1 1/2 pounds vine-ripened tomatoes, peeled, seeded and chopped
Tomato juice
1 cup cucumber, peeled, seeded and chopped
1/2 cup chopped red bell pepper
1/2 cup chopped red onion
1 small jalapeno, seeded and minced
1 medium garlic clove, minced
1/4 cup extra-virgin olive oil
1 lime, juiced
2 teaspoons balsamic vinegar
2 teaspoons Worcestershire sauce
1/2 teaspoon toasted, ground cumin
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons fresh basil leaves, chiffonade

Steps:

  • Fill a 6-quart pot halfway full of water, set over high heat and bring to a boil.
  • Make an X with a paring knife on the bottom of the tomatoes. Drop the tomatoes into the boiling water for 15 seconds, remove and transfer to an ice bath and allow to cool until able to handle, approximately 1 minute. Remove and pat dry. Peel, core and seed the tomatoes. When seeding the tomatoes, place the seeds and pulp into a fine mesh strainer set over a bowl in order to catch the juice. Press as much of the juice through as possible and then add enough bottled tomato juice to bring the total to 1 cup.
  • Place the tomatoes and juice into a large mixing bowl. Add the cucumber, bell pepper, red onion, jalapeno, garlic clove, olive oil, lime juice, balsamic vinegar, Worcestershire, cumin, salt and pepper and stir to combine. Transfer 1 1/2 cups of the mixture to a blender and puree for 15 to 20 seconds on high speed. Return the pureed mixture to the bowl and stir to combine. Cover and chill for 2 hours and up to overnight. Serve with chiffonade of basil.

1 cucumber, peeled, seeded and diced
2 red bell peppers, cored, seeded and diced
3 ripe beefsteak tomatoes, diced
1 small red onion, diced
3 garlic cloves, chopped
2 jalapenos, minced
1/4 cup sherry vinegar
3/4 cup extra virgin olive oil
Salt and cayenne pepper to taste
Tomato juice, if necessary
Whipped cream for garnish
Finely chopped mint for garnish

Steps:

  • Mix together cucumber, peppers, tomatoes and onion. Add garlic, jalapenos, vinegar and olive oil. Marinate in the refrigerator for 6 to 8 hours.
  • Place mixture in a blender, puree, then strain. Add salt and pepper and, if mixture is too thick, some chilled tomato juice. Garnish with whipped cream with chopped mint folded in.

4 cups tomato juice
1 onion, minced
1 green bell pepper, minced
1 cucumber, chopped
2 cups chopped tomatoes
2 green onions, chopped
1 clove garlic, minced
3 tablespoons fresh lemon juice

1 teaspoon dried tarragon
1 teaspoon dried basil
¼ cup chopped fresh parsley

Steps:

  • 1. Place all of the diced vegetables in a large bowl. Add the tomato juice, vinegar, oil, and Tabasco. Season with salt and pepper and toss.
  • 2. Transfer half of the mixture to a blender or food processor and pulse the machine on and off to coarsely puree the contents. Return the pureed mixture to the bowl and stir to combine. Refrigerate for 4 to 6 hours before serving. You can easily double this recipe for a large party.

1 small piece stale bread, crust removed, torn (1/4 cup)
5 tablespoons olive oil, divided
1/2 English cucumber, cut into pieces
1 serrano chile, seeded
1 clove garlic
1 to 2 tablespoons sherry vinegar
Salt and pepper
Reserved chicken breasts, shredded

Steps:

  • In batches, in a blender, puree tomatoes, bread, and 4 tablespoons oil. Add cucumber, chile, garlic, and vinegar to taste; blend until smooth. Season with salt and pepper. Transfer to an airtight container and refrigerate at least 4 hours (or up to 2 days).
  • Divide soup among four bowls, top with chicken, drizzle with remaining 1 tablespoon oil, and serve.

