CANDIED GINGER
This confection can be used as a garnish for our Fresh Ginger Cake, or served alone at the end of a meal.

Steps:
- In a small saucepan, bring sugar and water to a boil over medium heat; continue boiling, stirring occasionally, until sugar dissolves, about 5 minutes.
- Meanwhile, with a paring knife, slice ginger crosswire very thinly (about 1/8 inch thick). You should have about 1 cup.
- Add ginger slices to pan; simmer over medium-low heat until translucent and tender, 20 to 25 minutes. With a slotted spoon, transfer ginger to a wire rack set over a baking sheet lined with parchment or waxed paper; spread pieces so they are not touching. Let drain. Reserve ginger syrup (let cool; refrigerate in an airtight container up to 1 month).
- Pour 1/4 cup sugar into a small bowl; coat ginger slices, 1 or 2 at a time, in sugar. Store in an airtight container at room temperature, up to 1 month.
CANDIED GINGER
Steps:
- Spray a cooling rack with nonstick spray and set it in a half sheet pan lined with parchment.
- Peel the ginger root and slice into 1/8-inch thick slices using a mandoline. Place into a 4-quart saucepan with the water and set over medium-high heat. Cover and cook for 35 minutes or until the ginger is tender.
- Transfer the ginger to a colander to drain, reserving 1/4 cup of the cooking liquid. Weigh the ginger and measure out an equal amount of sugar. Return the ginger and 1/4 cup water to the pan and add the sugar. Set over medium-high heat and bring to a boil, stirring frequently. Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize, approximately 20 minutes. Transfer the ginger immediately to the cooling rack and spread to separate the individual pieces. Once completely cool, store in an airtight container for up to 2 weeks. Save the sugar that drops beneath the cooling rack and use to top ginger snaps, sprinkled over ice cream or to sweeten coffee.
HOMEMADE GINGER ALE AND ITS CANDY
Steps:
- Mix ginger, sugar and water in a saucepan and bring to a slow simmer. Reduce mixture by 50 percent until a syrupy consistency is reached. Keep in mind that the syrup will thicken as it cools. Strain warm syrup. Allow to cool.
- While syrup is cooling, make ginger candy. Take ginger slices that have been drained out of the syrup and completely coat in sugar. Spread on sheet pan and slowly dry out in a 225-degree oven for 3 hours. Ginger slices should be dried but still chewy.
- In a tall glass of ice, add mint sprig and a ratio of 1 part ginger syrup to 7 parts soda water. Squeeze lime wedge and add to drink. Use more syrup if desired. Stir and enjoy. Can also make drink with chilled soda water and add a scoop of vanilla ice cream for a tasty Ginger Ale Float.

Steps:
- Bring ginger, water, and sugar to a rolling boil.
- Turn heat to low.
- Let mixture simmer and reduce to a strong-tasting syrup.
- Strain syrup from ginger slices.
- Refrigerate syrup to thicken.
- Mix 1 part syrup to 7 parts seltzer water (depending how strong you like it).
- Add lime juice to taste.
- Toss remaining ginger slices in sugar.
- Place in warming oven and let dry.

- Dark and Stormy. This is one of my all-time favorite cocktails. I love the way lime and dark rum complements the spicy flavors in ginger beer. Of course, this version is a little lighter as it uses ginger ale instead.
- Easy Whiskey Ginger Cocktail. So, the Moscow Mule has vodka and lime, the dark and stormy uses rum and lime, and now, this recipe calls for whiskey and lime.
- Ginger Shandy. A shandy is essentially a beer with a ‘lemonade top.’ Being served all over the UK, lemonade actually means Sprite (or any citrus soda) and not the lemonade we drink in the States.
- Grumpy Old Man. Here’s another three-ingredient cocktail that uses ginger ale, lime juice, and booze. Only this time, it’s bourbon. I know a lot of whiskey drinkers who can sip at and enjoy it straight, but my sweet tooth leans towards bourbon.
- Pimm’s Cup. Pimm’s was first created in 1823 by James Pimm in London, where the gin-based fruit cup was already incredibly popular. A gin fruit cup consists of gin, lemonade, ginger ale, and a selection of fruits, such as strawberry, orange, mint, and even cucumber.
- Tequila and Ginger Ale Cocktail. Also known as a Mexican Mule, this drink (as you may have guessed) consists of ginger ale, lime juice, and tequila. Like rum, I also love tequila.
- Hibiscus Ginger Punch. Hibiscus has a very specific sweet yet sour flavor that’s a little bit floral and quite close to cranberry in taste. When cooking or making drinks, it’s best to use dried flowers, which are super affordable and will last forever if you keep them in an air-tight container.
- Blackberry Ginger Ale Mojito. Blackberries are used in cocktails for their deep flavor and incredible color. Where blueberries might wash out when you add other ingredients, blackberries will make any drink vibrant.
- Cranberry Rum Ginger Ale. Similar to the recipe above, cranberries are a terrific sweet and sour berry that not only makes your cocktail bright and fresh but also adds a ton of natural flavor without any extra sugar.
