degrees F (165 degrees C).
  • Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
  • Layer half of the potato slices in the bottom of the casserole dish.
  • Dot with half of the butter cut or pinched into small pieces.

  • Slice the potatoes very thin, about 1/8" thick. Immediately place all potato slices into a large bowl, and cover with 3 cups of water. Separate the potato slices so they aren't sticking to one another. Allow to soak for 10 minutes.
  • Drain the water from the bowl of potatoes. Lay out two or three paper towels, and place each slice onto a dry surface of the paper towel. Dry each slice to remove excess starches and water.
