- Place both flours, sugar, baking powder, baking soda, salt and cinnamon into the bowl of a food processor and pulse several times to combine. Add the butter and pulse until the mixture resembles cornmeal. Add the molasses, milk and vanilla extract and process until the dough forms a ball, approximately 1 minute. Press the ball into a 1/2-inch thick disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F.
- Unwrap the chilled dough and place it onto a large piece of parchment paper and top with a second sheet of parchment paper. Roll the dough out until it is 1/8-inch thick. Slide the rolled dough and parchment paper onto a half sheet pan. Remove the top sheet of parchment paper and cut the dough, using a rolling pizza cutter into 2-inch square pieces, by making vertical and then horizontal cuts all the way across the dough. Trim off any excess. Using a fork, poke holes all over the top of the dough. Leave the crackers on the pan and bake on the middle rack of the oven for 25 minutes or until the edges just start to darken. Remove from the oven, set the sheet pan with the crackers on a cooling rack and allow to cool completely. Once completely cool, break into individual crackers and store in an airtight container for up to 2 weeks.

- In a medium bowl, stir together the graham cracker crumbs and coconut. Pour in the condensed milk and melted margarine, mix until well blended. Press the mixture evenly into the prepared pan.
- Bake for 10 to 12 minutes in the preheated oven. Remove and let cool. Melt chocolate bars in a microwave or over a double boiler, stirring occasionally until smooth. Spread over the cooled bars, chill and cut into squares.

GRANDMA'S BROWN BREAD (GRAHAM BREAD)
A very old-fashioned basic quick bread using graham (or whole wheat) flour. My Grandma made it at all holidays... hence the name. She was born in the mid 1880's and probably learned the recipe from her own mother. I had to write it down by standing at her elbow as she made it! Since there is no shortening in this recipe... I recommend whole milk... but skim also works. Make sure to use baking soda... NOT baking powder. Bread is moist, dense, and flavorful.

- Preheat oven to 300 degrees F.
- Grease medium sized loaf pan.
- Mix dry ingredients together.
- Add wet ingredients to dry.
- Fold in nuts if desired.
- Batter will be thick.
- Bake in very slow 300 degree oven for about 55-60 minutes. Test near center with wooden skewer.
- Serve warm or room temperature with butter or your favorite spread. Or alone with a cuppa tea!

- Heat oven to 375°F. Grease and flour bottoms only of two 8 x 4-inch loaf pans. In large bowl, combine graham cracker crumbs and shortening beat until well blended. Add buttermilk, molasses and eggs blend well. In small bowl, combine flour, baking soda, salt and nutmeg mix well. Add to graham cracker mixture mix at low speed until well blended. Fold in raisins. Pour batter into greased and floured pans.Bake at 375°F. for 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes remove from pans. Cool on wire racks. Wrap tightly and store in refrigerator.*TIP: To substitute for buttermilk, use 5 teaspoons vinegar or lemon juice plus milk to make 1 3/4 cups.HIGH ALTITUDE - Above 3,500 feet: Increase flour to 2 1/4 cups. For them, there is this press-in crust made with just graham cracker crumbs, sugar, salt and butter. It works best with fillings that don't require the structure and heft of traditional pie dough, like this Key lime pie or this ube pie.

- In a medium bowl, combine graham cracker crumbs, sugar and salt. Stir in the melted butter. (Mixture will look like wet sand.) Press into the bottom and up the sides of a standard (not deep-dish) 9-inch pie pan. Fill and bake according to your recipe. (If your recipe calls for a prebaked crust, bake for 6 to 9 minutes at 375 degrees until just lightly browned. Let cool completely on wire rack before filling.)

- Preheat oven to 350°F.
- Coat a round loaf pan or coffee can with cooking spray and dust with 4 teaspoons graham cracker crumbs.
- Alternately use 8x4-inch loaf pan.
- Combine dry ingredients (flour-salt) in large bowl.
- Cream butter or margarine in large bowl at medium speed until smooth.
- Gradually add 1 cup graham cracker crumbs, beat until combined (2 minutes).
- Add egg and beat 1 more minute.
- Add molasses and beat until combined.
- Beating at low speed, add flour mixture and buttermilk alternately to batter, beginning and ending with flour until blended.
- Stir in raisins.
- Pour into prepared pan.
- Bake for one hour or until toothpick comes out clean.
