8 hard-cooked eggs, peeled
3 tablespoons mayonnaise
1 tablespoon minced jalapeno pepper
½ tablespoon honey mustard
½ teaspoon black pepper
½ teaspoon garlic powder
1 pinch salt
8 slices bread
24 leaves baby spinach
8 slices tomato

Steps:

In a medium bowl, mash the hard-cooked eggs with a fork or pastry blender. Mix in mayonnaise, honey mustard, and jalapeno. Season with black pepper, garlic powder, and salt.
Spread egg mixture on four of the bread slices. Layer with baby spinach leaves and tomato slices, and top with remaining slices of bread.

Ingredients

4 lbs white potatoes, diced
1 cup celery, diced
1 cup dill pickle, diced (real dills)
1 cup pepperoni, diced
1 (6 ounce) can pitted black olives, drained and diced
1 cup medium cheddar, diced
1 cup swiss cheese, diced
1/2 cup parmesan cheese, grated
1 cup white onion, diced
1 cup red onion, diced
1 tablespoon garlic salt
1 tablespoon minced garlic
1/4 teaspoon white pepper
1/2 teaspoon ground black pepper
1/2 teaspoon dry mustard
1/2 teaspoon celery salt
1/2 teaspoon cayenne pepper
1 cup mayonnaise

Steps:

Peel and wash potatoes; cook in boiling water until just fork tender (do not over cook).
Cool and dice approximately 1/2 x 1/2-inch; combine with all other diced items (onions, pickles, pepperoni, cheeses, celery and black olives). Fold all of these ingredients gently with 1/2 cup of mayonnaise until mixed.
Refrigerate for at least a couple of hours, overnight is even better (this is important).
Add all spices and the rest of mayonnaise and minced garlic; gently fold until mixed. Refrigerate 30 minutes to 1 hour before serving.

1 medium opossum
1 cup dry roasted peanuts, halved
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup dried cranberries
1/2 large lemon, preferably Meyer
2 tablespoons dried savory
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

Place opossum in a large pot; add water to cover. Cover put and bring to a boil; reduce heat to mild boil and cook for 2 hours, or until opossum meat is falling off of the bone. Remove opossum, let cool and shred or chop the meat. Reserve tail for other use.
Mix together sour cream, mayonnaise, savory, salt and pepper.
Place the diced opossum in a bowl, add the peanuts and cranberries. Add juice from the squeezed lemon and toss well. Pour the dressing over the opossum and toss again. Serve immediately.
