MULLED WINE GRANITA

3 cups dry red wine
1/2 cup sugar
1 cinnamon stick
2 whole cloves
1/2 teaspoon whole allspice
1/2 teaspoon black peppercorns
Whipped cream, for serving (optional)

Steps:

  • Bring the wine, sugar, cinnamon stick, cloves, allspice and peppercorns to a simmer in a saucepan over medium heat, stirring until the sugar dissolves. Cook 5 minutes, then remove from the heat and let stand 15 minutes. Strain the mulled wine into an 8-inch-square baking dish and freeze until hard, about 5 hours. Scrape with a fork and divide among glasses. Serve with whipped cream.

3 cups green seedless grapes
2 tablespoons apple juice
1 lime, juice of
1 fresh mint leaves (optional)

Steps:

  • Blend grapes, juices and mint until smooth.
  • Freeze mixture in shallow baking pan until it's almost solid - 1 to 2 hours depending on your freezer.
  • Remove from freezer, break up pieces and blend in blender again.
  • Serve with lime wedge.

If you have a metal baking pan, use it; it will chill the mixture faster than a glass one. And remove the granita from the freezer when you scrape it-too much cold air will escape if you do this while the door's hanging open.

Number Of Ingredients 12

4 cups blackberries (about 18 ounces)
1/2 cup sugar
1 tablespoon crème de cassis (black-currant liqueur; optional)
1 tablespoon fresh lemon juice
Pinch of kosher salt
1/2 cup mascarpone
1/4 cup heavy cream
2 tablespoons sugar
1 tablespoon fresh lemon juice
1/8 teaspoon vanilla extract
1/2 teaspoon finely grated lemon zest plus more for garnish
1 1/3 cups blackberries (about 6 ounces), cut in half crosswise

Steps:

  • Purée blackberries, sugar, crème de cassis, if using, lemon juice, salt, and 1 cup water in a blender until smooth. Strain purée through a fine-mesh sieve into a 13x9x2" baking pan, pressing on solids.
  • Freeze mixture until edges begin to set, about 30 minutes. Using a fork, scrape to break up frozen portions. Freeze, scraping and breaking up mixture every 20-30 minutes, until mixture resembles fluffy shaved ice, 2-4 hours.
  • DO AHEAD: Granita can be made 3 days ahead. Cover with plastic wrap and keep frozen. Scrape before serving.
  • Just before serving, whisk mascarpone, cream, sugar, lemon juice, vanilla, and 1/2 teaspoon lemon zest in a medium bowl until soft peaks form.
  • Serve granita topped with lemon cream, halved blackberries, and more lemon zest.

1 cup black grapes (deseeded)
1 banana, finely chopped
2 tablespoons powdered sugar
1/4 teaspoon lemon juice
1 teaspoon roasted cumin powder
1/4 teaspoon black salt

Steps:

  • Blend the black grapes and bananas to a fine purée in a food processor. Add the sugar, lemon juice, cumin powder, black salt and ¼ cup of water and mix well.
  • Freeze in a shallow container till set.
  • Transfer to a blender and liquidise till it is slushy.
  • Serve scoops of the mixture in 4 individual bowls or long stemmed glasses.
  • Serve immediately.
