3 tablespoons reduced-sodium soy sauce, divided
1 tablespoon sherry
1/4 teaspoon minced fresh gingerroot or dash ground ginger
1/2 pound beef flank steak, cut into thin strips
1 teaspoon cornstarch
1/2 cup beef broth
1-1/2 teaspoons hoisin sauce
1/8 teaspoon sugar
2 tablespoons canola oil, divided
2 pounds fresh asparagus, cut into 1-inch lengths
1 garlic clove, minced
3 cups hot cooked rice

Steps:

  • In a large resealable plastic bag, combine 2 tablespoons soy sauce, sherry and ginger; add beef. Seal bag and turn to coat; refrigerate 30 minutes., In a small bowl, combine cornstarch, broth, hoisin sauce, sugar and remaining soy sauce until smooth; set aside., In a large skillet or wok, stir-fry beef in 1 tablespoon oil until no longer pink. Remove and set aside. Stir-fry asparagus in remaining oil until crisp-tender. Add garlic; cook 1 minute longer., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir 2 minutes or until thickened. Return beef to the pan; heat through. Serve with rice.

  • Cut 1 bunch asparagus into thirds. Heat 2 teaspoons sesame oil in a skillet over medium heat. Cut a 1-inch piece ginger into matchsticks, add to the skillet and cook, stirring, 1 minute. Add 3 cups quartered shiitake mushroom caps and 1 sliced garlic clove and cook, stirring, 2 minutes. Add the asparagus and 1/3 cup water; bring to a boil, cover and cook until crisp-tender, 3 minutes. Add 1 tablespoon each soy sauce and butter; cook, stirring, 1 minute. Season with salt and pepper.

1 pound boneless skinless chicken breasts (about 2 breasts)
2 cloves garlic, minced
1 (2-inch) piece peeled fresh ginger, cut into thin matchsticks
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon cornstarch plus 1 teaspoon
1 1/4 teaspoons kosher salt
1 tablespoon dry sherry
3/4 cup chicken broth, low-sodium canned, or homemade or water
2 tablespoons vegetable oil
2 bunches medium asparagus (about 2 pounds), woody stems trimmed, sliced into 1-inch pieces
1 bunch scallions (white and green parts), thinly sliced
Serving suggestion: Brown or white rice

Steps:

  • Freeze the chicken breasts for 20 to 30 minutes and then thinly slice the chicken against the grain into strips. Toss the strips with about half the garlic and ginger, the soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, and the sherry in a bowl. Marinate at room temperature for 15 minutes. Mix the remaining cornstarch with the broth.
  • Heat 1 tablespoon of the oil a large nonstick skillet over high heat. Add the asparagus, scallions, remaining garlic, ginger, 1/4 cup of water, and season with 1/4 teaspoon salt. Stir-fry until the asparagus is bright green but still crisp, about 3 minutes. Transfer to a bowl.
  • Heat the same skillet until very hot, then add remaining 1 tablespoon oil. Add the chicken and stir-fry until it loses its raw color and gets a little brown, about 3 minutes. Return the asparagus to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a full boil to thicken. Mound the stir-fry on a serving platter or divide among 4 plates; serve with rice.

1 teaspoon grated lime zest

Steps:

  • Pour about 1 inch of water into the bottom half of a steamer pan set, and place over medium heat. Place the asparagus in the top half of the steamer pan set; steam until tender, 4 to 5 minutes. Remove the asparagus and arrange on a serving platter.
  • Whisk the lime juice, lime zest, cilantro, ginger, and sugar together in a bowl; stream the vegetable oil into the mixture while whisking. Season with salt and pepper. Drizzle over the asparagus.

1 1/2 pounds pencil-thin asparagus (or substitute small or medium asparagus, split lengthwise)
1 tablespoon vegetable oil
Salt and pepper
3 garlic cloves, minced
1 tablespoon grated ginger
1 serrano or other fresh hot chile, finely chopped
A large handful of basil, mint and cilantro leaves

Steps:

  • Snap off and discard the tough bottoms of each asparagus spear. Cut the asparagus into 2-inch lengths
  • In a wok or cast-iron skillet, heat the oil until nearly smoking. Add the asparagus, season generously with salt and pepper and stir well, making sure the asparagus is coated and glistening with oil. Continue to stir-fry over high heat for about 1 minute, until the asparagus looks bright green and barely cooked. Add the garlic, ginger and chile and stir-fry for 30 seconds more.
  • Transfer to a serving platter and scatter leaves on top. Serve immediately.

Although the original recipe calls for asparagus, I have used fresh green beans (cut into 1-inch pieces) in place of the asparagus. The amounts for this recipe serves really only about 3 people, however all ingredients can easily be doubled to serve more. This is delicious!

