  • Dry a bone-in, fully cooked half ham (do not use a country ham) and bring to room temperature. Preheat the oven to 375 degrees F. Trim the ham skin, leaving the fat intact. Score the fat in a crosshatch pattern, making the cuts about 3/4 inch deep and 1 inch apart. Put the ham flat-side down on a rack in a roasting pan; add 1 cup water. Bake on the lowest oven rack, 40 minutes, adding more water if the pan gets dry. Meanwhile, make the glaze: Whisk 1 cup jam or marmalade with 3/4 cup brown sugar, 1 cup dijon mustard, 2 tablespoons cider vinegar and 2 teaspoons Worcestershire sauce. Brush the ham with half of the glaze; cover loosely with foil and bake 45 more minutes. Brush with the remaining glaze and bake, uncovered, until the glaze is browned, 40 to 50 more minutes. Let rest 15 minutes before carving.
  • Don't toss your ham bone! Add it to simmering soups, beans or braised greens for extra flavor.
  • Give your ham a great crunch: Sprinkle one of the below mixes onto the glaze before the last 40 to 50 minutes of cooking.

1 cup brown sugar
3 tablespoons ginger ale
2 tablespoons dry mustard
⅛ teaspoon ground cinnamon, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place ham in a large baking dish.
  • Bake in the preheated oven for 45 minutes. Whisk brown sugar, ginger ale, mustard, and cinnamon together in a bowl; brush over ham. Served for Easter 2011. We all enjoyed the ham and glaze so much that we were tempted to lick our plates. This simple glaze could also be used when grilling pork chops or a pork loin.

6 -7 lbs ham, cooked, bone in
1 cup orange marmalade
2 tablespoons whole grain mustard (or dijon mustard)

Steps:

  • Place ham in oven at 325 degrees. Hint: I like to cover the exposed side of the ham with foil so it does not dry out while baking.
  • Bake 1 hour 30 minutes.
  • Towards the end of baking, skim off any pan juices and allow fat to rise to the top. In a saucepan, heat the skimmed pan juices (maybe 1/4 cup), marmalade and mustard; boil a couple minutes to reduce and thicken slightly.
  • After 1 hours 30 minutes baking time, remove ham from oven. Remove foil.
  • Use a sharp knife and score the fatty hard outer skin in diamonds about 1/4" deep (the glaze will run into these cuts).
  • Baste ham with reduced glaze and return to oven, basting a couple more times as you bake 30 additional minutes (2 hours total baking time).
  • Slice ham and serve with any remaining glaze.

1 (10- to 12-pound) fully cooked, trimmed, bone-in smoked ham (shank end), room temperature
2 cups freshly squeezed orange juice
1/2 cup packed dark brown sugar
3/4 cup bourbon
1/2 cup guava or apple jelly, warmed
2 large shallots, peeled and thinly sliced
3 whole allspice
3 whole cloves
Zest of 1 orange plus 2 oranges cut into 1/4-inch-thick slices
1 (2-inch-long) piece fresh ginger, peeled and grated
Special Equipment
1 (10- by 14-inch) roasting pan; toothpicks; pastry brush

Steps:

  • Position a rack in the lower third of oven and preheat to 325°F.
  • Using a sharp knife, score the fat covering the ham in a 3/4-inch-wide diamond pattern (do not cut into the meat). Place the ham in a 10-by-14-inch roasting pan and add 1 cup water. Roast the ham for 2 hours.
  • While the ham is roasting, prepare the glaze: In a heavy, medium saucepan over moderately low heat, combine 1 cup orange juice, brown sugar, and bourbon. Bring to a simmer and continue simmering for 10 minutes. Add the guava or apple jelly, shallots, allspice, and cloves, and continue simmering until slightly reduced, about 5 minutes. Add the orange zest and the remaining 1 cup orange juice, and bring to a boil. Continue boiling until thickened, about 5 minutes. Add the orange slices and fresh ginger, and cook until the orange slices are tender, about 2 minutes.
  • Once the ham has been in the oven for two hours, drape the glazed orange slices over the ham, securing them with toothpicks, and brush the ham and oranges with about 1/2 cup of glaze, reserving the remainder for serving. Continue roasting the ham until an instant-read thermometer inserted into the thickest part registers 145°F, about 30 minutes.
  • To Serve:
  • Remove the toothpicks from the ham and arrange the orange slices on a platter. Slice the ham and arrange on top of the oranges. Warm the remaining glaze and serve alongside.

In this recipe, a fully-cooked ham is glazed with sugar and spice -- and some bourbon -- to coat and permeate the meat.

