MULLED WINE GRANITA

Steps:
- Bring the wine, sugar, cinnamon stick, cloves, allspice and peppercorns to a simmer in a saucepan over medium heat, stirring until the sugar dissolves. Cook 5 minutes, then remove from the heat and let stand 15 minutes. Strain the mulled wine into an 8-inch-square baking dish and freeze until hard, about 5 hours. Scrape with a fork and divide among glasses. Serve with whipped cream.

This is refreshing. I like to make it when the grapes are on sale and I'm craving something sweet but not high in sugar. Weight Watchers...a serving is only 2 points!

Steps:
- Blend grapes, juices and mint until smooth.
- Freeze mixture in shallow baking pan until it's almost solid - 1 to 2 hours depending on your freezer.
- Remove from freezer, break up pieces and blend in blender again.
- Serve with lime wedge.

BLACKBERRY GRANITA
If you have a metal baking pan, use it; it will chill the mixture faster than a glass one. And remove the granita from the freezer when you scrape it-too much cold air will escape if you do this while the door's hanging open.

Steps:
- Purée blackberries, sugar, crème de cassis, if using, lemon juice, salt, and 1 cup water in a blender until smooth. Strain purée through a fine-mesh sieve into a 13x9x2" baking pan, pressing on solids.
- Freeze mixture until edges begin to set, about 30 minutes. Using a fork, scrape to break up frozen portions. Freeze, scraping and breaking up mixture every 20-30 minutes, until mixture resembles fluffy shaved ice, 2-4 hours.
- DO AHEAD: Granita can be made 3 days ahead. Cover with plastic wrap and keep frozen. Scrape before serving.
- Just before serving, whisk mascarpone, cream, sugar, lemon juice, vanilla, and 1/2 teaspoon lemon zest in a medium bowl until soft peaks form.
- Serve granita topped with lemon cream, halved blackberries, and more lemon zest.
BLACK GRAPE GRANITA
A fabulous summer cooler for those long, hot days. Preparation time does not include time for freezing.

Steps:
- Blend the black grapes and bananas to a fine purée in a food processor. Add the sugar, lemon juice, cumin powder, black salt and ¼ cup of water and mix well.
- Freeze in a shallow container till set.
- Transfer to a blender and liquidise till it is slushy.
- Serve scoops of the mixture in 4 individual bowls or long stemmed glasses.
- Serve immediately.
