- Heat oysters in their own liquor about 5 minutes or until edges begin to curl. Heat milk, do not boil. Add butter, seasonings and hot milk to Oysters. Serve immediately with or without garnish. Serves 2 Variations: Use onion salt in place of celery salt Add 1 pinch cayenne pepper Add 1 pinch paprika Add green onions, diced as garnish or fry a couple in butter and add to stew Add dash or two of Tabasco
QUICK-BUT-YUMMY OYSTER STEW

Steps:
- Stir the evaporated milk and water together in a large pot over medium-low heat; bring to a gentle boil.
- Stir butter into the liquid. Season with salt and black pepper. Cook, stirring occasionally, until the butter melts completely, 5 to 7 minutes.
- Stir the oysters into the liquid; continue cooking at a simmer until the edges of the oysters begin to curl, about 15 minutes.

GRANDPA'S OYSTER STEW
Born and raised on the water, oystering is in chef Madden Surbaugh's blood. Every year at Christmas his grandfather made his famous oyster stew.

Steps:
- Stir butter and garlic in stockpot over medium heat until butter begins to brown. Remove garlic and discard.
- Stir shallots into browned butter. Cook and stir until translucent, 5 to 7 minutes.
- Pour sherry over shallots in the stockpot and bring to a boil while scraping any browned bits off of the bottom of the pot. Simmer until liquid is reduced by half, 3 to 5 minutes.
- Pour reserved oyster liquor, milk, and cream into the stockpot; bring mixture to a simmer. Reduce heat to medium-low and stir in oysters; cook until oyster edges begin to ruffle, about 3 minutes. Remove from heat.
- Stir in parsley; season with sea salt to taste. Ladle into bowls and garnish with sweet paprika and oyster crackers.

GRANNY'S BEEF STEW
The recipe is based on the stew my granny used to make, over the years I've made a few changes. You can make it without wine, just increase the amount of broth, but the wine really brings out the flavor of the beef. If you happen to have Trader Joes in your area, their two buck Shiraz or Merlot work fine for this recipe.

- Put about two cups of flour on a plate, or layer of foil, and season well with salt, pepper and garlic. Heat about a 1/4 to 1/2 inch of oil in a skillet. Flour meat in small batches and brown in hot oil. Transfer meat to soup pot, and continue until all meat is browned.
- Add onion, 2 cans of broth, about a cup of red wine, tomato sauce, and bay leaf to soup pot, bring to a boil, then cover and let simmer at least one hour. Remove bay leaf. Taste the broth of the stew at this point and decide if it needs a little salt or pepper. Also decide if there is enough broth, and at this point you can add more wine or beef broth.
- Peel carrots and slice into disks about ¼ inch thick (or you can use the little baby carrots - then you won't have to slice them etc). Add to pot, let cook about a half hour.
- Peel potatoes and cut into pieces about the same size as the stew meat chunks. Add to pot, let cook until potatoes are tender.
- Now you need to thicken the broth just a bit. Easiest way is to take about two tablespoons of flour, in a small bowl, and add about a tablespoon of oil. This will make a paste - add enough of the broth from the stew to this mixture to thin it out, to make it almost pourable. Add this mixture to the stew, stirring constantly as you pour it in (or it will lump up). When it's mixed in well, put the cover back on and let it cook about 10 more minutes.
GOLDEN OYSTER STEW
This recipe comes from the February 2007 edition of Southern Living Magazine who suggests using only fresh oysters found in the fresh seafood department of your grocery store. Using canned oysters for this recipe is not recommended. Standard sized oysters are best for this stew. See *Note below for make ahead instructions & selecting oysters.

- Melt butter in a Dutch oven over medium heat; add onion and celery, and cook, stirring occasionally, 8 minutes or until tender.
- Add mushrooms, and cook, stirring occasionally, 5 minutes. Add flour, and cook, stirring constantly, 1 minute.
- Gradually stir in 2 cups milk; cook, stirring often, 5 minutes or until mixture is thickened and bubbly.
- Reduce heat to low, and stir in cheese and next 5 ingredients.
- Cook, stirring often, 3 minutes or until cheese melts and mixture is hot.
- Add oysters and oyster liquor, and simmer 3 minutes or just until edges of oysters begin to curl.
- Serve with crackers, if desired.
- *Note:
- To make ahead, prepare the stew through adding and melting cheese. Freeze the mixture in a large zip-top plastic freezer bag for up to 2 months. Thaw in the refrigerator overnight. Heat in a Dutch oven over medium-low heat 10 minutes or until thoroughly heated. Proceed with recipe as directed.
- **Choosing the Best: Fresh shucked oysters are found in the seafood department of supermarkets or at seafood markets. We don't recommend substituting canned oysters in this recipe. Fresh oysters come in 12-oz. containers and range in size from standards (the smallest) to counts (the largest). Standards and selects are the most economical and are the best choices for oyster stew.
