GIANT GINGER SNAP COOKIE RECIPE image

This recipe was adapted from a recipe in Better Homes and Gardens magazine (not sure if there is an online version). We reduced the sugar a little as we did not want the cookies to be too sweet after the dusting. If you skipped the dusting, you may add back the deducted 1/2 cup of granulated sugar to the recipe. Enjoy baking them!

4 ½ cups all-purpose flour
5 tsp ground ginger
2 tsp baking soda
1 ½ tsp ground cinnamon
1 tsp ground cloves
¼ tsp salt
1 ½ cups shortening
1 1/2 cups granulated sugar
2 eggs
½ cup molasses
¾ cup coarse sugar
Powdered sugar or confectioners' sugar & choice of the stencil for dusting decoration

Steps:

  • Preheat oven to 350F. In a medium bowl sift together flour, ginger, baking soda, cinnamon, cloves, and salt; set aside.
  • In a large mixing bowl beat shortening with an electric mixer on high speed for 30 seconds. (Picture 3) Gradually add the 2 cups granulated sugar. Beat until combined, scraping sides of the bowl. Beat in eggs and molasses until combined. (Picture 4) Beat in as much of the flour mixture as you can with the mixer. Stir in any remaining flour mixture.
  • Place the ¾ cup coarse sugar in a small bowl. Using ¼ cup of the dough for each cookie (you may use a smaller ice cream scoop to measure), shape dough into balls.
  • Roll balls in coarse sugar to coat. (Picture 7) Place balls about 1 inch apart on a non-greased cookie sheet. Lightly press the dough with your hand to flatten it a little. (Picture 8)
  • Bake for 12 to 14 minutes (5 to 7 minutes for smaller cookie) or until the cookies are lightly browned and puffed. (Do not over bake or cookies will not be chewy.) Cool on cookie sheet for 2 minutes. Transfer cookies to a wire rack to cool completely.
  • Place stencil on the completely cooled giant gingersnap cookies, dust powdered sugar on the cookie. Remove stencil carefully.

2 cups flour
4 teaspoons ground ginger
2 teaspoons baking soda
½ teaspoon ground allspice
¼ teaspoon mustard powder
¼ teaspoon salt
¼ teaspoon black pepper
2 sticks butter, at room temperature
½ cup date, coconut, or brown sugar
½ cup raw cane sugar
⅓ cup date syrup
1 large egg
1 tablespoon raw cane sugar, for sprinkling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange racks in upper and lower thirds of oven. Line 2 baking sheets with parchment paper.
  • Whisk together flour, ginger, baking soda, allspice, mustard powder, salt, and pepper in a bowl. Beat together butter, date sugar, and 1/2 cup raw sugar in a separate bowl with an electric mixer at medium speed until light and fluffy, about 3 minutes. Beat in syrup and egg. Reduce mixer speed to low and gradually beat in flour mixture until a soft dough forms. Turn out dough and wrap in plastic wrap; refrigerate 1 hour.
  • Cut dough into 14 pieces and roll each into a ball between your hands until smooth. Transfer to prepared baking sheets, spacing at least 3 inches apart. Flatten into 2 1/2-inch rounds (about 1/2 inch thick). Sprinkle with remaining tablespoon raw sugar.
  • Bake, switching positions of sheets halfway through baking, until set, 12 to 15 minutes. Let cool 1 minute on baking sheets, then transfer to a wire rack to cool completely, about 20 minutes.

1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F. and grease cookie sheets. Cream the butter with the brown sugar until light and fluffy. Add the molasses and egg and beat until smooth. Sift the flour with baking soda, ginger, cinnamon and cloves. Add the flour mixture to the butter mixture and beat until well blended. Pinch off a little of the dough and roll it into 1-inch balls (dough may be very moist, if so, dip hands in warm water before forming balls). Dip each ball into the granulated sugar and arrange sugar side up on prepared baking sheet approximately 2 inches apart. Bake for 10 to 12 minutes or until cracked on top.

In 1998, I was invited by Pat Adrian, director of the Good Cook division of the Book of the Month Club, to judge the group's annual office baking contest. There were luscious cakes, pies and cookies of all types, but these gingersnaps were the hands-down winners. Julie Ellis-Clayton, the winner of the contest, was kind enough to share her recipe with me.

2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon ground cloves
12 tablespoons (1 1/2 sticks) unsalted butter
1 cup sugar
1 large egg
1/4 cup molasses
1/2 cup sugar in a shallow bowl, for finishing

Steps:

  • Set racks in the upper and lower thirds of the oven and preheat to 350 degrees. Combine the flour, baking soda, salt, and spices in a bowl; stir well to mix. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together on medium speed the butter and sugar for about 5 minutes until very light, fluffy and whitened. Add the egg and continue beating until smooth. Lower speed and beat in half the dry ingredients, then the molasses. Stop the mixer and scrape down bowl and beater. Beat in the remaining dry ingredients. Remove bowl from mixer and use a large rubber spatula to finish mixing the dough. Use a small ice cream scoop to scoop out 1-inch diameter pieces of dough. Roll into balls between the palms of your the hands, then roll in the sugar. Place the balls of dough on the prepared pans leaving about 3 inches all around each, to allow for spreading. Bake the cookies for about 15 to 20 minutes, or until they have spread, the surface has crackled, and they are firm to the touch. Slide the papers from the pans to racks. Store the cooled cookies between sheets of parchment or waxed paper in a tin or platic container witha tight-fitting cover.

¾ cup margarine
1 cup white sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
1 tablespoon ground ginger
1 teaspoon ground cinnamon

½ cup white sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the margarine and 1 cup white sugar until smooth. Beat in the egg and molasses until well blended. Combine the flour, ginger, cinnamon, baking soda and salt; stir into the molasses mixture to form a dough. Roll dough into 1 inch balls and roll the balls in the remaining sugar.   • With an electric mixer, cream butter, brown sugar, and 1/2 cup granulated sugar until light and fluffy. Beat in molasses and egg. With mixer on low, gradually beat in flour mixture until just combined. Flatten into a disk, wrap in plastic, and freeze for 20 minutes.
