GRANDMA'S GELATIN FRUIT SALAD
Whenever I invite my big family for dinner, my grandchildren request this favorite fruit salad. My sons have always liked it, too - maybe the taste runs in our family! This salad is also good for potluck gatherings.

- In a large bowl, combine 1 cup water and lemon gelatin. Add 1 cup ice cubes, stirring until melted. Stir in pineapple. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until set but not firm., Repeat with the orange gelatin, remaining water and ice. Stir in marshmallows. Pour over lemon layer; refrigerate until firm. , Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in reserved pineapple juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in butter. Cool to room temperature without stirring. Refrigerate for 1 hour or until chilled., Arrange bananas over gelatin. Stir whipped topping into dressing. Spread over bananas. Sprinkle with cheese.

- In a saucepan, bring the applesauce to a boil; remove from the heat., Stir in gelatin until dissolved. Slowly add ginger ale and pineapple. Pour into a 2-qt. serving bowl. Chill until set. Garnish with apples and mint if desired.

- In a large bowl, dissolve gelatin in boiling water. Stir in the juices, apricots and pineapple. Transfer to a 13x9-in. dish coated with cooking spray. Refrigerate for 30 minutes or until partially set. Sprinkle with marshmallows; refrigerate., For topping, combine sugar and flour in a saucepan. Gradually whisk in juices. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Removed from the heat. Stir a small amount into egg; return all to the pan, stirring constantly. Cook and stir until a thermometer reads 160° and mixture is thickened. Remove from the heat; stir in butter. Cool to room temperature., In a small bowl, beat cream on high speed until stiff peaks form. Gently fold into custard. Spread over gelatin; sprinkle with cheese. Refrigerate 1 hour or until chilled.

MOM'S GELATIN FRUIT SALAD
Steps:
- In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Stir in sugar, orange juice and lemon juice; cook and stir 6-8 minutes or until sugar is dissolved., Transfer to a bowl; refrigerate, covered, until slightly thickened, about 1-1/2 hours. Fold in fruit. Pour into a 6-cup ring mold coated with cooking spray or a 2-qt. serving bowl. Refrigerate until firm. If using a ring mold, unmold onto a serving plate.

FRUIT SALAD
This is a recipe (if you can call it that) that I concocted. The Jello gives it just enough sweetness and a nice red color. I use canned fruit because I always have it on hand, but (of course) you can always use all fresh fruit. Use your imagination and add (or delete) any fruit. The strawberries and bananas tend to soften if left in the mixture to long. Best to add them just before serving. During the summer months I always have some in my frig.

- Drain all canned fruit (save juices- add some to recipe if needed, or desired) Mix all fruit together.
- Sprinkle with Jello (enough to sweeten- not entire package).
- Peel and slice bananas, oranges and kiwi into bite-size pieces.
- Slice strawberries.
- Remove grapes from vine.
- Add oranges, kiwi and grapes to Jello mixture.
- Strawberries and bananas should be added last as they tend to soften.

DRY JELL-O SALAD (JELLO) COTTAGE CHEESE FRUIT SALAD
I could eat the whole bowl by myself! This is a great recipe for those who don't like Jell-O since you use it dry and it gives a totally different texture than traditional Jell-O salads. Hint: if you use orange flavored Jell-O use mandarin oranges instead of pineapple.

FRUIT-NUT GELATIN SALAD
I have made this many times. An old-fashioned molded gelatin salad with the unusual and tasty combination of orange gelatin, pineapple, cream cheese, pimento, celery, walnuts, etc. This particular recipe doesn't call for marshmallows, but you could always add some if you like.

VEGETABLE GELATIN SALAD
A great dish for picnics or pot-lucks--especially in the summer when fresh garden vegetables are so abundant. No dairy products, so there's no risk of spoiling after being out on a buffet table for a long time. Just lots of healthy fresh vegetables and the universal appeal of gelatin, for kids and adults alike. I prefer using lemon Jell-O, but I have used lime a lot as well (which is what I used the last time I made this, and remembered to snap a photo). But I've also seen versions of this salad at various pot-luck gatherings that used clear, unflavored gelatin as well. Lots of choices!

- Place gelatin crystals in a large bowl. Add 2 cups of boiling water, and stir 2 minutes or until gelatin is completely dissolved. Add 2 cups cold water, and stir well. Let cool about 15 minutes, then chill in refrigerator for 1½ hours.
- Remove gelatin from the refrigerator. Add the chopped nuts, chopped radishes, chopped green onion, chopped celery, chopped cucumbers, vinegar, and desired amount of salt (for seasoning). Stir well.
- Return the gelatin salad to the refrigerator to set completely, at least 2 to 4 hours (or overnight is ideal).
- NOTE - Cooking time is primarily the necessary chilling time that it takes for the gelatin to set completely.
- TIP - you can adjust the ingredients if you wish, using your favorite vegatables. And you can even add fruit if you wish. Just DO NOT include fresh pineapple, kiwi, papaya, figs, or guava (as the gelatin will not set).

WHITE GELATIN SALAD WITH FRUIT TOPPING
This is a very versatile salad that can be used in a jello mold, put into a springform pan with a graham cracker crust, served in a 9X13" pan or used to fill individual ramekins. My mother has made this recipe for nearly every holiday dinner at the request (more like demand) of my daughter! The fruit topping is just a canned fruit filling that would typically be used as pie filling. Any flavor will work well. Cooking time is chiilling time to ensure a good set. Enjoy!

- Dissolve gelatin in 1 cup cold water. Set aside.
- Mix sugar into boiling water, stirring until dissolved.
- Add gelatin mixture to sugar water.
- Add sour cream and mix until lumps have disappeared.
- Fold in Cool Whip.
- Pour into mold or dish. (May lightly grease mold with mayo. This will not affect the flavor at the end.).
- Chill overnight.
