1 and 1/2 cups (7 ounces) hazelnuts
6 large egg whites (180 ml) at room temperature
pinch salt
1 and 1/2 cups (superfine) granulated sugar
2 teaspoons Gefen Vanilla Extract
1/2 teaspoon Gefen Almond Extract
1 cup (6 ounces) mini chocolate chips
6 ounces bittersweet chocolate, melted and cooled
10 egg yolks and 12 egg whites
1 teaspoon Gefen Vanilla
1 and 4/5 cups extra-fine sugar
120 grams toasted hazelnut or almond flour
1 cup Gefen Cocoa Powder, sifted
4 tablespoons sugar
1/4 cup water
1 3.5-oz. bar bittersweet chocolate
3 tablespoons Gefen Cocoa
1 tablespoon vanilla sugar
4 egg yolks
1 stick (1/2 cup) margarine (use soy-free, if needed)

Steps:

  • Preheat oven to 350°F. Grease a sheet pan and set aside.
  • Whip egg yolks to mousse consistency. Add vanilla and set aside.
  • Whisk egg whites and sugar in an electric mixer until stiff peaks form.
  • Gently fold yolk mixture into egg whites (do not overmix); it's not necessary to fold mixture until all yolk streaks are gone. Gently fold in cocoa powder and nut flour.
  • Spread batter into sheet pan and bake at 350°F for 25 minutes.
  • Once cake has cooled, cut into four identical rectangles and freeze (with Gefen Parchment Paper in between the layers).
  • In a double boiler (a pot sitting on top of another pot that is filled with hot water) place sugar and water and cook until sugar dissolves. Add the chocolate, cocoa and vanilla sugar and let melt, mix well.
  • Add yolks to mixture, mixing constantly until they are incorporated, add margarine. When smooth, pour into a container and let it sit uncovered until it has completely cooled.
  • Preheat oven to 350°F and line two large baking sheets with parchment paper. Draw two eight-inch rounds on the parchment paper.
  • Spread hazelnuts on a separate baking sheet and toast for 12 to 14 minutes, until browned. Let cool slightly, then transfer to a towel and rub to remove skins. Chop nuts.
  • Lower the oven temperature to 225°F.
  • In a bowl of standing electric mixer fitted with a whisk, beat the egg whites with the salt at medium high speed until soft peaks form. Gradually beat in the granulated sugar at high speed until stiff peaks form. Beat in the vanilla and almond extracts. Fold in the hazelnuts and chocolate chips. Pour the melted chocolate down the side of the bowl and gently fold in until the meringue is lightly marbled.
  • Spread the meringue in the drawn circles and bake for two and a half hours, until crisp, rotate the pans halfway through baking. Turn off the oven, leave the door ajar and let the meringues cool completely.
  • Make sure torte is completely frozen. Spread chocolate cream in between each layer and on the sides. Top with chopped up pieces of the meringue.
  • Cake must be kept refrigerated or frozen.

2/3 cup whole hazelnuts
1 box Betty Crocker™ Gluten Free devil's food cake mix
1 cup water
1 stick (1/2 cup) butter, softened
3 eggs
1 can (14 oz) sweetened condensed milk
2 squares (1 oz each) white chocolate, chopped
1 teaspoon gluten-free vanilla

Steps:

  • Heat oven to 350°F. Place hazelnuts in single layer in shallow baking pan. Toast hazelnuts 8 to 10 minutes or until golden brown and aromatic. Transfer hot nuts to several thicknesses of paper towels. Rub hazelnuts together to remove skins. Let cool. In food processor- or blender-container, grind half of the hazelnuts finely. Chop remaining hazelnuts; set aside.
  • Generously grease bottom only of (8- or 9-inch) round pan. (Lower oven temperature to 325°F if using dark or nonstick pan.)
  • In large bowl, beat ground hazelnuts, cake mix, water, butter and eggs on low speed of electric mixer 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Bake 43 to 48 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; run knife around inside edge of pan; remove from pan to wire rack. Cool completely.
  • In small heavy saucepan, heat sweetened condensed milk and white chocolate over medium heat until chocolate melts. Cook and stir over medium-low heat about 7 to 10 minutes longer or just until thickened. Remove from heat; cool 10 minutes. Stir in vanilla.
  • Cut cooled cake in half horizontally. Place bottom layer, cut side up on serving plate; spread half the white chocolate mixture over cake; sprinkle with half the chopped hazelnuts. Top with remaining cake half, cut side down. Spread remaining white chocolate mixture over top (some may drip down side). Sprinkle with remaining hazelnuts. Refrigerate any remaining cake.

Hazelnut Torte image

This is an excellent, excellent cake, although not inexpensive to make. You can make it dairy free, just don't use butter on the pans. It can also be made gluten-free, if you use rice flour. I have not given instructions for icing it, but it should be iced and generally presented quite formally; this is a special occasion cake. I like either a chocolate frosting or glaze on this. Also I have tinted and rolled out marzipan which I then cut with cookie cutters and used to decorate the iced cake. If I put a chocolate glaze on it, I like to add a thin layer of apricot jam over the cake first. "Go nuts!" (Prep time does not include icing or decorating the cake.)

