A delicious bread machine bread great for french toast, grilled sandwiches, or toast. It has no fat and very little sugar.

- Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Light or Medium Crust cycle; press Start. For a crispier crust, use the French cycle or turn machine off after first rise and start the cycle over.

GLUTEN FREE PEASANT BREAD

- Preheat oven to 375 degrees. Lightly grease the bottom your baking cloche. Combine buttermilk, stevia, and egg, beating until thoroughly combined. Cover and set aside. Combine the rest of the ingredients in a large bowl using a whisk to simulate the effects of sifting. Make a well in the center, and pour the wet ingredients into the dry. Stir with a wooden spoon until a relatively soft dough is formed (very much like biscuit dough; in my dry climate, I often need to add a bit of water). Lightly knead on a floured surface until the dough has a uniform surface. Shape as desired to fit your cloche (loaf should be apx 3" high). Slash the top of the dough for interesting effect. Place dough in cloche and set the lid over it. (You crust junkies can sprinkle the inside of the lid with a bit of water to increase crustiness.) Place cloche in oven and bake for 40 to 45 minutes, until crust is lightly golden brown and very crisp, and a skewer inserted into the center comes out clean. Allow to cool for at least 10 minutes for best slicing. Bread will only keep for a couple of days, but since it makes wonderful french toast and bread pudding, this usually isn't a problem.

If you are looking for an easy bread recipe, this is it. Because there's no kneading involved, the bread is simple to make. A neighbor gave me this delicious recipe years ago after I had sampled the bread at her house.

- Dissolve yeast in 1 cup warm water. In a large bowl, combine flour, salt and sugar. Add the yeast mixture and remaining water; stir until combined. Cover and let rise in a warm place until doubled, about 1 hour. , Stir dough down. Divide in half. Place each half in a greased 1-qt. round casserole or ovenproof bowl. Brush tops with butter and sprinkle with poppy seeds. Let rise in a warm place until doubled, about 45 minutes. , Bake at 350° for 45 minutes. Remove from pans; serve warm if desired.

- 1.Mixing the dough: • If you are using active-dry yeast: In a small mixing bowl, dissolve the sugar into the water. Sprinkle the yeast over top. There is no need to stir it up. Let it stand for about 10 to 15 minutes or until the mixture is foamy and/or bubbling just a bit - this step will ensure that the yeast is active. Meanwhile, in a large bowl, whisk together the flour, xanthum gum and salt. When the yeast-water-sugar mixture is foamy, stir it up, and add it to the flour bowl. Add the two egg whites. Mix using a spatula or wooden spoon until the flour is absorbed • If you are using instant yeast: In a large mixing bowl, whisk together the flour, xanthum gum, salt, sugar, and instant yeast. Add the water. Add the egg whites. Mix until the flour is absorbed. 2.Cover bowl with a tea towel or plastic wrap and set aside in a warm spot to rise for at least an hour. (If you have the time to let it rise for 1.5 to 2 hours, do so.) This is how to create a slightly warm spot for your bread to rise in: Turn the oven on at any temperature (350ºF or so) for one minute, then turn it off. Note: Do not allow the oven to get up to 350ºF, for example, and then heat at that setting for 1 minute - this will be too hot. Just let the oven preheat for a total of 1 minute - it likely won't get above 300ºF. The goal is to just create a slightly warm environment for the bread. 3.Preheat the oven to 425ºF. Grease one oven-safe bowls (such as the pyrex bowls I mentioned above) with about two teaspoons of butter. 4.Using a spatula, transfer the dough to the prepared bowl. Note: Unlike the traditional peasant bread recipe, there is no punching down of the dough here. I suggest using a light hand/spatula, in fact, while transferring the dough to the bowl. 5.Let the dough rise 20 to 30 minutes on the countertop near the oven (or near a warm spot) or until it has risen to just below or above (depending on what size bowl you are using) the top of the bowl. (Note: I do not do the warm-oven trick for the second rise. I simply set my bowl on top of my oven, so that it is in a warm spot.) 6.Bake for 30 minutes. Remove from the oven and turn the loaf onto a cooling rack. If you've greased the bowl well, the loaf should fall right out onto the cooling rack. Remove from oven and let cool for 10 to 15 minutes before cutting.

- Transfer the bowls to the oven (use a baking sheet to make it easier), and bake for 15 minutes. Reduce the heat to 375 degrees F and bake for 17 to 20 minutes more, until golden all around. Remove the bowls from the oven and turn the loaves out onto the cooling racks. Let the loaves cool for at least 20 minutes before cutting.
