SEARED SALMON WITH PONZU AND BABY BOK CHOY

Steps:
- Whisk all of the ponzu sauce ingredients in a small bowl and set aside.
- Pour 1-inch or more of water in a wok or skillet and bring to a boil over medium-high heat. Put the bok choy in a bamboo or collapsible steamer and cover. Set the steamer over the water, cover, and cook until just tender, about 3 minutes for baby bok choy, 4 minutes for medium bok choy.
- Meanwhile, heat a large nonstick skillet over high heat. Season the salmon with the salt and pepper, lay the fish rounded side down in the pan and cook until golden and crisp on 1 side, about 2 minutes. Reduce the heat to medium, turn and cook the fish on the remaining side to the desired degree of doneness, about 6 to 7 minutes for medium-rare, 8 to 9 minutes for medium, and 11 to 12 minutes for fish cooked through.
- Divide the salmon and bok choy among 4 plates and serve each drizzled with 2 to 3 tablespoons of the ponzu. Pass extra sauce at the table. Store leftover ponzu in airtight container in refrigerator for 1 week.

Steps:
- Rub salmon with about 1 tablespoon brown sugar. Lightly sprinkle with lemon pepper and garlic powder; rub seasoning into fish.
- Into a small saucepan set over medium heat, pour soy sauce and olive oil. Stir in ginger and remaining brown sugar, lemon pepper, and garlic powder. Bring to a gentle simmer, stirring constantly until sugar has dissolved. Remove from heat, stir in orange juice.
- Place fish and marinade into a resealable plastic bag, seal, and refrigerate overnight, or for at least 3 hours.
- Preheat broiler. Place fish in a foil-lined baking pan. Reserve marinade.
- Broil fish skin-side up, 2 minutes. Remove from oven, pull skin off with tongs. Baste with marinade, return to oven, and broil 2 minutes more. Turn fish, and broil until fish flakes easily, about 4 minutes. Remove from oven, and let sit 5 minutes before serving.

This is out of this months Woman's Day magazine. Dated 9/16/08 "OK" next months:) This looked so good and healthy I had to save it. If you try it I hope it is enjoyed. On my list to make. It does say that if you or the family don't care for Salmon you can use any firm white fish such as grouper, sea bass or mahi-mahi. This is great served with rice.

Steps:
- Heat broiler.
- Heat oil in a a large, deep oven proof nonstick skillet.
- Add 1 tbls ginger and the garlic; cook over low heat a few seconds until fragrant.
- Add bok choy, mushrooms and carrots.
- Stir-fry 4 to 6 minutes, until bok choy and carrots are crisp-tender.
- Remove to a serving bowl; cover to keep warm.
- Place salmon skin side down in skillet,
- In a small cup, mix remaining 1 tbls ginger, the soy sauce and marmalade.
- Spoon about half of soy sauce mixture over salmon.
- Broil 4 to 6 minutes until salmon is just cooked through.
- Drizzle with remaining soy sauce mixture and serve with the vegetables.
- Top with sesame seeds, if desired.