2 cups ground hazelnuts
1 1/2 cups sugar
4 teaspoons baking powder
4 tablespoons flour or 4 tablespoons rice flour
8 eggs

Steps:

  • Line the bottom of 2 round 9" cake pans with parchment paper.
  • Butter (or oil) and flour them, including the parchment paper on the bottoms.
  • Preheat the oven to 350°F.
  • Blend 1/2 of each- that's 1/2 of each- of the nuts, sugar, flour and baking powder in a food processor until the nuts are powdered and everything is well blended.
  • Add 4 of the eggs and process well.
  • Pour into one of the cake pans.
  • Wash and dry the food processor parts.
  • Repeat with the other half of the ingredients and the other cake pan.
  • Bake for 30 to 35 minutes, until a toothpick comes out clean. DO NOT jiggle the pans during baking.
  • Cool in the pans for 10 minutes and then remove them carefully to a rack to finish cooling.

1 cup packed brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup baking cocoa

1/2 cup brewed coffee, room temperature
FROSTING:
7 ounces semisweet chocolate, chopped
1 cup heavy whipping cream
2 tablespoons sugar
1/3 cup Nutella
Optional: Chocolate curls and hazelnuts

Steps:

  • In a small bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture alternately with sour cream and coffee. Beat just until combined., Pour into 2 greased and floured 6-in. round baking pans. Bake at 350° for 25-30 minutes or until a knife inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a small saucepan, melt chocolate with cream and sugar over low heat; stir until smooth. Remove from the heat; whisk in Nutella. Transfer to a small bowl; cover and refrigerate until frosting reaches spreading consistency, stirring occasionally. , Spread frosting between layers and over top and sides of cake. Garnish with chocolate curls and hazelnuts if desired.

6 ounces fine-quality bittersweet chocolate (not unsweetened), chopped
1 cup hazelnuts (about 4 ounces)
2/3 cup plus 3 tablespoons sugar
1 stick (1/2 cup) unsalted butter, softened
5 large eggs, separated
1 teaspoon vanilla
3/4 teaspoon salt
Preheat oven to 375°F. Butter an 8 1/2-inch springform pan and line bottom with a round of wax paper. Butter paper and dust pan with flour, knocking out excess.
For glaze
6 ounce fine-quality bittersweet chocolate (not unsweetened), chopped
1/2 cup heavy cream
Garnish: finely chopped toasted hazelnuts
Accompaniment: whipped cream or vanilla ice cream

Steps:

  • Make torte:
  • In a metal bowl set over a pan of barely simmering water melt chocolate, stirring until smooth, and cool.
  • Spread hazelnuts in a shallow baking pan and toast in oven until they begin to turn pale golden, 7 to 10 minutes. Cool hazelnuts completely. Discard any hazelnut skins that rub off easily and transfer nuts to food processor. Add 3 tablespoons sugar and grind mixture fine.
  • In a large bowl with an electric mixer beat together butter and remaining 2/3 cup sugar until light and fluffy. Add yolks, 1 at a time, beating well after each addition, and beat in vanilla, salt, and melted chocolate. Beat in hazelnut mixture until combined well.
  • In another large bowl with cleaned beaters beat whites with a pinch salt until they just hold stiff peaks. Whisk about one-fourth whites into chocolate mixture to lighten and fold in remaining whites gently but thoroughly. Spread batter evenly in springform pan and bake in middle of oven 45 to 55 minutes, or until a tester comes out with crumbs adhering. Cool torte completely in pan on a rack and remove side of pan. Invert torte onto a serving plate and discard wax paper.
  • Make glaze:
  • Put chocolate in a small metal bowl. In a small saucepan bring cream to a boil and pour over chocolate. Stir glaze just until completely smooth and let stand until thickened slightly, about 20 minutes.
  • Spread glaze evenly over top and side of torte. With a small icing spatula or butter knife make parallel lines through glaze across top to create a design. Garnish top and bottom edge of torte with chopped hazelnuts and let torte stand until glaze is set, about 2 hours.
  • Serve torte with whipped cream or ice cream.

1/2 cup sugar substitute
1/8 cup strong coffee or 1/8 cup espresso
4 ounces semisweet chocolate, chopped
1/4 cup unsalted butter, softened
1/2 teaspoon almond extract
2 teaspoons vanilla extract
1 tablespoon rice flour
2/3 cup raspberry spreadable fruit
4 ounces bittersweet chocolate, chopped
1/2 cup heavy cream
2 tablespoons .unsalted butter
1 teaspoon vanilla extract
20 hazelnuts, for garnish

Steps:

  • Preheat oven to 350°F Place hazelnuts on a baking sheet, and toast for 8-10 minutes. Be careful that they don't burn. Remove from oven and place on a towel. Take another towel, place over nuts and rub gently to remove skins. Allow to cool, then place in a food processor and pulse untl finely ground. Be careful not to grind into a paste. Set aside.
  • Heat sugar, coffee and chocolate in a double boiler. Stir until chocolate melts. Set aside.
  • Place butter in mixing bowl and beat until fluffy. Add egg yolks, one at a time, mixing after each addition. Stir in chocolate mixture, almond and vanilla extract, and rice flour.
  • In a separate bowl beat egg whites, until stiff enough to hold a peak. Fold half the egg whites into the chocolate batter. Gently fold in the rest of the egg whites. Pour batter into a greased 8-inch cake pan. Bake for 30 minutes, or until a knife inserted in the center comes out clean. Allow to cool.
  • Heat heavy cream, with butter, until just boiling. Turn off heat and add chocolate and vanilla, and allow to sit for 3-4 minutes, whisk until smooth.
  • Take cake out of refrigerator. Thinly spread two tablespoons of ganache over the cake, as a crumb coat. Spread raspberry jam over the top of the crumb coat. Refrigerate for 10 minutes. Place wire rack on a baking sheet. Place cake on rack and pour ganache over the cake. Evenly coat the cake using a spatula. Decorate the perimeter with whole hazelnuts, place on a plate, refrigerate until ready to serve.
