3 sticks butter, softened at room temp
1 1/2 C sugar
2 eggs
3 C flour
1/2 t salt
1/2 t Vanilla

Steps:

  • 1.Preheat oven to 375 degrees 2.Cream butter until light and fluffy. 3.Add sugar and beat well. 4.Add eggs and vanilla and mix. 5.Add flour and salt and beat until combined. 6.Drop by small teaspoons onto baking sheet lined with parchment paper spacing about 2 inches apart. 7.Bake for 8 to 10 minutes and allow to cool on sheet before removing to a rack to finish cooling. 8.Note: I press the tops down slightly before baking and sprinkle with lemon sugar. Or you can leave and dust with powdered sugar once they are cool.

1 egg
1/2 teaspoon vanilla
1/2 cup sugar
2 1/2 cups flour

Steps:

  • Preheat oven to 350 degrees F.
  • In large mixing bowl or electric mixer beat; butter, egg, vanilla, and sugar.
  • Then add 2 1/2 cups of flour to mixture and mix until creamy.
  • Roll out dough on flat surface until about 1/2 inch thick.
  • Use cookie cutters of your choice to cut the dough.
  • Place the dough on a greased cookie sheet, and bake for 8-10 minutes.
  • After removing the cookies from the oven, let them cool.
  • Frosting and sprinkles are opptional but recommended by Grandma herself!
  • Enjoy!

3 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups butter, softened
1 cup sugar
2 tablespoons sugar
2 teaspoons vanilla
1/2 teaspoon almond extract
1 large egg, lightly beaten
confectioners' sugar (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Line a baking/cookie sheet with parchment paper.
  • In a medium bowl sift together flour with baking powder and salt.
  • In another bowl beat butter with 1 cup plus 2 tablespoons sugar, vanilla and almond extract until fluffy (about 3 minutes).
  • Add in egg and beat until combined.
  • Add in the flour mixture and beat on low speed until combined.
  • Form the dough into 1-1/2-inch balls.
  • Place the balls about 3-inches apart on the cookie sheet.
  • Using back of a fork flatten to about 1/2 to 1/2-inch thick making criss-cross patterns.
  • Bake for about 10 minutes or until edges are golden brown.
  • Transfer to wire racks to cool completely.
  • When the cookies are cooled coat lightly in confectioners sugar if desired.

300g plain flour, sifted
1 tbsp baking powder
200g cold butter, cut into cubes
125g icing sugar, plus 2 tbsp
2 tsp vanilla-infused sugar or golden caster sugar
1 egg, plus 1 lightly beaten egg white for brushing
pearl sugar, or flaked or chopped almonds, for sprinkling

Steps:

  • Mix the flour, baking powder and a pinch of salt together. Add the butter and rub in with your fingers until the mixture resembles coarse crumbs. Mix in all the icing sugar and the vanilla sugar, then add the whole egg and mix until just combined, but be careful not to overmix.
  • Transfer the dough to a food bag and put in the fridge to chill for about 1 hr.
  • Heat the oven to 180C/160C fan/gas 4. Roll the chilled dough into about 40 even balls (around 15g each). Arrange the dough balls over two baking sheets lined with baking parchment, leaving space between each for spreading. Using the back of a fork, press the balls down gently in the middle, so they spread to a diameter of about 3cm (they will spread more as they bake). If you prefer flat cookies, use the bottom of a glass.
  • Brush the cookies with the beaten egg white and sprinkle over the pearl sugar or almonds. Bake for 10 mins, or until just cooked through (the cookies should not be fully browned, just lightly golden at the edges). Remove from the oven and transfer to wire racks to cool completely.

This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

BAR COOKIE:
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter or margarine, at room temperature is easiest
1 cup sugar
1 egg
1/2 teaspoon almond extract
Milk
1/2 cup sliced almonds, coarsely chopped
ALMOND ICING:
1 cup sifted powdered sugar
1/4 teaspoon almond extract
and enough milk (3 to 4 teaspoons)

Steps:

  • Preheat oven to 325°F. Stir together flour, baking powder, and salt. In a large mixer bowl beat butter or margarine till softened. Add sugar and beat till fluffy. Add egg and almond extract and beat well. Add flour mixture and beat till well mixed. Divide dough into fourths. Form each into a 12-inch roll. Place two rolls 4 to 5 inches apart on an ungreased cookie sheet. Flatten till 3 inches wide. Repeat with remaining rolls. Brush flattened rolls with milk and sprinkle with almonds. Bake at 325°F for 12 to 14 minutes or until edges are lightly browned. While cookies are still warm, cut them crosswise at a diagonal into 1-inch strips with a sharp knife. Cool on wire rack. Drizzle with almond icing. ALMOND ICING: Stir together 1 cup sifted powdered sugar, 1/4 teaspoon almond extract, and enough milk (3 to 4 teaspoons) to make icing of drizzling consistency.

Rounded 1/2 teaspoon salt
3 sticks (1 1/2 cups) unsalted butter, softened

1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
1 large egg, lightly beaten
Special Equipment
a cookie press fitted with a star, bow, circle, or ribbon plate*

Steps:

  • Preheat oven to 350°F.
  • Sift together flour, baking powder, and salt.
  • Beat together butter, sugar, and extracts in a large bowl with an electric mixer at moderately high speed until pale and fluffy, about 3 minutes. Add egg and beat well. Add flour mixture and mix at low speed until just combined.
  • Quarter dough and put 1 piece into cookie press. Holding press slightly above ungreased baking sheets, squeeze out dough to form cookies (follow manufacturer's instructions), spacing them about 3 inches apart. Form more cookies with remaining dough in same manner.
  • Bake cookies in batches in middle of oven until edges are golden, 10 to 15 minutes, then transfer with a metal spatula to racks to cool.
