1-1/2 cups chopped onions
3 garlic cloves, minced
2 cans (12 ounces each) tomato paste
3 cups water
1 can (29 ounces) tomato sauce
1/3 cup minced fresh parsley
1 tablespoon dried basil
2 teaspoons salt
1/2 teaspoon pepper
MEATBALLS:
4 large eggs, lightly beaten
2 cups soft bread cubes (cut into 1/4-inch pieces)
1-1/2 cups whole milk
1 cup grated Parmesan cheese
3 garlic cloves, minced
2 teaspoons salt
1/2 teaspoon pepper
3 pounds ground beef
2 tablespoons canola oil
2 pounds spaghetti, cooked

Steps:

  • In a Dutch oven, heat olive oil over medium heat. Add onions; saute until softened. Add garlic; cook 1 minute longer. Stir in tomato paste; cook 3-5 minutes. Add next 6 ingredients. Bring to a boil. Reduce heat; simmer, covered, for 50 minutes., Combine the first 7 meatball ingredients. Add beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., In a large skillet, heat canola oil over medium heat. Add meatballs; brown in batches until no longer pink. Drain. Add to sauce; bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 1 hour, stirring occasionally. Serve with hot cooked spaghetti.

1 ½ teaspoons olive oil
1 yellow onion, chopped
3 cloves garlic, minced
1 (16 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
½ cup red wine
3 tablespoons Italian seasoning
2 tablespoons white sugar
1 tablespoon garlic powder
1 ½ teaspoons garlic salt
salt and ground black pepper to taste
½ pound lean ground beef
1 egg, beaten
¼ cup Italian seasoned bread crumbs
¼ cup grated mozzarella cheese
2 tablespoons chopped fresh parsley
1 (16 ounce) package spaghetti
¼ cup grated Parmesan cheese

Steps:

  • Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until onion is tender and translucent, about 5 minutes. Stir in crushed tomatoes, tomato paste, red wine, Italian seasoning, sugar, garlic powder, and garlic salt. Season with salt and black pepper. Bring to a boil, reduce heat to medium-low, and continue simmering while preparing meatballs.
  • Mix ground beef, egg, bread crumbs, mozzarella cheese, and parsley in a large bowl. Roll walnut-size meatballs and place in the simmering sauce, making sure sauce covers entire meatball. Increase heat to medium and simmering until meatballs are no longer pink in the center, about 40 minutes, turning meatballs once about halfway through.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
  • Serve meatballs and sauce over spaghetti with a sprinkle of Parmesan cheese.

5 tablespoons panko breadcrumbs, finely processed
6 ounces heavy cream (as needed to soak the breadcrumbs)
1 tablespoon canola oil
1/2 cup small-diced sweet onions
1 clove garlic, chopped
1/2 tablespoon chopped fresh rosemary
8 ounces ground pork
8 ounces sweet pork sausage, no casing
8 ounces ground veal
5 ounces Parmesan, grated, plus more for garnish
1/4 cup finely minced fresh parsley, plus more for garnish
1 large egg
Kosher salt
Basic Tomato Sauce, recipe follows
1 box spaghetti
Freshly cracked black pepper
2 tablespoons olive oil
4 leaves fresh basil
1 clove garlic, chopped,
Pinch red pepper flakes
One 32-ounce can San Marzano tomatoes, drained and processed in a food mill or food processor

Steps:

  • Soak the breadcrumbs in the heavy cream in a bowl.
  • Heat a large saute pan over medium heat and add the canola oil. Saute the onions and garlic until the onions are translucent. Add the rosemary, remove from the heat and then chill the mixture thoroughly.
  • Combine the breadcrumb mixture, onion mixture, pork, sausage, veal, Parmesan, parsley and egg in the bowl of large electric mixer and begin mixing on low speed. When relatively well incorporated, add some salt.
  • Heat a small saute pan to cook a sample of the mixture. Taste for seasoning and make any necessary adjustments. Form the meatballs into the desired shape and chill for 1 hour.
  • Preheat the oven to 425 degrees F.
  • Bake the meatballs on a baking sheet until browned, 20 to 25 minutes. Bring the Basic Tomato Sauce to a simmer. Transfer the meatballs to the sauce and simmer until tender and cooked through, about 30 minutes.
  • Bring a large pot of salted water to a boil. Boil the spaghetti until al dente according to the package directions.
  • Transfer the cooked spaghetti to the sauce with the meatballs and toss. Add some black pepper, garnish with Parmesan and parsley and serve.
  • Heat a saucepan over medium heat. Add the olive oil, basil, garlic and red pepper flakes and cook until the garlic begins to soften, about 3 minutes. Add the tomatoes, bring the mixture to a simmer and cook for 1 minute. Use right away, or chill until ready to use.

