Steps:
- Sift flour in a large bowl.
- Dissolve yeast and apple in tepid water.
- Add to dry ingredients.
- Beat to a smooth consistency.
- Brush metal egg rings with oil.
- Heat rings in a frypan.
- Three quarters fill the egg rings with the mixture.
- Cook at low heat for 8 to 10 minutes or until surface holes appear.
- Cover pan and continue cooking for 2 to 3 minutes.
- Remove from pan and allow to cool.
- Repeat with remaining mixture.
- Toast and add your favourite choice of toppings.

- Place your milk into a glass jug and heat up to around 43 degrees C (this is just warm - I used my cooking thermometer to check)
- Add your caster sugar and yeast to the warm milk and stir. Leave until the mixture starts to get a little frothy - about 10 minutes.
- In a mixing bowl add your flour, bicarbonate of soda and salt. Then add in your milk mixture. Stir together until smooth. It should be quite thick, but not too thick! Do this for a couple of minutes, I used a handheld whisk.
- Leave to prove, covered in a warm place for about 90 minutes (no less than an hour). My oven has a proving setting so I left it in there. Make sure you bowl is big enough so it doesn't over prove, there should be some air bubbles on the top once it's done.

- Heat your dairy free milk in the microwave for about 30-45 seconds, until lukewarm and it reaches around 39°C (I used a cooking thermometer to check this, if the milk is too hot the heat will kill the yeast).
- Add your yeast and caster sugar to your luke warm dairy free milk and mix until dissolved. Leave in a warm place for around 15 minutes until frothy (If the mixture doesn't froth this means your yeast hasn't been activated and the crumpets won't work, this may be because your yeast has been open too long or the milk is too hot/cold).
- Mix together your self raising flour, bicarbonate of soda and salt and then add to your frothy milk mixture. Whisk until lump free and then cover with cling film and leave in a warm place for 90 minutes (this step is important and if skipped will result in the crumpet not working).
- After 90 minutes, the batter should have thickened slightly and will be slightly frothy. Add 2 tbsp of luke warm water to the mixture and stir through, the mixture needs to be runny enough to pour into your frying pan and not too thick (you may need to add more luke warm water between batches if the mixture thickens up too much).
