CINNAMON STEWED APPLES
My kids love these rosy red Cinnamon Stewed Apples for breakfast, lunch or dinner. Made with just a few simple ingredients and cooked on the stove-top in a matter of minutes, you'll find yourself adding these to your weekly menu rotation.

Steps:
- Wash, peel and core apples. Cut halves into 5 or 6 equal-sized slices.
- In a small saucepan, bring sugar, water, cinnamon and red food coloring to a boil over high heat.
- Once boiling, reduce heat to simmer for 5 minutes.
- Add sliced apples to the sauce; raise heat to bring the sauce back to a boil.
- Boil uncovered for 5 to 8 additional minutes or until apples are fork tender and soft; stirring occasionally.
- Remove from heat and let cool. Serve hot, warm or cold.

Steps:
- Combine the candies, brown sugar and 2 1/2 cups water in a large saucepan and place over medium-high heat. Cook, stirring, until the candies and sugar have fully melted, about 10 minutes.
- Add the apples and bring to a boil. Cook until the apples are tender but not mushy, about 5 minutes. Remove the apples with a slotted spoon and transfer to a heatproof dish. Allow the syrup to boil for an additional 5 minutes to thicken and intensify. Pour the syrup over the apples and allow to cool. Transfer to the fridge and chill for at least 4 hours.
- When ready to serve, warm a griddle over medium heat. Butter the griddle and toast the slices of pound cake for about 2 minutes per side, adding more butter as needed.
- To plate, place a piece of pound cake on each plate. Top with a scoop of ice cream and 4 apple slices. Drizzle with additional syrup and garnish with the mint.

Steps:
- Put sugar, water, red hots and food coloring in a large, deep pan over medium low heat to dissolve sugar. Stir occasionally.
- Peel and core the apples. My grandmother cut them in half, but they can also be left whole. Remove all seeds carefully. Rinse the apples.
- Place the apples in the pan and increase temperature to medium so it will come to a boil. Turn apples from time to time, so they cook evenly. Once they reach a boil, cook for approximately 30 minutes.
- The apples become brighter red as they cook. The texture and firmness change to a rather elastic sponginess. At this point, they are done.
- Place apples in a bowl. Cover with a few spoonfuls of syrup to keep them moist and colorful. Allow to cool before serving.
- Keeps several days in refrigerator in a covered container.

RED HOT CINNAMON APPLES - A RED HOT APPLES RECIPE

- In a medium to large saucepan, heat water, sugar and Red Hot candies until it come to a boil and candies begin to melt. Turn off heat.
- Peel and quarter apples.
- Add apples to red syrup and turn heat to high, stirring often. Bring to a full boil until the syrup is almost boiling over; then lower heat to medium.
- Continue to cook and stir apples until they are tender and have absorbed the red color. For a more vibrant red, add red food coloring while they are cooking. Stir often.
- Gently ladle apples into a serving dish, and let cool. If desired, top with chopped pecans.

Grandma Brown's canned baked beans are available in the northeast USA but not common elsewhere. They are very simple with only 6 ingredients named on the can. This is a process to recreate them faithfully. Note that these beans are not tomato based, they are thick not saucy, and they are only mildly sweet. The final product either from the can or from the recipe is easily modified to your taste by adding bacon, tomato ketchup, brown sugar, spices. But they are great the way they are. - bring water to a boil.
- sort through beans for debris.
- add navy beans to water.
- boil 10 minutes.
- turn off heat.
- cover pot.
- let sit overnight.
- rinse beans well.
- add beans and all other ingredients to oven proof pot with tight fitting lid.
- stir well.
- add water until beans are just covered.
- cover pot with lid.
- bake 5 to 6 hours at 300°F.
- every hour stir and add water to cover if beans are drying out.
- final product should be a thick and not runny.