3 large very ripe tomatoes, cored, seeded, and cut up
2 medium cucumbers, seeded and cut up
2 medium orange sweet bell pepper, seeded and cut up
1 jalapeno, seeded and cut up
1 garlic clove, minced
1/3 cup lime juice
2 tablespoons honey
2 tablespoons fresh cilantro leaves
1 1/2 teaspoons grated fresh ginger
1/4 teaspoon sea salt
ice cube
lime wedges and green onion
v- 8 juice (optional)

Steps:

  • In a large bowl combine tomatoes, cucumber, orange sweet peppers, jalapeño, and garlic. In a food processor process mixture, half at a time, with several on/off turns until you have large chunks. Place all of the mixture in the food processor bowl. Add lime juice, honey, cilantro, ginger, and 1/4 teaspoon sea salt. Cover and process with several on/off turns until the mixture is just a little chunky. If desired, season to taste with additional sea salt. Can add a small amount of V-8 juice if your soup is too dry.
  • To serve, place 2 to 3 ice cubes in each of four shallow bowls; ladle soup over ice. Serve with lime wedges and green onions.

CITRUS GAZPACHO WITH HONEY-LIME CREAM



Citrus Gazpacho with Honey-Lime Cream image

1 (26-ounce) jar refrigerated citrus salad
1 (16-ounce) jar chunky-style salsa
1 1/2 cups chopped green bell peppers
1 1/2 cups chopped seeded cucumbers
2 cups tomato juice
1 cup chicken broth
1 tablespoon olive oil
1/2 cup chopped fresh cilantro
2 limes
1/2 to 1 cup reduced-fat dairy sour cream
1 tablespoon honey

Steps:

  • Place citrus salad in large nonmetal bowl. With fork, break up fruit into small pieces. Add salsa, bell pepper, cucumber, tomato juice, broth and oil. Reserve2 tablespoons cilantro. Add remaining cilantro to mixture in bowl stir to mix.Grate the peel from 1 lime set aside. Squeeze juice from lime into small bowl. Add to fruit mixture in bowl mix well. Refrigerate at least 2 hours to blend flavors.In small bowl, combine sour cream, honey and grated lime peel mix well. Refrigerate until serving time.To serve, cut remaining lime into thin slices quarter each slice. Ladle gazpacho into individual shallow bowls. Top each serving with sour cream mixture. Sprinkle with reserved cilantro. Garnish with quartered lime slices. 3 slices white bread, crusts removed
3 cloves garlic
2 tablespoons lemon juice
10 medium unpeeled tomatoes, diced (7 1/2 cups)
6 medium green onions, finely chopped (6 tablespoons)
2 medium cucumbers, peeled and diced (2 cups)
2 medium red bell peppers, diced (2 cups)
1 can (46 ounces) spicy eight-vegetable juice
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 cup cubed cooked chicken
Croutons, if desired

Steps:

  • Place bread, garlic and lemon juice in a food processor or blender. Cover and process until bread forms fine crumbs.
  • Place bread crumb mixture in large bowl. Stir in remaining ingredients except chicken and croutons. Place half of the bread crumbs and vegetable mixture (about 7 cups) in food processor or blender. Cover and process until smooth. Repeat in small batches if necesssary.
  • Stir smooth vegetable mixture into vegetable mixture remaining in bowl. Stir in chicken. Cover and refrigerate at least 1 hour until chilled. Serve with croutons.

2 tablespoons olive oil, divided
1/4 seedless watermelon, cut into three 1-1/2-in.-thick slices
1 large beefsteak tomato, halved
1/2 English cucumber, peeled and halved lengthwise
1 jalapeno pepper, seeded and halved lengthwise
1/4 cup plus 2 tablespoons diced red onion, divided
2 tablespoons sherry vinegar
1 tablespoon lime juice
1/2 teaspoon kosher or sea salt
1/4 teaspoon pepper
1 small ripe avocado, peeled, pitted and diced

Steps:

  • Brush 1 tablespoon olive oil over watermelon slices, tomato, cucumber and jalapeno; grill, covered, on a greased grill rack over medium-high direct heat until seared, 5-6 minutes on each side. Remove from heat, reserving one watermelon slice., When cool enough to handle, remove rind from remaining watermelon slices; cut flesh into chunks. Remove skin and seeds from tomato and jalapeno; chop. Coarsely chop cucumber. Combine grilled vegetables; add 1/4 cup onion, vinegar, lime juice and seasonings. Process in batches in a blender until smooth, adding remaining olive oil during final minute. If desired, strain through a fine-mesh strainer; adjust seasonings as needed. Refrigerate, covered, until chilled., To serve, pour gazpacho into bowls or glasses. Top with diced avocado and remaining onion. Cut reserved watermelon slice into wedges. Garnish bowls or glasses with wedges.

(Can be made 1 day ahead. Keep chilled.)
  • Serve cold.
