3 ounces crumbled Gorgonzola cheese

Steps:

  • Mix cream cheese and Gorgonzola cheese together in a bowl.
  • Cut a slit into each date so they can be spread flat. Spread cheese mixture into each date; top with a walnut piece.

1/4 cup (2 ounces) goat cheese, at room temperature
1/4 cup (2 ounces) mascarpone cheese, a room temperature
1/4 cup finely chopped fresh basil leaves
Kosher salt and freshly ground black pepper
16 (12 ounces) Medjool dates, pitted
8 thin slices proscuitto, halved lengthwise
Special equipment: 16 toothpicks or cocktail picks

Steps:

  • In a small bowl, mix together the cheeses and basil. Season with salt and pepper.
  • Gently pull the dates apart and spoon about 1/2 teaspoon cheese mixture inside. Close the dates around the cheese filling. Wrap a piece of proscuitto around each date and secure with a toothpick.
  • Arrange the stuffed dates on a platter and serve.

16 large dates, pitted
4 ounces light cream cheese, room temperature
3 tablespoons gorgonzola, room temperature
16 large pecans
1 teaspoon blackstrap molasses
1 teaspoon balsamic syrup
1/8 teaspoon cayenne pepper, for garnish

Steps:

  • Using a sharp knife, cut a lengthwise slit down the center, but not through, each date to open the dates up; set aside.
  • In a small bowl, mash together cream cheese and gorgonzola. Spread each date with about ½ teaspoons of the cheese mixture inside the opening. Smooth the top and place 1 pecan over each date.
  • In a small bowl, combine balsamic syrup and molasses. Transfer the dates to a serving tray. Drizzle the molasses mixture over the dates and then sprinkle very lightly with cayenne pepper.
  • Note: If not served right away, skip the drizzling and cover with plastic wrap; refrigerate until needed. Bring to room temperature and drizzle with molasses mixture before serving.

Sinfully delicious!! Salty and sweet, crispy and gooey!! Yum! Surprisingly easy and look fantastic. I had these at a restaurant and then went on a hunt to find a similar recipe. Found one online and tweaked it some. If you use thick cut bacon, par-cook it some before wrapping dates.

1/2 cup balsamic vinegar
1/4 cup sliced almonds, toasted
6 ounces goat cheese
24 pitted dates
1 lb bacon (see note)

Steps:

  • Simmer balsamic vinegar in small saucepan until reduced by half. Syrup will be thick. Set aside.
  • Mix almonds into goat cheese.
  • Cut small slit in dates and stuff with small amount of cheese mixture.
  • Cut each bacon slice into 3 pieces. (Par-cook if thick sliced.) Wrap piece of bacon around each date, and secure with toothpick.
  • Place on foil-lined baking sheet.
  • Broil for about 10 minutes, turning over when browned on first side. Be careful as they can burn quickly.
  • Arrange on serving platter and drizzle with reserved balsamic reduction.

1 tablespoon olive oil, plus more for baking sheet
1 pound store-bought pizza dough (thawed if frozen)
All-purpose flour, for work surface
4 ounces Gorgonzola cheese, crumbled (1 cup)
2 ounces Fontina cheese, shredded (1/2 cup)
1/3 cup pitted dates, coarsely chopped
Ground pepper
4 ounces thinly sliced prosciutto

Steps:

  • Preheat oven to 450?. Lightly brush a large rimless baking sheet with oil. (Alternatively, use a rimmed baking sheet turned upside down.)
  • Divide dough in half. On a lightly floured work surface, roll and stretch dough to two 16-by-4-inch ovals (or as large as will fit on your baking sheet); transfer to prepared baking sheet. Dividing evenly, brush top of dough with 1 tablespoon oil.
  • Sprinkle dough with Gorgonzola, Fontina, and dates; season with pepper. Bake until crust of flatbreads is golden, 15 to 17 minutes.
  • Transfer flatbreads to a cutting board. Drape prosciutto on top of flatbreads, and cut crosswise into small triangles. Serve immediately.

20 small new potatoes
¼ cup vegetable oil
coarse sea salt to taste
½ cup sour cream
¼ cup crumbled Gorgonzola cheese
2 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread potatoes in a single layer on a baking sheet; drizzle with the oil, and toss to coat. Season with salt. Place potatoes in preheated oven and bake until very tender when pierced with a fork, 45 to 50 minutes.
  • With a small knife, cut a cross in the top of each potato; press firmly on sides to open. Combine sour cream and Gorgonzola in a small bowl. Top each potato with a generous spoonful of the cheese mixture; garnish with chives. Serve hot or at room temperature.

Dates were on sale so I thought I'd try this easy appetizer. The combination tastes of sweet and salty work well together. Quick to fix and easy finger food for a party or just snacking.

1 - 8 oz. package large dates, pitted
4 tablespoon(s) gorgonzola
4 ounce(s) cream cheese, room temperature
3 tablespoon(s) toasted almonds, pecans, walnuts, etc. (your choice), chopped

Steps:

  • Using a sharp knife, cut a lengthwise slit down the center, but not through, each dates to open the date up; set aside.
  • In a small bowl, mash together the gorgonzola cheese and cream cheese. When thoroughly mixed, stir in the chopped nuts.
  • One-by-one, spread each date open and place approximately 1/2 teaspoon of the cheese/nut mixture inside the pocket of each date. Smooth out the top and place the prepared date on a serving platter. Repeat with the remaining dates.
  • The dates can be prepared a few days ahead, covered tightly, and kept refrigerated. Bring to room temperature before serving.
  • Note: To Pit Dates: To pit the date, slice the date open lengthwise, and use the tip of the blade to pry the pit out. Toasting Nuts: Toast walnuts in a small skillet over low heat for approximately 5 minutes, stirring occasionally. Watch the nuts carefully so that they don't burn.
