MINESTRONE WITH GIANT WHITE BEANS AND WINTER SQUASH



Minestrone With Giant White Beans and Winter Squash image

The inspiration for this minestrone was a bag of Rancho Gordo Royal Corona beans that I have had in my pantry for a while. Royal Coronas are large white European runner beans that are similar to Greek gigandes but bigger, richer and sturdier. They are about twice the size of a lima bean and, unlike many other large white beans, the skin doesn't slip off when you soak them. If you substitute limas I would not soak the beans, but if you use the Royal Coronas, do soak them to shorten the cooking time. The beans are downright meaty and the soup is a hearty one. I didn't even feel the need to add pasta or rice to this substantial minestrone.

6 ounces (1 cup) giant white beans such as Royal Coronas, gigandes (giant white beans), or large dried limas, washed, picked over and soaked for 4 hours or longer (no need to soak limas or large white beans)
1/2 medium onion
1 bay leaf
2 quarts water
Salt to taste
2 garlic cloves, peeled and crushed
2 tablespoons extra virgin olive oil
1 medium onion, chopped
1 large or 2 medium carrots, peeled and diced (1/2 inch dice or smaller if desired)
1 celery stalk, diced
2 tablespoons chopped fresh parsley
1 or 2 leeks, white and light green parts only, halved, cleaned well and sliced thin
3 or 4 garlic cloves (to taste), minced
1 14-ounce can chopped tomatoes, with juice
A bouquet garni made with a Parmesan rind, a bay leaf and a couple of sprigs each parsley and thyme, tied into one of the leek leaves if desired
Salt and freshly ground pepper
1 pound winter squash, diced
Lots of chopped flat leaf parsley or basil (or both)
Freshly grated Parmesan for serving

Steps:

  • First simmer beans. Drain soaked beans and place in a large saucepan with 2 quarts water, halved onion, crushed garlic and bay leaf. Bring to a gentle boil, reduce heat and simmer 45 minutes. Add salt to taste (I usually use 1 teaspoon salt per quart of water) and continue to simmer another 30 minutes. Beans should be almost tender. Remove from heat and use tongs to remove and discard onion half, garlic cloves and bay leaf.
  • While beans are simmering you can make tomato base. Heat olive oil over medium heat in a heavy soup pot or Dutch oven, and add onion, carrot and celery. Add a pinch of salt and cook, stirring, until vegetables are just about tender, about 5 minutes, and add parsley and leeks. Cook, stirring, until leeks are slightly wilted, about 3 minutes, and stir in garlic along with another generous pinch of salt. Cook, stirring, just until the garlic smells fragrant, 30 seconds to a minute, and stir in tomatoes with their juice and salt to taste. Bring to a simmer and cook, stirring often, for about 10 minutes, until tomatoes have cooked down somewhat and smell fragrant. Remove from heat until beans are ready.
  • Add beans and their broth to tomato base, stir together, add bouquet garni and bring to a simmer. Cover and simmer over low heat for 30 minutes. Add winter squash and continue to simmer for another 30 to 45 minutes, until squash and beans are very tender. Taste, adjust salt, and add freshly ground pepper to taste.
  • Just before serving heat through and stir in a generous handful of chopped fresh parsley or basil, or a mix of the two. Serve, topping each bowl with freshly grated Parmesan.

I love the fact that beans, lentils and greens symbolize prosperity in the New Year in places as disparate as the American South and the South of France. I wonder if it's really because lentils and beans are round like coins and swell when they cook, or if it's because that's about all anybody can afford to eat after the excesses of the holiday season. The notion of thrift wouldn't apply to some of the other foods that symbolize good luck or prosperity in certain cultures - fish, for instance, or saffron. I've taken traditions from different places this week and thrown some of them together, focusing mainly on lentils, beans, greens and fish. These are simple dishes that I hope will help you to begin 2012 on a happy, healthy note. Look for more New Year's dishes in the Recipes for Health index. Baking in a slow oven is the best way to cook large lima beans, which can fall apart easily if boiled too hard. This dish is luxuriously creamy (though there's no cream in it) and comforting.

2 tablespoons extra virgin olive oil
1 medium onion, chopped
4 garlic cloves, minced
1 pound (about 2 1/2 cups) dried giant lima beans, rinsed
2 quarts plus 1 cup water
A bouquet garni made with a bay leaf, a Parmesan rind and a sprig each of sage, thyme and parsley
1 pound winter squash, peeled and cut in small dice
Salt to taste
Freshly ground pepper
2 tablespoons slivered fresh sage leaves
Freshly grated Parmesan for serving (optional)

Steps:

  • Preheat the oven to 325 degrees. Heat the olive oil over medium heat in a large, heavy ovenproof casserole or Dutch oven and add the onion. Cook, stirring often, until it is tender, about 5 minutes. Stir in half the garlic and cook, stirring, until it is fragrant, 30 seconds to a minute. Add the beans, water and bouquet garni and bring to a simmer. Cover and place in the oven for 45 minutes.
  • Remove the casserole from the oven and stir in the remaining garlic, the winter squash, and salt to taste. If the mixture seems dry, add a little more water. Return to the oven and bake an hour longer, or until the beans and squash are very tender. Remove from the heat and remove the bouquet garni. Adjust salt, add pepper to taste and stir in the slivered sage.