Steps:

  • Place ground beef in a bowl, add all ingredients EXCEPT flour and mix well. Gently combine all the ingredients with your hands or with a spoon, until just mixed together. Do not overwork or the meatballs will become tough. Cover and leave to marinate for 30 minutes. Add half (1/2) cup flour to the seasoned beef. Divide into 12 equal pieces and shape into balls. Heat frying pan then add Grace Vegetable Oil. Use the remaining flour to dust the meat balls. Add floured meat balls to frying pan and fry for ten minutes or until golden brown. Remove from pan, drain on absorbent paper and set aside.To Make Sauce: In a heated deep pan add Grace Vegetable Oil, chopped onion, garlic, Grace Caribbean Traditions All Purpose Seasoning, salt, tomato paste, tomato sauce, pepper flakes, soy sauce, hot pepper sauce, Grace Tomato Ketchup and water.   • Preheat the oven to 425°F (220°C). Set a wire rack over a baking sheet and grease with nonstick spray.

It's great for making extra meatballs for leftovers and is accessible enough that anyone should be able to throw it together on a weeknight.

1/2 cup grated Parmesan, plus more for topping
1/4 cup Italian breadcrumbs
3 tablespoons milk
1 large egg, beaten
8 ounces ground chuck
8 ounces ground pork
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
Vegetable oil, for frying
5 cups Classic Tomato Basil Sauce, recipe follows
1 pound spaghetti
Fresh basil, for garnish
4 pounds ripe plum tomatoes or two 28-ounce can diced tomatoes in juice, such as Organic Muir Glen
2 heads garlic, cloves peeled and halved lengthwise
3/4 cup extra-virgin olive oil
1 1/2 teaspoons hot red pepper flakes
Salt and freshly ground black pepper
1 cup chopped fresh basil

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the cheese, breadcrumbs, milk and egg in a large mixing bowl until well mixed. Add the chuck and pork and mix to combine, working gently to avoid overworking the meat. Sprinkle with the salt and pepper. Shape into small golf ball-size meatballs and place on the lined baking sheet.
  • Bake the meatballs until they are cooked through, about 15 minutes.

Steps:

  • Heat 2 tablespoons of olive oil over medium heat in the bottom of a large saucepan, and fry the garlic cloves 5 to 8 minutes, until brown and fragrant. Remove the garlic cloves and set aside. Place the pig's feet and pork neck bones in the saucepan and fry, turning occasionally, until the meat and bones have browned, about 15 minutes.
  • Return the garlic cloves to the saucepan, and stir in the tomato paste and 1 1/2 cups of water. Bring to a boil, and pour in the tomato puree. Reduce heat to low, and simmer for about 3 hours, stirring from the bottom often to prevent burning, until the pig's feet are tender and the mixture begins to thicken. Stir in the sugar, pepper, and baking soda. Continue to simmer while you prepare the meatballs.
  • Soak the torn bread with 1 cup of water in a bowl. Squeeze excess water out of the bread, and place the bread in a large bowl with the 6 beaten eggs, ground pork, ground veal, and ground beef. Mix thoroughly and form into 24 meatballs about 2 1/2 inches in diameter.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat, stir in the minced garlic and chopped fresh basil, let them cook for about 1 minute, and then add the meatballs. Season with salt and pepper to taste, and fry them on all sides until brown, about 15 minutes, working in batches, if necessary.
  • Place the browned meatballs, along with the oil, garlic, and basil from the skillet into the sauce, stirring lightly to avoid breaking them. Add the whole hard-boiled eggs, and simmer for about 1 1/2 more hours, until the meatballs are cooked, the sauce is thick, and all the flavors have blended.

Grammie's Spaghetti and Meatballs image

My Grammie made the BEST spaghetti sauce!! This recipe is very versatile. I use more garlic and my homemade, chunky tomato sauce for my version which makes a thicker, fresher tasting sauce. My Mom adds a sausage and chicken breasts. My Dad loves spicy so he always adds a nice hot sausage and chili flakes.

28 ounces vegetable juice (Grammie used ED Smith)
5 1/2 ounces tomato paste
10 ounces water
1 tablespoon dry parsley flakes
2 -4 celery leaves
1/2 teaspoon salt
2 -3 garlic cloves (I use 4-5)
1 1/2 lbs ground beef
2 eggs
1 teaspoon salt
1 tablespoon dry parsley flakes
1 teaspoon garlic powder
1 cup breadcrumbs or 1 cup cracker, crushed

Steps:

  • SAUCE: In a large pot, mix vegetable juice, tomato paste, water, parsley flakes, celery leaves, salt and garlic.
  • Cover and cook over medium-high heat.
  • MEATBALLS: Mix together ground beef, eggs, salt, parsley flakes, garlic powder and bread crumbs together. If too wet, add more bread crumbs; if too dry, spoon some of the sauce into the mix.
  • GENTLY shape into 2-inch meatballs. You don't want to press too hard or your meatballs will be tough. My kids like to have "kid-size" meatballs, so we have a mix of big and small meatballs.
  • Once the sauce comes to a boil, lower heat to simmer and add the meatballs.
  • Cover and cook for 2 hours.
  • Makes 12-15 servings.
  • Our family usually doubles the recipe and then we have a freezer meal and a serving for a lunch the next day too!
  • I have also made this in the crock pot. Put it on HIGH in the morning (I had it in there for 8 hours).
