GLUTEN FREE SWEDISH MEATBALLS WITH GRAVY

Gluten Free Swedish Meatballs With Gravy image

I was making meatballs for a family get together and didn't want to use breadcrumbs, as my daughter is on a gluten-free diet. I tried the cornmeal and they turned out excellent! They really hold together very well too! I also found that by mixing the ground beef and ground turkey makes for a much leaner and healthier meatball. You could use all ground turkey if you prefer too! My Dad was the one who actually made the gravy and it turned out nice with the cream soup and canned milk! This recipe can easily be doubled if needs be, and you can play around with other herbs and seasonings too, these were just what I used. Enjoy!

Categories     Poultry

Time 50m

Yield 6 serving(s)

Number Of Ingredients 15

3/4 lb ground beef
3/4 lb ground turkey
1 egg
2 tablespoons pepper
1 tablespoon seasoning salt
2 teaspoons garlic powder
1/2 chopped onion
1 -2 cup cornmeal
4 tablespoons olive oil (2 for cooking the meatballs, 2 to make the gravy)
5 tablespoons tapioca flour
1 tablespoon cornstarch
1 1/2 cups water
1 (10 ounce) can cream of celery soup
1 (12 ounce) can evaporated milk (Can you regular milk)
salt and pepper

Steps:

  • In a large bowl mix ground beef and ground turkey and combine them well. Add the Egg and stir. Season the meat with the salt, pepper, and garlic powder. Add the onions to the meat. Add the cornmeal and with your hands, mix the meat well. You may need some more cornmeal if the meat is too sticky.
  • Roll up into individual meatballs. This should make about 40, depending on the size of meatballs you make.
  • In a large skillet pan, add about 2 tbsp oil and cook the meatballs, turning after about 6-8 minutes and cook the other side.
  • When the meatballs are no longer pink, transfer them to a plate. Add 2 tbsp olive oil and the tapioca flour and cornstarch. Stir it well until thickened. Add the water and stir with a wire whisk until creamy. Add the cream of celery soup and continue to whisk and cook for about 2 minutes to until thickend. Pour the canned milk and stir well. You may need to add some more milk if it gets too thick. Season well with salt, pepper, and any other seasonings you may prefer.
  • Return the meatballs to the gravy and heat them up, for about 5 minutes or so.
  • Enjoy with Steamed Rice.

ACTUALLY GLUTEN FREE SWEDISH MEATBALLS

Actually Gluten Free Swedish Meatballs image

I searched all over for a truly gluten-free swedish meatball recipe. One said, "serve over egg noodles" at the end - which is certainly NOT GF. Another included cream of celery soup and there is only one GF one out there and it is not condensed. So, I modified a recipe and it was a hit at the potluck. We aren't GF, but we have a lot of friends who are, so I always try to bring gluten free to potlucks.

GRANDMA'S SWEDISH MEATBALLS AND GRAVY

Grandma's Swedish Meatballs and Gravy image

This Swedish meatballs recipe has been passed down from a Swedish grandmother to her beautiful granddaughter. They are the best Swedish meatballs I've ever tasted! Even better than Ikea®! Easy to make, full of flavor, swimming in the most amazing creamy gravy sauce!

Provided by JACANA

Time 1h10m

Yield 8

Number Of Ingredients 24

½ cup milk
⅓ cup dry bread crumbs
2 tablespoons heavy cream
1 teaspoon heavy cream
1 large egg
1 large clove garlic, minced
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground white pepper
¼ teaspoon ground allspice
1 pound ground beef
½ pound ground pork
½ medium onion, minced
2 tablespoons finely chopped fresh parsley
1 tablespoon salted butter
2 teaspoons olive oil
⅓ cup salted butter
¼ cup all-purpose flour
1 cup vegetable broth
1 cup beef broth
1 cup heavy cream
2 teaspoons soy sauce
1 teaspoon Dijon mustard
salt and ground black pepper to taste

Steps:

  • Mix milk, bread crumbs, 2 tablespoons plus 1 teaspoon cream, egg, garlic, salt, black pepper, white pepper, and allspice together in a large bowl. Set aside to soak until bread crumbs have absorbed the milk, at least 10 minutes.
  • Mix in beef, pork, onion, and parsley, using your hands to mix until well combined. Roll into about 24 small meatballs or 16 larger meatballs.
  • Heat butter and oil in a pan over medium-high heat. Fry meatballs in small batches until cooked through and browned on all sides, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Transfer to a warm plate and cover with foil.
  • Add butter for gravy sauce to the pan juices. Melt over medium heat. Whisk in flour. Cook and whisk until flour dissolves and turns brown, about 5 minutes. Pour in vegetable broth, beef broth, cream, soy sauce, and Dijon. Bring to a simmer. Season with salt and pepper and mix to combine all of the flavors together. Continue to simmer until thickened, 5 to 7 minutes.
  • Add meatballs to the gravy. Toss gently to coat and serve.

  • Combine milk and breadcrumbs in a small bowl. In another large bowl, whisk the egg and add meat, onion, and salt. Add the soaked breadcrumbs to the meat mixture and gently mix with your hands until evenly combined.
  • Shape into small meatballs. Not too tight. You want to lightly roll them between your hands to form a ball that feels like it will hold together, but lightly so they will absorb the sauce. Then roll each meatball in GF flour.
  • Heat oil in a large, deep skillet over medium-high heat. Add the meatballs and gently brown on all sides, about 5 to 7 minutes. Once all of the meatballs are cooked, transfer to a bowl. Drain oil.
  • For Gravy: Next whisk together 4 tablespoons of gluten free all purpose flour plus 4 tablespoons of butter in the same skillet until the mixture is thick and smooth. Continue to stir and slowly brown the flour over a low heat for 5 minutes. Then add 3 cups of stock. Whisk and simmer so that the gravy stays smooth while it thickens.Season with salt and pepper to taste.

  • Melt a tablespoon of butter in a skillet or pan over medium heat. Add the onion, a pinch of salt, and sauté until it just begins to caramelize (6-8 minutes). Remove from heat and set aside to cool.
  • Add the ground meat, almond flour (or pork rind 'panko'), salt, spices, cooked onion, egg and 2 tablespoons of heavy cream to a large bowl. Mix everything thoroughly together using your hands and form into rounds (either 20 small-is ones or 14 large).
  • Heat up a touch of olive oil in your skillet over medium heat and cook the meatballs until brown all over and cooked through. You'll want to turn them around a few times so they cook evenly. Transfer to a plate and cover with foil while you make the sauce.
  • Add the remaining butter to the skillet and cook until it begins to brown (don't clean the meatball remnants as they add the flavor to the sauce!). Add in the broth, remaining heavy cream and mustard to deglaze the pan. Allow to simmer for a couple minutes and make a slurry out of your thickener of choice (i.e. mix it with a couple tablespoons of cold water prior to adding it to avoid clumping). Continue to simmer until the sauce just begins to thicken and taste for seasoning.
