Give your gluten free cake mix a cherry twist by making these scrumptious moist and chocolaty bars!

1 box Betty Crocker™ Gluten Free devil's food cake mix
1 cup miniature semisweet chocolate chips (half of 12-oz bag)
1 can (21 oz) cherry pie filling
2 eggs, beaten
1 container Betty Crocker™ Whipped chocolate frosting

Steps:

  • Heat oven to 350°F (or 325°F for dark or nonstick pan). Grease 15x10x1-inch or 13x9-inch pan with shortening.
  • In large bowl, gently mix cake mix, chocolate chips, pie filling and eggs with rubber spatula. Carefully spread in pan.
  • Bake 15x10x1-inch pan 20 to 25 minutes, 13x9-inch pan 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Spread frosting over bars. For bars, cut into 8 rows by 6 rows.

2 cups raw almonds
1 cup pecans
1 cup unsalted pistachios (, shelled)
2 cups pitted dates (, chopped)
1 cup dried cherries
¾ cup egg whites
1 teaspoon pure vanilla extract
1 (3.5-ounce) bar dark chocolate, (chopped)
Sprinkle of coarse sea salt

Steps:

  • Preheat the oven to 300°F. In a food processor, pulse the nuts together until coarsely ground. Add in the dates, cherries, egg whites, and vanilla until a paste forms. Add in chocolate and give a quick pulse. (Do not over-mix the chocolate so you can taste the big yummy chunks!)
  • Push the mixture into a parchment-lined 9x13-inch baking dish. Bake for 20-25 minutes until the center feels firm. Remove from the oven, let cool, and cut into bars. Sprinkle a little sea salt over top to enhance the sweetness, if desired.
  • These will last on the counter for a few days or up to a week or more in the fridge.

1 can (21 oz) cherry pie filling
2 eggs, beaten
1/2 bag (12-oz size) miniature semisweet chocolate chips (1 cup)
1 container Betty Crocker™ Whipped chocolate frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease and flour 15x10x1-inch or 13x9-inch pan, or spray with baking spray with flour.
  • In large bowl, gently mix dry cake mix, pie filling, eggs and chocolate chips with rubber spatula; break up any undissolved cake mix by pressing with spatula. Carefully spread in pan.
  • Bake 15x10x1-inch pan 23 to 27 minutes, 13x9-inch pan 29 to 34 minutes, or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Frost with frosting. For bars, cut into 8 rows by 6 rows. Store loosely covered.

I originally found this recipe in an old Pillsbury cookbook and made it for years during the holiday season. I didn't make it for a couple of years after going gluten free and finally converted it this year. It was a great success and I have my favorite back on the holiday cookie tray!

Number Of Ingredients 20

1 cup cornstarch
1 cup almond meal
1/3 cup sugar
3/4 cup butter, softened
2 eggs, lightly beaten
1 cup firmly packed brown sugar
3 tablespoons rice flour
1 tablespoon tapioca starch
1 tablespoon potato starch
1/2 teaspoon xanthan gum
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
10 ounces maraschino cherries, drained and chopped (reserve juice)
1/2 cup chopped walnuts (optional)
2 tablespoons butter, softened
2 1/2 cups icing sugar
1/2 teaspoon vanilla
3 -4 tablespoons reserved cherry juice
4 tablespoons flaked coconut (optional)

Steps:

  • Preheat oven to 350°F.
  • Line a 9X13 pan with tinfoil.
  • In a large bowl, combine all crust ingredients. Mix until crumbly and well combined and press into bottom of ungreased foil lined pan.
  • Bake for 15 to 20 minutes or until lightly brown.
  • In a small bowl, combine all filling ingredients and mix well.
  • Pour over crust and bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean. Cool.
  • Combine all frosting ingredients except coconut. Beat until fluffy and spread over cooled bars.
  • Sprinkle with coconut and cut into bars.

  • Spray jelly roll pan, 15 1/2 × 10 1/2 × 1 inch, with cooking spray.
  • Mix cake mix (dry), pie filling, eggs and chocolate chips in large bowl with spoon.
  • Pour into pan.
  • Bake 20 to 30 minutes or until toothpick inserted in center comes out clean.
  • Cool completely.
