I CAN ALREADY TASTE THIS CAKE WITHOUT EVEN MAKING IT...THE TEXTURE OF A POUND CAKE WITH THE PECANS AND BROWN SUGAR TASTE. THIS WOULD BE A CAKE FOR SUNDAY DINNER...A DOLLUP OF COOL WHIP...WOW!!

Steps:
- 1. HEAT OVEN TO 350F. BEAT FIRST 6 INGREDIENTS WITH MIXER FOR 3 MINUTES. ADD BROWN SUGAR AND NUTS; MIX WELL. POUR INTO BUNDT PAN SPRAYED WITH COOKING SPRAY. BAKE 1 HOUR OR UNTIL TOOTH PICK COMES OUT CLEAN. COOL CAKE 15 MINUTES. LOOSEN CAKE FROM SIDES OF PAN; INVERT ONTO A WIRE RACK. COOL COMPLETELY. SPRINKLE WITH POWDERED SUGAR.
GRAM'S BEST BROWN SUGAR CAKE
Steps:
- 1. Preheat the oven to 350ºF. 2. Beat together the first 6 ingredients in a large bowl with a mixer for 3 minutes or until blended. Add the brown sugar & nuts, mixing well. 3. Pour the batter into a 3 quart (3 L) fluted tube pan or 10 inch tube pan sprayed with cooking spray. 4. Bake in the preheated oven for 1 hour or until a toothpick inserted near the centre comes out clean. 5. Cool the cake in the pan for 15 minutes. 6. Loosen the cake from the sides of the pan. Invert onto a wire rack. Remove the pan & allow the cake to cool completely. 7. Sprinkle with icing sugar just before serving. SPECIAL EXTRAS: - Serve topped with cut-up fresh fruit. - Sprinkle the pan with a combination of 2 tablespoons granulated sugar & 1/4 teaspoon ground cinnamon after spraying it with cooking spray. Then, fill with the batter & bake as directed above.
