so simple but packs so much flavor! could do with a vegan pastry to make meat-product free. comes together very quickly, can be frozen and put directly in the oven and reheats well

1 large portabella mushroom
5 dried shiitake mushrooms
6 large white mushrooms
1/2 cup water
1/2 cup red wine
1 teaspoon fresh garlic, minced
2 tablespoons onions, minced
1 teaspoon dill
1/2 teaspoon black pepper, fresh ground
salt
2 tablespoons butter
2 sheets puff pastry

Steps:

  • bring water and wine to a low boil in a small pan, add dried shiitakes and simmer for 15-30 min to rehydrate. when softened squeeze gently to remove excess moisture, reserve liquid.
  • mince all mushrooms and onion in food processor (or by hand if you really want to take forever). you may need to mince garlic by hand as it should be finer then the rest.
  • cook all but pastry with 3 Tbs of reserved soaking liquid in a wok or large frying pan until well combined and soft, let almost all liquid evaporate. taste and adjust seasoning.
  • let cool till you can handle easily. cut each 9" square piece of puff pastry into 9 smaller squares (roughly 3" square each). fill each square with about 1.5 Tbs filling and fold diagonally squeezing edges to seal. try not to over-stuff or they'll explode when you cook them.
  • either freeze for up to 3 weeks or cook right away at 375f for about 15 min or until golden and crispy. if cooking from frozen add another 5 minute bear in mind if you microwave to reheat later they will be soft, like a croissant, not crispy. good with tzatziki sauce as part of a greek inspired meal.

2.6 ounces (75 grams) softened butter
6.3 ounces (180 grams) light brown sugar
1 teaspoon ground ginger
1/2 teaspoon ground allspice
2 ounces (60 grams) all-purpose flour
8.4 ounces (240 grams) sliced almonds
Prepared piecrust, store-bought or homemade
Crumble Topping, recipe follows
7 ounces (200 grams) all-purpose flour
5.25 ounces (150 grams) sugar
1/2 teaspoon cinnamon
3.5 ounces (100 grams) butter

Steps:

  • Soak the mango in water for 6 to 8 hours.
  • Preheat the oven to 350 degrees F.
  • With a wooden spoon, mix the butter, sugar, and spices together until creamy. Add the flour, then the almonds and, finally, the lightly drained mango and stir until combined. Set the filling mixture aside. Line the bottom of a 9 by 13-inch pan with your favorite piecrust. Perforate the crust with a fork. Spread the filling evenly over the crust and press down firmly. Sprinkle Crumble Topping evenly over the filling and pat down gently. Bake until the crumble is lightly golden, approximately 45 minutes. Cool thoroughly and then cut into 12 (3 by 4-inch) pieces. Cut each piece diagonally to form triangles.
  • In medium mixing bowl, mix together dry ingredients. Cut in butter and stir until uniform.

1 package (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
1 egg
1 tablespoon water
2 slices bacon, diced
2 1/2 cups coarsely chopped mushrooms (about 8 ounces)
2 green onions, sliced (about 1/4 cup)
2 cloves garlic, minced
1/2 teaspoon dried thyme leaves, crushed OR 1 1/2 teaspoons chopped fresh thyme leaves
1/2 cup shredded Swiss cheese
1 package (3 ounces) cream cheese, softened

Steps:

  • Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork or whisk.
  • Cook the bacon in a 10-inch skillet over medium-high heat until crisp. Remove the bacon from the skillet and drain on paper towels. Crumble the bacon.
  • Pour off all but 1 tablespoon drippings. Add the mushrooms, onions, garlic and thyme and cook until the mushrooms are tender and the liquid is evaporated. Remove the skillet from the heat. Return the bacon to the skillet. Add the Swiss cheese and cream cheese and stir until the cheeses are melted.
  • Unfold 1 pastry sheet on a lightly floured surface. Roll the pastry sheet into a 12-inch square. Cut into 16 (3-inch) squares. Repeat with the remaining pastry sheet, making 32 in all.
  • Place 1 tablespoon mushroom mixture in the center of each square. Brush the edges of the squares with the egg mixture. Fold the pastry over the fillling to form triangles. Press the edges to seal. Place the filled pastries onto baking sheets. Brush with the egg mixture.
  • Bake for 20 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes.

