VEGAN BLUEBERRY-BANANA BREAD



Vegan Blueberry-Banana Bread image

This moist bread uses agave nectar (a low-glycemic-index sweetener) instead of sugar. The blueberries add to the sweetness. No eggs or milk, so can be vegan. Turns out moist and so delicious it won't last longer than a day in my house!

1 cooking spray (such as Pam®)
⅓ cup light vanilla soy milk
2 tablespoons lemon juice, divided
2 cups whole wheat flour
1 teaspoon ground cinnamon
¾ teaspoon baking soda
¾ teaspoon baking powder
½ teaspoon salt
3 ripe bananas, mashed
½ teaspoon vanilla extract
½ cup agave nectar
1 ¼ cups fresh blueberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Mix soy milk and 1 tablespoon lemon juice in a bowl and stir. Let sit until curdled, 5 to 10 minutes.
  • Mix whole wheat flour, cinnamon, baking soda, baking powder, and salt together in a medium bowl.
  • Combine mashed bananas with remaining lemon juice and vanilla extract in a large bowl. Add soy milk mixture and agave nectar syrup. Stir well. Add flour mixture until combined, but don't overmix. Mix in blueberries until dispersed. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool bread before serving.

1 cup white sugar
½ cup butter, melted
1 egg
½ teaspoon vanilla extract
1 cup gluten-free all purpose baking flour (such as Bob's Red Mill®)
1 cup quick oats
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon, or to taste
2 cups mashed ripe bananas
¼ cup unsweetened almond milk
½ cup blueberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Combine sugar and butter in a large bowl; beat with an electric mixer until smooth and creamy. Add egg and vanilla extract; beat until fluffy.
  • Sift flour, oats, baking soda, salt, and cinnamon into a medium bowl. Add to sugar mixture and mix until well combined. Mix in mashed bananas and almond milk. Fold in blueberries. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until top of loaf springs back when lightly pressed, 35 to 40 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely before serving.

1 1/2 teaspoons Ener-G Egg Substitute (mixed in 2 Tbs water)
1/4 cup rice milk
1 teaspoon stevia powder
2 tablespoons oil
1 cup rice flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon xanthan gum (optional)
2 medium bananas, ripe and mashed
1/3 cup blueberries
2 tablespoons unsweetened applesauce

Steps:

  • preheat oven to 400 degrees.
  • mix egg, water, and oil in a small bowl. set aside.
  • mix flour,stevia powder, baking powder, salt, cinnamon, nutmeg and optional xanthan gum in a medium sized bowl.
  • slowly mix wet ingredients into dry.
  • add mashed bananas, blueberries, and applesauce.
  • do not over mix.
  • pour into a non stick 9x9 pan.
  • bake for about 25-30 minutes or until center comes out clean.