1 pound gigantes (or big lima beans), soaked for 12 hours, drained
1/4 cup Greek olive oil
1 large Spanish onion, finely chopped
3 cloves garlic, minced
1 (15-ounce) can chopped plum tomatoes plus their liquid
2 cups water
2 tablespoons honey
1/4 teaspoon ground cloves
Salt and freshly ground black pepper
3 tablespoons chopped fresh parsley leaves

Steps:

  • Add the beans to a pot with enough cold water to cover well. Bring to a boil, lower the heat, cover, and simmer until just soft throughout but not quite cooked, approximately 50 to 80 minutes, depending on the beans. Drain and set aside.
  • Preheat the oven to 325 degrees F.
  • Heat olive oil over medium heat in a Dutch oven. Add onion and cook until soft. Add the garlic and cook for 30 seconds. Add tomatoes and their liquid, 2 cups water, honey, cloves, salt, and pepper and boil gently for 20 to 30 minutes or until it begins to thicken. Stir in the parsley and remove from heat.
  • Place the beans in an oven-proof dish, pour tomato mixture on top, stir and spread mixture out evenly. Bake 1 1/2 to 2 hours, or until beans are soft. (Check the dish during cooking and if needed, add a small amount of boiling water.) The dish will look crispy on top. Remove from the oven and let sit for 10 minutes before serving. Serve hot or at room temperature.

1 (3 1/2) pound butternut, acorn or kabocha squash
½ cup raisins
½ cup chopped pecans, toasted
¼ cup roughly chopped parsley
2 teaspoons chopped fresh sage
Zest of 1 orange, removed in wide strips and roughly chopped
1 (16 ounce) package silken tofu, drained
½ cup fine sea salt

Steps:

  • Preheat the oven to 400 degrees F. Arrange whole squash on a baking sheet and roast until the skin is papery and a fork inserted in 2 or 3 different spots reveals very tender flesh, about 1 1/4 hours. Set aside until cool enough to handle. Peel away the skin, and discard the seeds.
  • Meanwhile, pulse raisins, pecans, parsley, sage and orange zest in a food processor until finely chopped and transfer to a bowl; wipe out food processor.
  • In the clean food processor, puree warm squash and tofu until very smooth and creamy. (Reheat, if needed, in a medium pot over medium heat.) Transfer to a large bowl or platter, scatter raisin-sage mixture over the top and serve.

This is a family recipe. In Greek, it's called 'Gigantes' which translates as 'Giants.' Try to find the largest dried lima beans possible. My aunt adds small canned sausages, but I prefer this meatless. Serve with feta cheese and a crusty bread. You can also substitute 2 teaspoons parsley for the dill if you prefer.

2 (16 ounce) cans chopped tomatoes with juice
1 cup olive oil

  • Place the lima beans in a large saucepan. Pour enough water to fill to 2 inches above top of the beans. Allow to soak overnight.

1 cup gigante beans
2 bay leaves
2 cloves garlic
Pinch red chile flakes
Salt
1/2 large butternut squash, peeled, seeded and diced
Olive oil, for drizzling
Freshly ground black pepper
2 ribs celery, roughly chopped
1 large carrot, peeled and roughly chopped
1 sweet onion, roughly chopped
1 cup cherry tomatoes
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon smoked paprika
3 limes, juiced
2 tablespoons chopped papalo or cilantro
Squash blossoms, for garnish, optional

Steps:

  • Place the gigante beans in a saucepan and cover with water. Soak overnight.
  • The next day, add to the beans the bay leaves, garlic, red chile flakes and some salt. Put the saucepan over medium-high heat and cook for 1 hour, then drain and remove the bay leaves.
  • Preheat the oven to 350 degrees F.
  • Place two-thirds of the cubed butternut squash on a baking sheet. Drizzle with oil, salt and pepper, and put into the oven. Roast until caramelized, about 30 minutes.
  • To a food processor, add the celery, carrots, onions and remaining butternut squash. Process until the vegetables are uniform in shape.
  • Put a saute pan over medium-high heat and add oil to coat. Once heated, add the processed sofrito and season with salt and pepper. Saute until caramelized, 30 minutes, adding more oil if necessary.
  • To the saucepan of beans, add the roasted squash, sofrito, tomatoes, cinnamon, coriander, cumin, paprika, lime juice and papalo. Stir to combine and taste. Season if necessary.
  • Serve garnished with squash blossoms, if desired and if they are available!

  • Stir and cook until the feta begins to soften.
