GINGER ALE - HONEY MUSTARD GLAZED HAM
The glaze on this recipe is sweet, tangy and delicious! This would be perfect for your holiday ham... it will be a big hit with guests!

Steps:
- 1. Preheat oven at 350 degrees.
- 2. I slow cooked an 8 1/2 lb ham in a shallow roasting pan for about 2 1/2 to 3 hours. I added just a cup of ginger ale to the shallow pan and tented the ham with foil.
- 3. Prepare glaze: 30 minutes before ham is done cooking, make your glaze in a separate bowl, 3/4 cup of prepared mustard (French's, dijon... whatever your taste), 1/2 cup of honey and a 1/2 cup of light brown sugar.
- 4. Take ham out of the oven and score the top and smother with glaze. Put back in the oven for at least 10 minutes and add more glaze if desired. Or, what I did was spoon the ginger ale juices back over the glazed ham. Let cook for another 10 minutes and should be ready to serve.
- 5. As it shows in the picture, I made a side of garlic sour cream mashed potatoes and peas simmered in the ginger ale juice from the ham.

- For the ham: Preheat the oven to 325 ̊ Fahrenheit. Score the surface of the ham with a sharp knife in a diamond pattern, about 1/4 inch deep. Stick the cloves in between the diamonds.
- Place the ham on a rack in a large roasting pan, tent it with foil and bake until warmed through, about 2 hours.
- For the glaze: Mix the mustard, honey and pepper in a medium bowl.
- Remove the ham from the oven and uncover. Brush with half of the glaze, making sure to get it in the scored lines. Return to the oven, uncovered, and hake until the ham looks glossy, about 20 minutes. Brush with the remaining glaze and bake until just beginning to caramelize, about 20 more minutes.
- Remove the ham from the oven and let rest 15 to 20 minutes.

- Put the gammon in a deep saucepan (if tied, leave it as is). Pour over the ginger beer and add the onion, clementine halves, 5 cloves and 3 bay leaves. Top up the saucepan with enough water to just cover the gammon. Bring to a gentle bubble, cover with foil and cook for 2 hrs, topping up with more water while cooking if you need to.
- Remove the ham from its cooking liquid using large tongs and leave to cool for 10 mins until cool enough to handle.
- Heat oven to 200C/180C fan/gas 6. Carefully cut off the rind, leaving a thin layer of fat on the ham. Score a diamond pattern all over the fat. Put the gammon in a roasting tin. Mix the mustard and ginger syrup, then paint about half of the mixture over the ham. Stuff the stem ginger slices into the crevices of the scored fat and stud with the remaining cloves.
- Bake for 20 mins, then paint with the remaining glaze. Bake for 1 hr more until burnished and bronzed. Cover with foil during cooking if the glaze starts to catch. Cut some clementines into thick slices and roast them while you glaze the ham, then use to decorate the plate, if you like. Serve the ham warm or cold. Will keep in the fridge for five days.

GINGER HONEY-MUSTARD GLAZED HAM

- Preheat oven to 300 degrees F. Discard plastic disk covering the ham bone. Wrap ham in a sheet of 18-inch-wide heavy-duty foil. Place ham in large roasting pan, cut side down.
- Bake 1 3⁄4 hours. Remove ham from oven and unwrap foil to expose surface of ham.
- In a small bowl, mix marmalade, brown sugar, honey mustard, cloves, pepper, and vinegar; brush over ham. Put ham back in oven; bake 45 minutes to 1 hour, or until internal temperature between slices registers 130°F on an instant-read thermometer. Let ham rest 15 minutes before serving.
- Transfer ham to serving platter. Garnish platter with champagne grapes, pears, and sage, if desired.Nutritional information is based on a 3-ounce serving.

- Preheat the oven to 325 degrees F.
- Place the ham in a small roasting pan, cut-side down, and pour 1/2 cup water into the bottom of the pan. Cover the pan tightly with foil. Bake until the ham is heated through, about 1 1/2 hours.
- Meanwhile, combine the honey, brown sugar, butter, Dijon mustard, whole-grain mustard and thyme in a small saucepan. Cook over medium-low heat until the sugar has dissolved, about 2 minutes.
- Increase the oven temperature to 375 degrees F. While the ham is still hot, remove the foil and carefully pour off the water from the roasting pan; it is fine if a little water remains. Brush about half of the glaze over the ham. Return to the oven, uncovered, for 5 minutes, until the ham is golden brown and beginning to glaze. Brush with the remaining glaze and bake for another 7 to 10 minutes, until the ham is well-browned and glazy; be careful not to let the glaze burn. Serve warm.

- Remove ham from refrigerator 1 hour before cooking to bring to room temperature.
- Put ham in a roasting pan and place on a rack.
- Using a knife, score fat on top in a diamond pattern.
- Mix remaining ingredients in a bowl.