2 teaspoons cornstarch
1/3 cup chicken broth
2 tablespoons oil
2 cups sliced mushrooms (fresh or canned)
2 cups asparagus, sliced into 1-inch pieces
4 green onions, sliced diagonally
toasted sesame seeds

Steps:

  • In a small bowl, combine the lemon juice, soy sauce, fresh ginger and garlic; mix/whisk to combine.
  • Toss the chicken pieces well with about 3 tablespoons of the lemon/soy mixture; reserve the remaining mixture.
  • Dissolve/whisk the cornstarch in chicken broth.
  • Heat the oil in a wok or frying pan until hot.
  • Add in mushrooms and chicken; stir over high heat until chicken looses the pink colour.
  • Add in asparagus and green onions, continue to stir over high heat until veggies at crisp-tender.
  • Add/stir in broth/cornstarch mixture and reserved soy sauce mixture until thickened.

1 C fresh snow peas
½ small onion (diced into small chunks or slices)

2 handfuls Pad Thai rice noodles
juice of a lemon
1/2 tsp honey
1 tbsp garlic chili sauce (eyeballed)
2 tbsp soy sauce (eyeballed)
½ tsp red pepper flakes (eyeballed)

2 tbsp vegetable or wok oil

Steps:

  • 1. In a small bowl, combine the honey, lemon juice, garlic chili sauce, soy sauce, red pepper flakes and ground ginger. Whisk or mix together well. Set in pork and coat completely. Set bowl in refrigerator to marinate.Begin presoaking noodles in warm water.Begin chopping vegetables. 2.After 45 minutes, preheat a wok with the oil over medium high heat until very hot. Add onion and ginger root and stir-fry 2-3 minutes or until very aromatic. Add pork with marinade and stir-fry for 2 minutes. 3. Add water chestnuts,white asparagus and noodles and stir-fry 2 minutes. Add broccoli and green onion and stir-fry one to two mintues. Serve in wok on a trivet or in a nice serving platter.

1/2 lb rice stick noodles
1/3 cup soy sauce
3 tablespoons rice wine vinegar
1 1/2 tablespoons toasted sesame oil
1 1/2 teaspoons dark brown sugar

1 lb extra firm tofu, drained, pressed dry and cubed
1 lb asparagus, trimmed and cut into 1 1/2 inch pieces
1/2 lb button mushroom, cut in half
1/2 onion, sliced in 1 inch pieces
3 tablespoons fresh ginger, cut into 1 inch matchsticks
1 red pepper, cut into 1 1/2 inch strips
2 garlic cloves, minced
1/4 cup dry sherry
toasted sesame seeds (to garnish, black or white)

Steps:

  • Combine the soy sauce, rice wine vinegar, sesame oil and brown sugar in a mixing bowl, stir well and set aside.
  • Cook the noodles in boiling water, drain, put them in a bowl of cold water to stop them from over-cooking and set aside.
  • Heat 1 Tablespoon of canola oil in a large wok or skilletover medium-high heat. Add tofu and stir-fry until golden brown, about 6 minutes.
  • Remove the tofu from the wok and set aside.
  • Heat remaining 1/2 tablespoon of canola oil in the wok. Add Asparagus, mushrooms, onion, ginger and red pepper. Stir-fry until tender, about 5 minutes.
  • Add garlic and stir-fry only 30 seconds, so it becomes fragrant not bitter.
  • Add the Sherry.
  • Add the noodles, tofu and soy sauce mixture, toss well and heat through.
  • Serve garnished with sesame seeds.

Steps:

  • In a steamer set over boiling water, steam asparagus, covered, until just crisp-tender, about 1 to 2 minutes. Transfer asparagus to a colander and rinse under cold water to stop cooking. Drain asparagus well.
  • In a 1-cup measure, stir together cornstarch and water until dissolved and stir in soy sauce, Sherry or Scotch, sugar, salt and sesame oil.
  • Heat a wok or large heavy skillet over high heat until hot and add vegetable oil. Heat vegetable oil until hot but not smoking and stir-fry ginger root and garlic 30 seconds. Add asparagus and stir-fry 30 seconds. Stir cornstarch mixture and add to asparagus. Bring liquid to a boil, stirring, and stir-fry mixture until asparagus is well coated. Add scallions, the remaining black pepper sauce and the tofu, and cook, stirring, until vegetables are evenly coated in the sauce. Stir in cilantro, and season to taste with salt and pepper.
  • Divide tofu and vegetables among plates and spoon over any remaining pan sauce. Serve with rice.
