3 Tbsp. soy sauce
4 tsp. cornstarch
1 Tbsp. hoisin sauce
2-3 tsp. chili garlic sauce (such as Lee Kum Kee)
1 (14 oz.) can chicken broth
2 tsp. dark sesame oil, divided
1/4 cup finely chopped green onions
2 Tbsp. minced peeled fresh ginger
3 garlic cloves, minced
1 lb. boneless sirloin steak, cut into 1/4 in. strips
5 cups (2 in.) cut green beans (about 1 1/4 lbs.)
1 cup red bell pepper strips
3/4 cup (2 in.) slices green onion tops
2 cups hot cooked white rice

Steps:

  • Combine first 5 ingredients in a bowl, stirring well with a whisk. Set aside. Heat 1 tsp. oil in a large nonstick skillet over medium-high heat. Add 1/4 cup chopped green onions, ginger, and garlic to pan; saute 30 seconds. Add beef to pan, and saute for 4 minutes or until browned. Remove from pan. Wipe pan dry with a paper towel. Add remaining 1 tsp. oil to pan; heat over medium-high heat. Add beans and pepper to pan. Cover and cook 3 minutes. Uncover and cook 3 minutes, stirring frequently. Add 3/4 cup green onion tops; saute 1 minute. Return beef mixture to pan. Stir in broth mixture; bring to a boil. Cook 1 minute, stirring constantly. Remove from heat. Serve with rice.

1 lb. skirt steak, trimmed, sliced against the grain into 1/4"-thick strips, patted dry
1 tsp. sugar
1 tsp. toasted sesame oil
1 tsp. plus 1 Tbsp. soy sauce
1 tsp. kosher salt, plus more
1 Tbsp. vegetable oil
1 medium sweet onion, sliced into 1/2"-thick rounds
1 (3") piece ginger, peeled, very thinly sliced
Freshly ground black pepper
3 Tbsp. unsalted butter, cut into pieces
1 Tbsp. fresh lemon juice
Cooked rice (for serving)

Steps:

  • Toss steak in a medium bowl with sugar, sesame oil, 1 tsp. soy sauce, and 1 tsp. salt to coat and let sit 20 minutes.
  • Place a large skillet over high heat. Pour in vegetable oil and swirl to coat bottom of pan. The oil should be shimmering and you should see some wisps of smoke-if it's not hot enough, the meat will steam instead of getting deeply browned.
  • Add steak to skillet in an even layer (it's okay to crowd it a bit) and cook, undisturbed, until brown around the edges, about 2 minutes. Turn steak over and add onion, ginger, lots of pepper, and 1/3 cup water. Cook, tossing often, until onion is just tender and ginger is softened, about 2 minutes.
  • Remove skillet from heat and add butter, lemon juice, and remaining 1 Tbsp. soy sauce. Toss until butter is melted and coats steak. Taste and season with more salt if needed.
  • Divide rice among bowls and top with beef stir-fry.

1 teaspoon garlic

12 ounces tri-tip steak
3/8 teaspoon salt
1/4 teaspoon black pepper
1 1/2 teaspoons soy sauce
1 teaspoon rice wine vinegar or 1 teaspoon white wine vinegar
2 cups green beans
2 teaspoons sesame seeds (optional)
2 cups rice (quick)

Steps:

  • Clean and trim green beans.
  • Heat 1 teaspoons olive oil in a large sauté pan over medium heat. Add green beans and season with 1/8 teaspoons salt and 1/8 tsp pepper. Cook 4 minutes until green beans begin to soften and brown, stirring occasionally. Remove green beans from pan and set aside.
  • Cut tri-tip into 1/4 inch strips. Cut against the grain for a more tender cut. Toss beef with garlic, ginger and remaining salt and pepper.
