This fruit pizza is like no other! As opposed to the traditional cookie crust, this one is made with a delicious corn flake crust that is to die for! Best served with the fruit chilled. Any fruit you choose will work! You've got to try this one! Happy eating!

1 cup crushed cornflakes
2 tablespoons butter, softened
2 tablespoons light corn syrup
2 tablespoons white sugar
1 tablespoon honey
2 (8 ounce) packages cream cheese, softened
1 (7 ounce) jar marshmallow fluff
½ cup sliced strawberries, or to taste
2 apricots, sliced, or to taste
2 kiwi, peeled and sliced, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cornflakes, butter, corn syrup, and sugar in a bowl until evenly combined; press onto a baking sheet.
  • Bake in the preheated oven until crust is golden brown, about 5 minutes. Drizzle crust with honey and cool in refrigerator, about 15 minutes.
  • Stir cream cheese and marshmallow fluff together in a bowl until smooth and creamy; spread over cooled crust, keeping a 1/2-inch border of crust. Chill crust in refrigerator until completely cooled, about 15 minutes.
  • Arrange strawberries, apricots, and kiwi over the cream cheese layer.

After reading all the white pizza recipes I decided to have some fun with the concept. trying to keep all of my ingredients on the pale side.

16 ounces prepared whole wheat pizza dough or 16 ounces whole wheat bread dough
4 -5 garlic cloves, minced
3 -4 tablespoons olive oil
1 -2 tablespoon fresh basil or 1 -2 tablespoon dried basil
1 tablespoon oregano
1 yellow tomatoes, sliced
1/2 cup cooked chicken breast
1 yellow pepper
1/2 cup cauliflower
1/2 cup sliced white mushroom
1 sliced yellow onions or 1 sliced Spanish onion
1 (7 ounce) jar artichoke hearts
1/4 cup sliced white asparagus (optional)
1/4 cup sliced water chestnuts (optional)
1/4 cup corn (optional)
3/4 cup mozzarella cheese
1/2 cup feta cheese, crumbled
white pepper
red pepper flakes (optional)
sea salt

Steps:

  • Preheat oven 400 degrees F.
  • place dough on pizza pan or cookie sheet
  • pre bake the dough about 4-5 minutes.
  • brush dough with olive oil and sprinkle with garlic, basil, oregano and optional spices (optional spices can be omitted and added at the table instead).
  • distribute yellow tomato evenly around the pie.
  • followed by the other ingredients.
  • all of the other ingredients are optional and the amounts are aproximations. they should be sprinkled evenly over the surface to aproximate the look of regular pizzas (except for colour) Finish with the cheeses parmesan cheese would go nicely here too.
  • bake until crust is cooked and cheeses are melted and starting to turn a nice golden brown colour. Depending this could take from 10-35 minutes. Make sure you keep an eye on the dough.

1 cup grilled artichoke
2 tablespoons artichokes, spread
1 cup low fat whipped ricotta cheese
1/2 cup shredded lowfat mozzarella cheese
3 cups arugula
1 cup cherry tomatoes
1 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt
1 bunch fresh basil leaf

Steps:

  • Preheat oven to 350°.
  • Brush Naan flatbread with EVOO, then spread on artichoke spread and whipped ricotta.
  • Top with grilled artichokes and cherry tomatoes and sprinkle with shredded mozzarella cheese.
  • Bake in oven 6-8 minutes or until cheese is melted and flatbread is golden. While flatbread is baking, toss together arugula, lemon juice, salt and remaining EVOO.
  • Remove flatbread from oven and top hot, baked flatbread with arugula salad mixture and serve.