1/4 cup (1/2 ounce) sliced almonds
1/4 cup golden raisins
1 tablespoon minced garlic, (2 to 3 cloves)
1 6-ounce onion, finely diced (1 1/2 cups)
2 medium portobello mushrooms (about 8 ounces total), stems removed and discarded, cut into 1/4-inch dice
3/4 teaspoon salt
1/8 teaspoon ground cinnamon
1/8 teaspoon cayenne pepper
1/8 teaspoon ground cumin
1 tablespoon balsamic vinegar
1/4 cup finely chopped fresh flat-leaf parsley
12 sheets phyllo dough
Olive-oil cooking spray

Steps:

  • Wrap ricotta tightly in fine cheesecloth; place in a colander over a bowl. Place a heavy bowl or cans on top; let drain, refrigerated, for 3 hours or overnight.
  • Heat oven to 350 degrees. Place almonds on a baking pan; toast until fragrant, about 6 minutes. Transfer from oven to cool, then break almonds into small pieces; set aside. Place raisins in a bowl, cover with 1/4 cup warm water, and set aside.
  • Heat a large saute pan coated with olive-oil cooking spray over medium heat. Add garlic and onion; saute until translucent, about 5 minutes. Add mushrooms; cook until tender and juices are released, about 3 minutes more. Add raisins, soaking liquid, salt, cinnamon, cayenne, and cumin; cook until the liquid has been absorbed. Stir in balsamic vinegar, and transfer to a medium bowl to cool. When fully cool, about 25 minutes, stir in chopped parsley.
  • Place phyllo on a dry work surface; cover with a slightly damp towel. Coat one phyllo sheet with cooking spray. Cover with a second sheet; coat with cooking spray. Place a third sheet on top; cut stack into four 4-by-12-inch strips. Place 1 tablespoon ricotta on bottom of each stack; spread into the left corner to form a small triangle. Top with 2 tablespoons mushroom mixture. Fold phyllo by bringing bottom left corner over to meet right edge of pastry. Fold triangle along strip to fully enclose filling. Place on a parchment-lined baking pan. Repeat with remaining phyllo and filling. Coat triangles with cooking spray; sprinkle with reserved nuts. Bake until golden, about 40 minutes, rotating halfway through cooking. Serve.

1 cup confectioners' sugar
1 tablespoon lemon zest
1 cup butter, softened
4 eggs
2 cups white sugar
¼ cup all-purpose flour
1 teaspoon baking powder
5 fluid ounces fresh lemon juice
1 tablespoon lemon zest
¼ cup confectioners' sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish and then line it with enough aluminum foil to leave overhang along all edges for lifting finished dessert from the pan. Grease the foil.
  • Stir 2 cups flour, 1 cup confectioners' sugar, and 1 tablespoon lemon zest together in a bowl. Mash butter into the flour mixture until the mixture resembles fine crumbs; press into the bottom of the prepared dish.
  • Bake in preheated oven until golden brown, 15 to 20 minutes.
  • Beat eggs in the bowl of a stand mixer until lightened in color.
  • Mix white sugar, 1/4 cup flour, and baking powder in a bowl until no lumps remain; beat into the eggs until incorporated fully. Stir lemon juice and lemon zest to the egg mixture; pour over the prepared crust.
  • Bake in preheated oven until set in the middle and the edges are slightly golden, about 25 minutes.
  • Cool pastry in the pan until just warm to the touch, dust with confectioners' sugar, and cool completely. Lift pastry from pan by the foil and refrigerate until slightly firmed. Cut into 2-inch squares; halve each square diagonally to get triangles.

1/2 small onion, finely chopped
3 tablespoons dried currants
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Dash cayenne pepper
1/8 teaspoon pepper
2 teaspoons cornstarch
1/4 cup water
14 sheets phyllo dough (14x9 in.)
1/4 cup butter, melted
SPICY MANGO SAUCE:
3/4 cup plain yogurt
1/2 cup chopped peeled mango
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 teaspoon dried currants

Steps:

  • Press saute function on a large multi-cooker; select beef setting. Cook beef and onion until meat is no longer pink, breaking into crumbles; drain. Stir in currants and seasonings. Combine cornstarch and water until smooth; gradually stir into beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Press cancel; remove inner pot from the heat., Place 1 sheet of phyllo dough on a work surface with a short end facing you; brush with melted butter. Place another sheet of phyllo on top and brush with butter. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Cut the 2 layered sheets into four 14x2-1/4-in. strips., Place a rounded teaspoonful of filling on lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip. Brush end of dough with butter; press onto triangle to seal. Turn triangle and brush top with butter. Repeat with remaining phyllo and filling. Wipe inner pot clean., Place wire rack into inner pot. Arrange triangles in a single layer on rack. Cover with air frying lid. Press air fry function; select bake setting. Press timer; set to 5 minutes. Start. , Turn triangles over and air-fry an additional 2 minutes or until lightly browned. Repeat with remaining triangles. , For sauce, in a food processor or blender, combine yogurt, mango, salt, cumin and cayenne. Pulse until mango is slightly broken down. Stir in currants. Serve with warm appetizers.
