ITALIAN-STYLE PORK CHOPS
An Italian-style version of pork chops was one of the first recipes I tried making in the early years of my marriage. I've changed it over the years to be healthier by reducing added oil and fat, and by adding in some vegetables. It works well served over hot rice. -Traci Hoppes, Spring Valley, California

- In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In the same skillet, brown chops in remaining oil. Add the marinara sauce, olives, remaining salt and pepper, and reserved pepper mixture. Bring to a boil. Reduce heat; cover and simmer until a thermometer inserted in pork reads 145°, 10-15 minutes. Let stand for 5 minutes before serving.

When I make these chops, I always have to make extra. Everyone has to eat more than they need. Great with a salad. The chops are baked in a crispy, buttery coating in the oven.

- Preheat oven to 425 degrees F (220 degrees C).
- In a medium bowl, combine the crushed saltines, Parmesan cheese, Italian-style seasoning and garlic powder and mix together well.
- Dip the chops in the melted butter and then dredge each chop in the cracker mixture, coating all sides thoroughly. Place the chops in a 9x13 inch baking dish.
- Bake at 425 degrees F (220 degrees C) for 30 to 40 minutes, or until internal pork temperature reaches 145 degrees F (63 degrees C).

- Preheat broiler. Trim 1/2 in. off ends of broccoli rabe; discard any coarse leaves., In a large saucepan, bring 4 cups water to a boil. Add broccoli rabe; cook, uncovered, 4-5 minutes or just until crisp-tender. Remove and immediately drop into ice water. Drain and pat dry., Sprinkle pork chops with seasonings. In a broiler-safe skillet, heat oil over medium-high heat. Add pork chops; cook 3-4 minutes on each side or until a thermometer reads 145°. Remove from heat., Layer chops with red pepper, broccoli rabe and cheese. Broil 4 in. from heat 1-2 minutes or until cheese is melted.

ITALIAN-STYLE PORK CHOPS
Southern cooks love to serve Swiss steak-a dish made with a tougher cut of beef that's been pounded and braised with enough red sauce that it becomes so tender you can eat it without a knife. And that's where the idea for this dish came from-pork chops cooked in marinara sauce and topped with cheese. We like to serve the chops with a bowl of egg noodles tossed with butter and chopped fresh parsley or with our Garlic Mashed Potatoes (page 21)-anything to soak up some of the delicious sauce.

- Heat the olive oil in a large skillet with a lid over medium-high heat. Season the pork with the salt and pepper. Cook, turning once, until brown on both sides, 6 to 8 minutes total.
- Pour the marinara sauce into the skillet and bring to a boil, turning the chops a few times. Reduce the heat to medium, cover the pan, and cook for 5 minutes. Turn the chops over and scatter the mozzarella and oregano on top. Cover again and cook until the cheese is melted and the pork is just cooked through, 4 to 5 minutes more.

- Heat 1 teaspoon olive oil in a skillet over medium heat. Stir in mushrooms; cook and stir until mushrooms are tender, 5 to 7 minutes. Transfer the mushrooms to a bowl and set aside.
- Heat the remaining 2 tablespoons olive oil in the skillet over medium heat. Add the pork chops, browning on both sides, 7 to 10 minutes. Place the pork chops on a plate, then drain all but 1 tablespoon of drippings from the skillet. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Pour in the tomatoes, then season with basil, oregano, salt, and pepper. Transfer the pork chops back to the skillet; cover and simmer until the pork chops are tender and no longer pink in the center, about 45 minutes. Stir in some water if the mixture becomes too dry. Place the bell pepper on top of the pork, then add the reserved mushrooms. Continue to simmer until the bell pepper is tender, 5 to 10 minutes.

Steps:
- Pound pork chops until 1/4 inch thick; set aside.
- In a small bowl beat together eggs, water, pepper and Italian seasoning.
- In a medium bowl combine all other ingredients, except mozzarella cheese, pizza sauce and canola oil.
- Dip pork chops in egg mixture, coating both sides.
- Then coat both sides of pork in cracker crumb mixture.
- Repeat until chops are coated twice, with egg and cracker crumbs.
- In a medium size skillet, heat oil until hot but not smoking.
- Add pork chops two at a time.
- Cook until golden brown, about 6 minutes on each side.
- To assemble each sandwich--.
- Place a chop on bottom half of each bun.
- Spread 1 Tablespoon of sauce over meat.
- Sprinkle with 2 Tablespoons of mozzarella.
- Cover with top half.
- Eat and enjoy.

- Make horizontal cut in one long side of each chop to make pocket, being careful to not cut all the way through to opposite side of chop. Top each ham slice with 1 cheese slice and 1/4 of the Swiss chard; roll up. Stuff 1 ham roll into pocket of each chop; press cut sides of chops together to seal pockets.
- Sprinkle both sides of chops with basil.
- Heat dressing in large skillet on medium-high heat. Add chops; cook 6 to 7 min. on each side or until done (145°F). Remove from skillet; let stand 3 min. before serving.
