Gluten-Free Pear Bread image

Wow family and friends with this Gluten-Free Pear Bread -- an easy gluten-free baking recipe featuring fresh pears, perfect for fall!

2 ripe USA Pears
1/2 cup olive oil
1 1/2 cups brown sugar (*see Note)
3 large eggs
1 teaspoon vanilla
240 g (2 cups) gluten-free all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon Kosher salt
1/2 - 1 teaspoon xanthan gum (*see Note)
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 cup buttermilk
1 tablespoon melted butter
1 tablespoon gluten-free all-purpose flour
2 tablespoons brown sugar (*see Note)
1/2 cup pecan pieces (I used Sunnyland Farms)
1/2 teaspoon ground cinnamon
1/4 cup powdered sugar (*see Note)
2 tablespoons heavy cream

Steps:

  • Preheat oven to 350 degrees F. Coat a 9-inch loaf pan with cooking spray.
  • Cut one pear in half. Dice one pear half and set aside for Streusel. Grate remaining pear and pear half to yield 1 cup grated pear.
  • Cream oil and brown sugar; beat in eggs and vanilla. Stir in grated pear.
  • Whisk together flour and next 6 ingredients (through ginger). Add to oil mixture alternately with buttermilk. Pour into prepared pan.
  • Combine remaining Streusel ingredients and toss with reserved diced pear. Sprinkle over top of batter in pan and press in slightly to batter.
  • Bake for 1 hour - 1 hour and 10 minutes or until wooden pick inserted in center of loaf comes out clean. Cool bread in pan 10 minutes.
  • Remove bread from pan. Combine powdered sugar and cream. Drizzle over bread.

1 1/2 cups rice flour
1/2 cup potato starch
1/4 cup tapioca starch
1/2 teaspoon xanthan gum
1 cup pitted prunes
2 cups sugar
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon salt
1 teaspoon baking soda
1 cup oil
1 cup buttermilk
3 eggs

Steps:

  • Preheat oven to 325 degrees.
  • Grease bundt pan and set aside.
  • In a small pan boil several cups of water. Remove from heat and add prunes. Let soak for 15- 20 minutes or until prunes have softened. Drain prunes and finely chop them. I found it easier to chop them with scissors. Set aside.
  • Combine rice flour, potato starch, tapioca starch, xanthan gum, sugar, cinnamon, cloves, salt, and baking soda.
  • In a bowl combine oil, buttermilk, and eggs.
  • Slowly add flour mixture to wet mixture and stir just until combined.
  • Stir in prunes.
  • Spread batter into bundt pan.
  • Bake for 70-75 minutes. Check cake at one hour and bake additional time if needed or until cake starts to pull slightly away from the pan. This cake is very dense and moist so the toothpick test is hard to do on this one.
  • Let cake cool in pan for 10 minutes then remove from pan to cool on wire rack.

2 cups all-purpose gluten-free flour
1/4 cup butter
1/3 cup sugar
2 teaspoons gluten free baking powder
2 eggs, well beaten
2 tablespoons sour cream
1/2 teaspoon salt
1 lb prune, diced
2 pears, peeled and sliced
1 teaspoon vanilla
1 teaspoon cinnamon
2 tablespoons milk
2 teaspoons cinnamon sugar

Steps:

  • For dough, mix sugar, flour, powder and salt; cut in butter until crumbly.
  • Add eggs and sour cream; mix well and knead.
  • Divide dough into two equal portions and roll out one portion and put in a greased 9"x11" cake pan.
  • For filling, mix together all ingredients.
  • Spread filling evenly over dough.
  • Roll out remaining dough and cover filling with it.
  • For topping, brush top crust with milk and sprinkle with cinnamon sugar.
  • Bake in a preheated 350* oven for about 30 minutes.
  • Enjoy!

Steps:

  • Preheat oven to 350 degrees.

3 tablespoons all-purpose flour, divided
1/4 cup thawed unsweetened apple juice concentrate
3/4 cup reduced-fat cinnamon graham cracker crumbs (about 4 whole crackers)
1/2 teaspoon ground cinnamon
Dash ground nutmeg
3 tablespoons cold butter
1/2 cup reduced-fat whipped topping
Additional ground cinnamon

Steps:

  • In a bowl, toss the pears, 1 tablespoon flour and apple juice concentrate. Spoon into an 8-in. square baking dish coated with cooking spray. In a bowl, combine the crumbs, cinnamon, nutmeg and remaining flour. Cut in margarine until mixture resembles coarse crumbs. 2 tablespoons flaxseed meal
⅛ cup packed brown sugar
½ teaspoon baking powder
¼ cup cold milk, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cube 1 tablespoon of butter and place in an 8-inch round baking dish.
  • Place pears in a mixing bowl. Sprinkle with lemon juice and toss to coat. Sprinkle cornstarch over pears and toss to coat. Set aside.