- Preheat the Oven and Prepare the Baking Sheet; Set the oven to 375°F/ 190°C and adjust the rack to the top. While the oven preheats, line the sheet pan with tin foil and lightly coat with olive oil.
- Prepare the Marinade; Measure and combine ingredients into a bowl and set aside.
- Make the Sauce; Mix 2 tablespoons of the marinade with the cilantro and mix. Set aside.
- Season the Vegetables; Toss the vegetables with olive oil, kosher salt and some of the marinade.
- Prepare the Salmon; Trim the ends and and the fatty belly from the salmon, then place the salmon skin side down in the middle of the baking sheet. Pat dry with paper towel and season with kosher salt and pepper. Drizzle the remaining marinade over the salmon.
- Arrange the Vegetables Around the Salmon; Evenly distribute the seasoned bok choy and peppers around the empty spaces.
- Bake the Salmon; Place the salmon in the preheated oven and bake for 12 minutes. Without removing the salmon, set the oven to broil (500°F/ 260°C) and broil the salmon until slightly charred or until you've reached your desired doneness.
- Remove the Salmon
- Serve Immediately; Pour the reserved sauce over the salmon and serve immediately.
GRILLED SALMON AND BABY BOK CHOY WITH GINGER AND GARLIC
Steps:
- Prepare a gas or charcoal grill to moderately high heat.
- Trim 1/8 inch from the bottom of each bok choy, then cut into quarters. Wash the bok choy in several changes of cold water and dry in a colander or salad spinner.
- In a small bowl, whisk together the sesame oil, sake, soy sauce, garlic, and ginger.
- On a large baking sheet, arrange 2 (12 by 24-inch) pieces of heavy-duty foil, overlapping them in the center to form a cross. Brush the entire surface of the salmon with the sesame oil mixture, then sprinkle with salt and pepper and place skin side down in the center of the foil. Arrange the bok choy on top of the salmon, then fold the foil into a packet, sealing in the salmon and bok choy.
- Transfer the foil packet to the grill and cook until the salmon is just opaque in center, about 15 minutes. Transfer to a cutting board, open the foil slightly, and let stand 10 minutes.
- Remove the salmon and bok choy from the foil and cut the salmon into 8 servings. Divide the bok choy among 8 plates and top each with a piece of salmon. Garnish plates with lime wedges and serve immediately.

- Heat sesame oil in a skillet over medium heat; stir in garlic. Cook and stir until fragrant, about 1 minute. Transfer to a large glass or ceramic bowl.
- Add soy sauce, rice wine, rice vinegar, ginger, and wasabi paste to the garlic-sesame oil mixture; whisk to combine. Add salmon fillets and turn to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 20 minutes.

- Whisk together soy sauce, honey and lemon juice until honey dissolves. Add ginger and garlic, then remove 1/4 cup of mixture to another bowl. Place salmon fillets, skin side up, in marinade. Let stand at room temperature for 10-30 minutes.
- Preheat broiler (or grill) to high. Meanwhile, heat 1/4 c water in medium skillet over high heat until boiling. Add bok choy and cover tightly; steam until almost tender, about 4 minutes, then add reserved marinade. Toss to combine, then cook another 2 minutes to reduce marinade to a glaze. Set aside.
- Place salmon on broiler tray, skin-side down. Place tray under broiler and cook, without turning, until glaze is deeply caramelized and fish is just cooked through, 7-10 minutes.

- In a large zip-top bag, combine soy sauce, ginger, lemon juice, and 1 tablespoon oil. Add pork and shake to coat. Refrigerate 1 hour (or overnight).

- In a small bowl, combine the cooking wine with 1 tablespoon of the soy sauce and 1 teaspoon of the sugar. Put the salmon on a heatproof plate that will fit snugly into a steamer or deep skillet with a tight-fitting lid. Pour the soy mixture on top, turn to coat and let stand for 30 minutes.
- In a small bowl, combine the chicken broth with the rice vinegar, grated ginger, garlic, 1/2 teaspoon of the sesame oil and half of the scallions. Add the remaining 1 tablespoon plus 1 teaspoon of soy sauce and 1 1/4 teaspoons of sugar.
- Pour off the marinade and brush the salmon with the remaining 1 teaspoon of sesame oil. Scatter the julienned ginger on top of the fish, cover and steam until barely cooked through, about 8 minutes. Sprinkle the remaining scallions on top of the salmon and steam for 1 minute longer.
- Heat a large wok or skillet until very hot. Add the peanut oil and sesame oil and heat until just smoking. Add the garlic, ginger and chili paste and stir-fry until lightly browned, about 30 seconds. Add the bok choy and a pinch of salt and stir-fry until crisp-tender, 5 minutes. Add the chicken broth, cooking wine and soy sauce and cook, tossing, for 2 minutes longer.