1 whole smoked ham (14 to 18 pounds), bone in and rind on
1 cup apple cider
1/4 cup yellow mustard seeds
2 tablespoons whole cardamom pods
1 tablespoon whole fennel seeds
2 teaspoons ground cinnamon
1 tablespoon ground ginger
3/4 cup prepared mustard
1 cup plus 2 tablespoons light-brown sugar
3/4 cup dark-brown sugar
3 tablespoons light corn syrup
2 tablespoons unsulfured molasses
2 to 3 tablespoons whole cloves
4 fresh bay leaves (optional)

Steps:

  • Rinse ham with cool water, and dry with paper towels. Let stand for 2 hours at room temperature. Place rack on lowest level in oven; heat oven to 250 degrees. Line a roasting pan with heavy-duty aluminum foil. Place a roasting rack in the pan. Transfer ham, with the thicker rind on top, to rack. Pour 1/2 cup apple cider over ham. Cook for 2 hours or until an instant-read thermometer registers 140 degrees.
  • Meanwhile, combine mustard seeds, cardamom, and fennel in a small heavy skillet; place over medium-low heat, and toast seeds, shaking pan, for 3 to 4 minutes, until aromatic. Transfer to a spice mill or mortar and pestle, and grind just until cardamom is broken up. Transfer spice mixture to a medium bowl. Add cinnamon, ginger, mustard, 2 tablespoons light-brown sugar, 2 tablespoons dark-brown sugar, corn syrup, molasses, and remaining 1/2 cup apple cider. Combine well; set aside.
  • Remove ham from oven, and let it cool for about 30 minutes. Using kitchen shears or a sharp knife, trim away the hard rind from the ham. Use a sharp knife to trim fat to a layer of about 1/4 inch all over the ham; it does not need to be perfectly even. The bottom side of the ham will have less fat and more skin. Place ham -- bottom side down -- in pan. Score the remaining fat on top of the ham into a pattern of 1- to 2-inch diamonds, cutting about 1/4 to 1/2 inch through the fat and into the meat.
  • Insert a whole clove into the intersection of each diamond. Using a pastry brush or your fingers, rub the spice glaze all over the ham and deep into the cut diamonds. In a medium bowl combine remaining cup light-brown sugar and 1/2 cup plus 2 tablespoons dark-brown sugar. Using your fingers, gently pack sugar mixture all over scored fat. If using bay leaves, secure them with toothpick halves around the shank bone. Cover the toothpicks by inserting cloves on top of them. Return ham to oven and cook for 20 minutes. Sugar will begin to crystallize but there will be some hard spots of sugar; gently baste these areas with remaining glaze. Cook 40 minutes more, basting with remaining glaze after 20 minutes; do not baste with any pan juices. The ham should be dark brown and crusty; cook 15 minutes more if necessary. Remove and let cool slightly. Transfer to a serving platter, and let stand 30 minutes before carving.

¾ cup maple syrup
½ cup orange marmalade
2 tablespoons unsalted butter
1 tablespoon Dijon mustard
1 teaspoon pepper
¼ teaspoon ground cinnamon
Glaze #2: Cherry Port Glaze
1/2 cup ruby port
1/2 cup cherry preserves
1 cup packed dark brown sugar
1 teaspoon ground black pepper
Glaze #3: Honey Baked Ham
Unsalted butter
Honey
Light brown sugar
Dijon mustard
Freshly ground black pepper
Ground cinnamon
Ground ginger
Ground cloves
Fresh orange zest (optional)
And you'll also need 1 oven bag

Steps:

  • Leaving ham's inner plastic or foil covering intact, place ham in large container and cover with hot water; set aside for 45 minutes. Drain and cover again with hot water; set aside for another 45 minutes. Adjust oven rack to lowest position and heat oven to 250 degrees. Unwrap ham; discard plastic disk covering bone. Place ham in oven bag. Gather top of bag tightly so bag fits snugly around ham, tie bag, and trim excess plastic. Set ham cut side down in large roasting pan and cut 4 slits in top of bag with knife. Bake ham until center registers 100 degrees, 1 to 1½ hours (about 10 minutes per pound). To make the glaze: Combine ingredients in small saucepan and cook over medium heat, stirring occasionally, until reduced to 1 cup, 5 to 10 minutes; set aside. Remove ham from oven and increase oven temperature to 350 degrees. Cut open oven bag and roll back sides to expose ham. Brush ham with one-third of glaze and return to oven until glaze becomes sticky, about 10 minutes (if glaze is too thick to brush, return to heat to loosen). Remove ham from oven, transfer to carving board, and brush entire ham with another third of glaze. Tent ham with aluminum foil and let rest for 15 minutes. While ham rests, add 4 to 6 tablespoons of ham juices to remaining one-third of glaze and cook over medium heat until thick but fluid sauce forms. Carve and serve ham, passing sauce separately. To Make Maple-Orange Glaze:Combine all ingredients in small saucepan. Cook over medium heat, stirring occasionally, until mixture is thick, syrupy, and reduced to 1 cup, 5 to 10 minutes; set aside. To Make Cherry-Port Glaze:Simmer port in small saucepan over medium heat until reduced to 2 tablespoons, about 5 minutes. Add remaining ingredients and cook, stirring occasionally, until sugar dissolves and mixture is thick, syrupy, and reduced to 1 cup, 5 to 10 minutes; set aside. To Make Honey Glaze: Near the end of baking, melt butter in a small saucepan over medium heat. Add in brown sugar, honey, mustard, pepper, cinnamon, ginger and cloves and cook, whisking constantly, just until sugar dissolves, about 2 - 3 minutes. Stir in orange zest and let cool just until it's about the consistency of honey, about 10 minutes (when ready to glaze ham rewarm glaze as needed if it has thickened too much).
